Fermented tea made from leaves of garden and wild plants (master class) (page 402)

Likar Nadiya
Yuri K, good day! Please tell me, share your experience, how did you prepare the sage? Dried completely with inflorescences and stems? Freeze? Fermented as a mixture or separately?

Yuri K
Likar Nadiya, kind! I cut off the sage, then cut off the leaves according to the same principle as in fireweed, drawing from top to bottom along the branches. The inflorescences are tender, there the stem is soft, they were torn off completely. First, it was dried by spreading it out on the fabric, then two courses of freezing / defrosting, then twisting in a meat grinder and fermentation. All together, and leaves and inflorescences. In my recipe everything is described in some detail.

Loch. I have long wanted to try tea from it. But he never came across to me. I know that you may not like the tea right away, you need the dry fermentation to take a long time.

Have a question for experienced tea-makers, what is the best way to combine it? Mixing with everything, everything?

Sage. Found it by accident. Divided into parts. I'll just dry it, ferment it in tea and leave a little flowers. The smell is worth the bomb!

Girls, we have a shower every day in Perm. Tell me is it worth making tea? Or wait for good weather. Did someone make tea from wet leaves?

Lina wrote above that she cooks, gets wet with a towel, dries and then according to the recipe.

Thank you. Apparently missed. I'll try.

I've been collecting the leaves all June. either after the rain or in the rain. I understand, of course, that some of the beneficial bacteria are washed off. but either this way or without tea at all ...
Radushka
Likar Nadiya, I was a goof with cherries and raspberries. She made a cut sheet. This year I can't get to a sucker. I want to make a meat grinder
sweet_blondy
Radushka, I didn't like the silvery dust in the meat grinder ... well, it's just superficially) I did the mix. let's see what it tastes like)
Likar Nadiya
Radushka, thanks for the option. I am a goof while tempering. Divided into 2 parts. I want to make one mono (but maybe change my mind), and the second one into a mix.
sweet_blondy, the sight of tea with dust does not scare me, the main thing is that it is tasty. With a sucker, the main thing is to withstand longer, as I understand it.
Radushka
Likar Nadiya, no need to do mono. Better to mix it with something. Yes, a year later, a honey aroma remained from it. Own is gone.
The dust doesn't scare me at all. "Dusty" tea is the most delicious!
Likar Nadiya
Radushka, understandably. I want to make tea with all-all plants together - a super-mix.
Radushka
Likar Nadiya, yeah
I did "July - top of summer" last year - 13 components 100 g each. Have not tried it yet
Likar Nadiya
Radushka, Oh wow
And I have joy - they cut the strawberries! A whole bunch of leaves! Last year, I didn’t collect the leaves from it, only planted it, I was afraid that I would not get sick. And this year - tea happiness
Pani Tasha
Good night girls and boys. I sit, read and envy your variety of plants. We only have Ivan-tea, raspberries and meadowsweet in unlimited quantities. Only last year they found an ownerless apple tree, black chokeberry and a couple of black currant bushes, but you can't pick up a lot of leaves there. You also need to get the berries. I began to look for information on how else to diversify teas. And then I found out such information.Maybe someone else will come in handy.
It grows in our woods, and since childhood I loved this berry, especially when we were picking mushrooms, it usually ripens at this time. So, it turns out that tea is made from its leaves. Only here fishermen and hunters brew them simply, fresh. And I went to the Internet for detailed information, and this is what I found out: drupe - a perennial honey plant; species of the genus Rubus (Raspberry) of the Pink family. In Russia, it is found in many regions of the European part (except for the extreme south), in Siberia and the Far East. In Central Russia, it is known in all regions, confined to humid forests, mainly coniferous. The fruits of the stone fruit contain carbohydrates, organic acids, pectin and tannins, up to 44 mg% of vitamin C, more than 1000 mg% of flavonoids, tocopherol, phytoncides. In the aerial part - alkaloids, flavonoids, tannins, rutin, ascorbic acid. The use of bone marrow is highly desirable and useful for anemia and colds. In folk medicine, a decoction of leaves and stems is used for diseases of the gastrointestinal tract, tumors, gout, inflammation of the joints and as an antiscorbutic agent. In Siberia, leaf infusions are used as a pain reliever for the heart, for migraines, dandruff, to strengthen hair and as a sedative.

