Ingredients

Dough:
Flour 2 tbsp. with a slide
from the bread machine
Salt pinch
Margarine or butter 200 g
Yolks 3 pcs.
Sour cream 300 g
Baking powder 1 tsp
Filling:
Apples 1.5KG
Sugar and cinnamon taste
Semolina 2 tbsp. l.
Coating:
Protein 3 pcs.
Sugar 1 tbsp. usual

Cooking method

  • Melt margarine or butter, mix with sour cream and yolks, add a little salt. Mix the baking powder with flour and knead into a soft dough. You don't need to knead for a long time. Collected in a bun and that's enough. We send it to the refrigerator, while we ourselves peel the apples.
  • We remove the core. To cut or not cut the skin is a matter of taste. We cut apples not finely. Each quarter into 2-3 pieces, depending on the size of the apple.
  • Chilled dough (it is quite possible to make it the night before) we divide not two unequal parts.
  • The one that is slightly larger, on a table dusty with flour, roll out to the size of a baking sheet. Sprinkle 1 tbsp on the dough. l. semolina and spread the apples. Sprinkle sugar and cinnamon on top to taste, and again semolina. Roll out the smaller part and cover the filling on top. By the way, it is convenient to transfer the rolled dough by winding it on a rolling pin. If the top layer of the dough breaks here and there, it's okay. Pinch the edges of the cake tightly.
  • Beat the whites with sugar until the consistency of soft peaks, or a little softer, and coat the cake with them.
  • The last 15-20 minutes I made the fire a little quieter.

I liked the cake very much The dough, indeed, turned out to be slightly layered. Of course, I whipped the squirrels like meringue, only now I noticed - "to soft peaks or a little softer" ... The only thing, next time I'll mix apples with a spoonful of starch - I didn't like it with semolina, it tastes better with starch. And add a handful of blueberries / lingonberries for completeness of happiness

Girls, I decided now to knead the dough for the evening.
The eggs are small, so I put 4 yolks. What should be the consistency? I am not yet a bun. And I think it won't. Mesh not in HP, but with a spoon in a bowl.

Not liquid, it cools down - it hardens and can be rolled out. I had it like a bun-piece, but with a feeling of excess flour, next time I will put less.
