Syrup, congratulations, great helper!

I'm making dumplings with a hook.
I used to do it in a combine in 21 seconds. And now with a hook, but have not yet found the ideal proportion. The proportion that for 21 sec. the hook comes out softer.

Miranda, but it seems to me the same. Strictly 50% humidity I do if with eggs, and a little drier if it's one liquid.

Olga, did you make dumplings in Kenwood?
I did, it was about Kenwood that I wrote what I was doing in the processor.
Sometimes I also make a hook, but a softer, more tender dough, and this is more often for dumplings.
Miranda
Bijou, but I get different things with the same flour and proportions.
I do not know why, but the hook is much softer than in the processor.
Bijou
Miranda, well, let's think logically. It may well be that I am confusing something .. ((
Basically, for dumplings you need a well-kneaded dough for strong gluten, so that the products do not boil over, right? And the hook just kneads. That is, gluten develops, lengthens, curls into strings ...)) And the knives in the processor, on the contrary, grind it into rags.

Elastic gluten can hold more water on it, right?
And what should we do next with this? Delirium turns out. Or not delirium? And if from the opposite? With developed gluten, water can hold less flour with it. That is, there is plenty of flour to add.

Is it converging? Or have my shaggy increased?

Bijou, maybe in rags, if long. Remember Luda. yeah, just in my first sites, I taught how to knead bread dough in a combine, literally every 20 seconds. took a photo and explained in detail what was happening with the test at this stage, the process took her several minutes. Have you saved these sites by accident? I had it, but then the computer zagalyunil, hung up, after the repair there was nothing left, and why did I not print?

Well, in Boshik, I made it with a plastic dough knife, it did not break the dough into crumbs, but rolled it into an elongated bun. 21 seconds, film and refrigerator.

I found an old photo, not a crumb, a bun.

Kenwood Kitchen Machines
In Kenwood, the hook is still the same in proportion, only longer than 21 seconds. Maybe this is the reason? Or that I, for some reason, tried to make a glass of liquid for the combine - I broke an egg there, stirred it a little, and added water?

Yesterday I made dumplings for Chinese NG, added flour to make it cooler. And, in principle, I like the dough from the hook more, that's why I stopped making it in the processor. Although it is softer, more elastic, but does not tear, etc. And Kenwood does not suffer anything and does not cry, if for a minute. or closer to 1 to interfere, only the head does not shake much.

Logically, I can't go, because I don't have enough knowledge, but in practice - I put half a glass more flour.

Ohh .. no, here the humidity will be higher than 50 percent.)) On my 50 it turns out exactly like the founder of the recipe - she pours crumbs from the bowl and collects it on the table in a lump. Well, I do the same. And all the same, I don't like dumplings, because they are soft. It seems that the dough is not very thin, it is not thinner than the six in the Atlas. And then I can leave the top five.

Here. Right. This is a way of making shortbread dough. With underdeveloped gluten and fragile structure.
And I want a developed and elastic dumplings. I used to knead it with my hands until it was silky smooth. But you will remain without hands. ((

But my little Ken twists this dough with such a creak that it's a pity to look.))

No, I didn't read about this from Lyudmila, it was more interesting for me about bread.

I can say one thing - even the noodles in the soup have a different taste from the dough kneaded for a long time with a hook, I checked it myself.
Miranda
Tell us about the shortbread dough in the blender, please.
Right in the glass?
Olga VB
I do it in the processor, not in the blender. In a blender, only a very small amount is normally obtained, because of this, there is no point in getting it dirty.

Lenkin, about noodles, gluten and kneading.
There are many ways to develop gluten. By kneading and / or at the expense of time.
For example, there are many recipes for bread without kneading. There, all the work is done by prolonged fermentation, proofing, and as a result, a slightly rubbery crumb is obtained, i.e. with highly developed gluten. Ciabatta, for example.
Therefore, if you knead in the processor (byrenko), and then let it rest for 20-40 minutes, then half the battle will already be done. And if later on rolling or just rolling pin several times to roll and fold, roll and fold, then the second half of the job will be done.
I, for example, roll out not just to a certain thickness, but also to achieve good elasticity.
After such processing, my dough stretches as long as necessary, and, accordingly, does not break in the products.
Good luck!
Twig
Oh, and we are also talking about noodles and gluten in the topic about nozzles. It's a sign! It is necessary to prepare dumplings (today I will try a long kneading, I'll see what the taste is, although any homemade dumplings are extraordinary for me)
And about the shortbread is also very interesting, thanks for the advice. Otherwise I'm not very friendly with him
Peter Push
Here's what she said Gayane Atabekova "I make from ordinary white flour. In the cache with a hook, 500 grams of flour, 1 egg, 1 tsp of salt, 200g of cold water. Knead for a few minutes, then remove from the hook and let it stand for about 20 minutes. So I do it two more times. The dough is quite dry.Place in a saucepan for 2 hours and cover. The dough becomes soft and elastic.Roll on the dough roller for 2.3-4 times, 5, 3-4 times and 7.2 times. Nothing will not burst and will not fall apart. So I do dumplings and khinkali. "

BijouYour experiment showed that your flour needs a long, long swelling process to start kneading the resulting gluten. So next time just knead the dough until smooth, turn off the kneader, put the dough in a place with t 18-22C, because 20C is the ideal t for gluten FORMATION, and after 20-40 minutes turn on the kneader ... for 10 minutes of kneading, you will get super -super dough.

