Pie "Sand"

Sand Pie

Ingredients

Margarine 250 g
Sugar 1 tbsp.
Eggs 2 pcs.
Soda (extinguished with vinegar) 1 tsp
Sunflower oil 1 tbsp. l.
Sour cream or fermented baked milk 2 tbsp. l.
Flour how much dough will take
Filling:
Cottage cheese 700-800 g
Eggs 1-2 pcs.
Sugar taste
Vanilla sugar taste
Walnuts ~ 1-1.5 st.
Cherries in their own juice (I think you can also frozen) taste

Cooking method

  • Grind margarine at room temperature with sugar and eggs, add baking soda, then sunflower oil, sour cream, flour and knead the dough to the consistency of dumplings.
  • We pinch off a part of the dough (about 1/3 - 1/4 of the whole dough), put it in a bag and in the freezer.
  • Put the rest of the dough in a mold (oiled or covered with baking paper) and evenly distribute it with your palms over the entire mold. We make a small side around the edges.
  • Add 1-2 eggs to the cottage cheese, sugar to taste, a little vanilla sugar, mix everything. We spread this mass on the dough in a mold, level it with a spoon.
  • Sprinkle with chopped nuts on top.
  • Put the cherries on the nuts, not in a dense layer, otherwise there will be a bust of cherries in the pie.
  • Then we take our dough from the freezer and three of it on top on a coarse grater.
  • We put the pie in an oven preheated to 180 degrees for 25-30 minutes (until tender).

Note

My shape (pictured) is 25x35 cm. It takes exactly 1.5 of the above portions of ingredients.

This pie can still be made without cottage cheese and nuts; instead of cherries, any jam is taken. But personally for my taste, it turns out very sweet and cloying. Can be made with cottage cheese, but without cherries. It is possible without nuts.
But this pie is the most delicious with the filling shown in the photographs.

About cherries. I had nothing to do with frozen cherries in baking (for baking I always prepare in my own juice), but I think that it has a less pronounced taste than in my own juice, so it can be put in a denser layer, I think.

Oh, don’t think, it’s not about you, I’m not going smoothly with that either. This process is problematic, holding it longer will not help, the dough just heats up in your hand and that's it. Unless you try to freeze the dough with small balls, I think, then it will be harder and will not have time to thaw in your hand. Pull out a ball and rub. It occurred to me the last time I made this pie, not so long ago.

Nice pie! In the 90s, they baked with my mother very often. The only filling was jam, more often currant jam.
