Withering was done earlier to soften the middle of the leaf. Previously, there was no plastic either, that is, cellophane bags. I compared the 1st stage of withering in the fabric and in the bag. Then everything is according to the recipe - you can freeze it, or you can immediately go into a meat grinder and for fermentation.
My experiments that summer in the driest weather showed that keeping the leaves in the bag at almost 100℅ guarantees granules.