Yes, I don’t argue.)) But I’m used to sharing "believe" with others and "see" myself. Yes, it's difficult with me, I know.

With "bread without kneading" by Jim Lehey (or Lai?) I generally began my acquaintance with bread dough. It exhausted me all my soul, because nothing worthy was obtained. But it made me think about the processes. I can upload a hundred photos in different versions, but this is not what I needed. And I could not understand what was wrong until a clever person told me that I had such a garbage, because the dough ... tadaamm ... lacks a batch.

In order not to spread for a long time, here are two pictures. Can be opened in original size, I made quite large ones on purpose.

They have the same dough on them. With the same proportions. Baked in the same device on the same mode - in the Shteba pressure cooker on Frying for 30 minutes. One daily without batch, the other with a batch twice as young. True, the first is overturned, and the other is not, but it is still clear that the structure is completely different.
Well, or only I can see the difference in the photo solely because I saw it live, I won't argue here.)) But there is a photo of an oven-free one (without tipping over) and it is also rough, regardless of the number and quality of holes.

In general, I do not insist on anything else, each of us has our own myths, our idols, our own path and our teachers.

Peter Push,
Oooh .. It was a great time to learn the basics. What have I not tried! After a couple of days, I could not for certain remember my actions.
Neo
Colleagues please help!
I apologize in advance if I am asking the wrong topic, but I did not find it more suitable ...
We bought a kenwood sense car for a promotion in m-video. To celebrate, I decided to quickly try out the cube cutter :)
It turned out that it connects to the sensor machines through the adapter that comes with the kit.
And here a surprise was waiting for me .. I can't handle it! I re-read the instructions for the nozzle (there are no words about the adapter, but if we take the internal socket of the adapter as standard for those machines to which it is connected without an adapter, then let's say it's clear)
I read the instructions from the adapter (5 pictures and not a single word)
There is also silence on the Kenwood website ...
In general, the result is as follows - my nozzle is simply not included in this adapter! More precisely, I entered, but I pulled it out afterwards for half an hour, having spent all my rather fragile physical strength ...
I tried a meat grinder (she also inserted it through this adapter) - I inserted it once, barely pulled it out, the second time it is not inserted ..
Well, it shouldn't be like that?
Can I have a defective adapter ??
What to do then?

And tell me, I'm completely dull - but how to start the low-speed and high-speed nozzles? By default, the whisks rotate .. OR do they start to work themselves, if the nozzle is inserted into them?

In general, I am usually friends with equipment, but here is such an ambush ..And I never expected such a setup from Kenwood: ((The mood went badly: ((
Belka13
Neo, a feature of KM Kenwood is the simultaneous operation of all drives. So you need to insert the desired nozzle and start working with it, regardless of other drives. I take off the whisk, for example, so that it doesn't get on my nerves. Unfortunately, I can't tell you about the adapter - I have a different model. Try calling the Kenwood hotline. Or the girls will tell you later.
Neo
And I don’t understand how to start working? Is there no power button on the nozzle?
Or do I turn on the car and all the drives have to turn at the same time? That is, if, roughly speaking, remove the cover from the low-speed drive and turn on the machine, will the mixer work and the drive is empty? (I ask to the fact that this drive does not spin when the mixer is working, maybe this is a marriage?)
Belka13
Neo, put on the required attachment and turn on the required speed.
Miranda
Neo, I'll start from the end

In Kenwood, all the nests are always spinning at the same time. Such a device. If a cube cutter or a meat grinder is working, then the bar, where the whisk / hook is inserted, rotates too. And vice versa. Just a low speed and high speed jack, if not in use, is hidden under the covers and you can't see.

I do not have an adapter, but I had problems removing the attachments.
I didn't understand or didn't read the instructions.

But immediately removing the food processor and cubes did not work. Rather, I removed them from the machine itself, but I could not disconnect the pin from the food processor bowl, and the heavy gray knob (I don't know what to call it) from the cubes could not at all.

It turned out that it is better to disconnect on the machine itself. Turn the food processor and, without removing it from the socket, a little more, then the bowl is removed from the pin, the pin from the machine. Kenwood acts as a lever. It's very easy.

