For choux pastry
water 100 ml
milk 100 ml
wheat flour 140 g
eggs 4 things
butter 80 g
salt 0.5 tsp
For custard
milk 600 ml
sugar 150 g
corn starch 60 g
eggs 2 pcs
vanilla (vanilla sugar) 6 g (1 bag)
butter 200 g
shape 24 cm

Cooking method

  • This is a very simple and delicious custard pie. It consists of two layers of custard dough and one layer of custard. The pie must be allowed to stand in the refrigerator for several hours, or better overnight.
  • Making choux pastry
  • Put butter in a saucepan, pour in water, milk, add salt. Put the mixture on fire and bring to a boil.
  • While the mixture is heating, sift the flour
  • After boiling the milk mixture, immediately add all the flour. Stir vigorously, brew. The dough should come together into a lump, and a slight coating forms on the sides of the saucepan. This means - it brewed well.
  • We transfer the brewed mass to a bowl and let it cool down to about 70-80 degrees. The brewed dough should not be very hot so that the eggs do not curl when added.
  • Next, add the eggs one at a time. Mix well. The mass should be homogeneous. Knead with a wooden spoon or spatula.
  • Preheat the oven to 200 degrees.
  • Let's prepare a split baking dish. Cover the bottom of the form with baking paper.
  • Bake two cakes from the choux pastry.
  • We spread about half of the choux pastry in a mold, distribute the mass. When distributing the mass, you do not need to try to level it out, leaving unevenness. The cake will be baked in various bizarre shapes in the form of mountains.
  • Put in the oven, bake for 20-25 minutes.
  • Gently take out the first ready-made cake from the mold, set it to cool on a wire rack.
  • Put the second half of the dough into the mold. We bake the second part for the pie.
  • While it's baking, let's make the custard.
  • Making the custard
  • Pour milk into a saucepan, put it on fire and bring to a boil.
  • While the milk is heating up, drive eggs into a bowl, add sugar and vanilla. Mix with a whisk. Add corn starch to the mixture. Stir well so that the mixture turns out without lumps.
  • After boiling, pour half of the milk into the eggs with starch, with vigorous stirring. We return the saucepan with the remaining milk back to the fire. Then pour the egg-starch mixture into it with constant stirring. Cook the custard until it boils and thickens. The main thing is to stir constantly. Remove the finished brewed mass from the heat, cover with cling film, directly in contact with the brewed mass, so that a crust does not form. Cool completely.
  • Butter at room temperature, beat well until fluffy. Add the custard in small portions to the butter mass, mix with a mixer.
  • Assembling the cake
  • We will collect the cake in the same form as we baked it. This will require a thick film. We close the sides with it. Place the second (bottom) cake in the mold. We spread all the custard on it, carefully distributing it over the entire plane.
  • Close with the second cake and put the pie in the refrigerator for at least 3-4 hours.
  • When time has passed, we take out the cake from the refrigerator, carefully remove the mold and film. Place the cake on a dish and sprinkle with icing sugar. Delicious and very tender Karpatka pie is ready.
  • This dessert turns out to be quite airy and not cloyingly sweet. The cream tastes like a creamy ice cream.


There are a lot of recipes for this cake on the Internet.I accidentally stumbled upon it, and since I really love choux pastry, of course I baked it. The result is pleasing. I didn't find a recipe for such a cake on a bread machine, so I share. Maybe someone will come in handy.