And with the cube cutter it is the same - remove the nozzle itself (all plastic parts assembled) from the gray thing, and then this thing can be easily removed from the car.

Perhaps the same story with the adapter, only + one step.
Well i think so

***
We discussed recently about a meat grinder, though without an adapter.

Quote: Miranda
but look at a piece of the presentation, there is literally half a minute

link from the desired point in time 10.10 -

He explains how best to insert the meat grinder and shows.

That is, such a retraction (via the link in the video) and plus into the adapter, perhaps, gives a tight bond, which cannot be immediately disconnected.

Therefore, it is probably better, without removing the adapter from the socket, to remove the attachment, and then the adapter.

Neo
Miranda, thanks! But my problem is precisely in the connection of the gray knob with the adapter ...
When I separated them, I already had metal shavings spilled out .. (well, I'm exaggerating, of course, but there was definitely metal flour)
Peter Push
Neo! With the purchase of you! Let it only please!
Why did you choose such difficulties - an adapter? For senses there are nozzles - food processor KAH 647PL, cube - KAH 400PL, meat grinder - KAH 950ME, if 14 days have not expired, then replace.

Why did Kenwood come up with a new compound?
Is it really such a fat on the new line of nozzles and adapters?
Twig
I don't remember very well, but should there be a screw in the adapter?
Certain nozzles are sold for the promotion, they are all under the adapter, yes.
You can come to Mvideo with your adapter and voice your problem at the service area. The guys will help, maybe even replace the adapter, if that's the case.

There is a screw, but it's not about it. I figured out the screw, it fixes the nozzle. I insert the nozzle without it (it does not interfere, that is), but it itself does not fit normally into this adapter ...

In general, of course, this is probably more of a cant of the store - to warn the buyer about possible difficulties (or use it to teach or warn, maybe I would not take nozzles for this drive at all) For now, I just want to return the nozzles with the adapter and take nozzles for other drives. So you probably can?

Belka13, then we go the other way. Somewhere at the end of 2015 and at the beginning of 2016, and this is the second volume of our topic, many wrote about this promotion and about buying cash in this way. It is necessary to look in the second volume and ask questions in a personal. That's PaulI , in my opinion, I also bought my Sens Chef.

Peter Push, I am a reinsurer - first I study everything, look at reviews, read about all the problems, and then I buy. But here the purchase has already been made. Perhaps the owners of Senses will catch up and be able to explain in more detail what to do in this situation.
Neo
I also usually study everything meticulously ... I chose for a long time and re-read a lot .. but I was choosing between brands and functionality in general .. Nozzles with a different input, which are suitable for Sens, are also sold for the promotion.

Neo, take it easy, the car is excellent, but you will solve this problem, you will see, you did not buy it alone, you did it before and after you. Change nozzles - well, if they change exactly to the ones that I voiced above - for the Senses. A meat grinder, a cube - these are the necessary attachments. Visit the store again and ask for a demonstration of the adapter. I'm thinking: 1. Insert the adapter into a low-speed socket, here you have it like in the Titaniums and Chefs. 2. Then set the meat grinder (cube) for min. speed like this -. Chat with PaulI, he recently visited the topic "Kenwood. Working with nozzles". Don't panic! Learn, people work and you will.

And it seems to me that there is no point in using attachments that, in principle, do not fit this model. And it would be fine if you just have nozzles from the old car and therefore had to buy an adapter. But to buy a new car and get nozzles that do not fit it (without an adapter), this can generally be attributed to the article "consumer deception".
In such a situation, I would go to the store and ask to either replace the nozzles with those that fit without any adapters, or I would return them altogether.
Neo, if you are not too lazy to bother with a return / exchange, then call consumer protection and describe your situation to them, they will tell you which articles of the law to refer to.

Because these attachments are universal and fit most Kenwood machines. Including meat grinders. And the KAH attachments are still exotic, they are not everywhere.

Air, there is just the opposite: you do not get attachments for the car, but the car is free for attachments. You could choose from any available nozzles, just first check their compatibility with the machine itself on the Kenwood website. And there is no deception there, for no one promised anything. Simple sales promotion. Someone picks up attachments for personal use, and someone takes liquid ones for further resale and pays for their car partially or completely. Look how many of them appear at the flea market and are in demand.
A Neo you must use clause 5 of the rules of the promotion, which says: "It is allowed to use the program" Exchange and return without problems "

There may be no fraud, but the sellers should have advised on all the nuances of the purchase, warned about the adapter. I would have resisted this, went to the store and asked to replace it, since the seller did not explain how the nozzles differ .... If the nozzles are bought for yourself, in any case it is more convenient without an adapter.