Berries can be served in sugar or with cream, milk and honey, as a sauce and dry seasoning, bone water and a coffee drink. Vinegar and wine, complex tea are made from the bone, and it is dried. But it is best to eat the berry fresh. Kvass and fruit drinks, jelly and compotes, preserves and jellies, syrups and juices, mousses and seasonings can be made from the bones. For long-term storage, the berries are covered with sugar or poured with water and stored in a cold place (refrigerator, cellar, glacier).Fermented tea made from leaves of garden and wild plants (master class)
Let's wait until September, this year it is unlikely that it will ripen earlier, and let's go for the leaves.
Sorry if the text is too long.
Radushka
Pani Tasha, eh ... we would have YOUR Ivan-tea ...
This season I used my fireweed (the one that I planted for divorce) as an additive to currant (garden strawberry + odorous black currant). And quite a bit there Ivanushka! Less than 10%, and the taste has become extraordinary!
Yuri K
Radushka, I fully support! If we had Vanyatko, perhaps there would be no worries with other foliage

I have a goof while hardening too, after defrosting the smell and color does not change absolutely. Not yet delightful, like sage. I will only add to the mixes, per zhmenka.
Likar Nadiya
Yuri K, when I was driving home from the collection, I clearly felt the smell of honey in the car, the leaves were tightly packed in bags, and they were in the bag. At home, when the loch leaves were poured out, they were warm, the fermentation began. But there was nothing more to give such a smell.

As experienced people say, the sucker behaves well only after a year

SOS !!! Help-help with advice! The thing is, I put it on thawing the leaves in bags on the street, because it's warm. And I was urgently pulled out of the house, I forgot about them. When I remembered, there was no one to call to put it in the refrigerator. As a result, the sun warmed up, the leaves were 2 hours at 30 degrees, the packages were hot. I put everything in the freezer. How next now? Apparently, twist and dry immediately? What do you think?
Yuri K

I felt this only when the sucker was in bloom. The last batch was collected by a long faded one.

SOS !!!
Dramatically reduce the second defrost and actual fermentation (secondary) in time. I keep it longer - nothing terrible happened.
Pani Tasha
Radushka, yes we are glad that we have so much Ivan-tea. I really like teas from all its components. Sometimes you just want, even a little, variety. And our northern region is not that rich. And you describe everything so tasty.)
Svetlana Kravchenko
For those with thyroid problems, sage is contraindicated. I myself wanted to dry it, and then I studied the properties and set aside this idea. Although I like the smell (((
Yuri K
Svetlana Kravchenko, all these medicinal indications and contraindications refer to the herb. They practically do not belong to teas, with our processes, almost no lek remains there. substances.

Well, this is on purpose! So that the regiment arrives maniacs!
lenusik1967
This year I have already made tea from the leaves of the bone. We have a lot of leaves, there are almost no berries, I add it to Ivan's tea, it turns out very tasty. If you collect a leaf in the fall, then it is all gnarled, sick. It is difficult to make tea from drupe; it is very dry.
Radushka
lenusik1967, well, since the bone is closely related to raspberry, it is clear what kind of leaf she has
Pani Tasha
lenusik1967Thanks for the info on the bone. We do not have so much of it to make a separate tea, but in the company of Ivan tea or something else, I think it will be good. So you have to go for the sheet.
elena88
Tell me, for God's sake, is this Ivan tea?

Vanka has 1 flower, and here there are several brushes
elena88
Yes, and it doesn't smell like anything
Radushka
elena88, you need to take a closer picture of the plant. You can't really make out anything in this photo. And the flowers themselves. And the leaves are large.
He doesn't smell like anything, by the way. It's not mint or sage.

Here's a bigger picture

Definitely, no, not Ivan-tea!
________________________ ________________________ ________________________ ______________

In Ivan-tea, the flowers do not have a receptacle and the buds are formed directly from the trunk. And here is a receptacle. And the shape of the leaf is different. Even Ivan-tea is softer, but this plant can be seen that it is tough.
elena88
And the leaves

Natalo4-ka, isn't he? Oh, sorry! And I was already glad that I found him here, with us. And what kind of animal is this?

And his leaves are "warm" like velvet
Natalia-NN
elena88, Definitely not. This is not Ivan-Chai.
Yuri K
Well, here I finally caught my luck by the tail of a big sortie to the far reaches of the city! We typed: sage (where am I now without it), St. John's wort, ivanka leaf !!! And I have an urgent question for you girls. Here, in the thicket of the forest, I came across rarely growing bushes of three to four leaves of such grass, when rubbed, a very original aroma, incomparable, is not geranium a case? Although the scent does not even come close to the stench of homemade geranium ...

Yura, haven't you been to Bashkiria? Or is she wearing a tulle?
I'm so happy for you! Vanka is so cool !!!!

The leaves are like geranium
Yuri K
Thank you sweet_blondy, in Tyulgan were, as intended! Oh, and roamed there in the forests and glades !!! I modestly post a photo here, only on the topic, but in VKontakte there will be so many views after processing, you will download! The place is stunningly beautiful, with herbs up to the waist!

So I ask the knowledgeable to confirm or deny)) Accidentally tore off a leaf and was taken aback by the enchanting aroma, absolutely not like the usual geranium! Rarely did these leaves grow, I had to look in the herbs! And already the habit has been formed, to pick a leaf of unfamiliar grass, grind, smell, on the go

But what they typed

Yura, tease! My trip to Saraktash broke off this weekend. And I made such plans! If only it turned out to go to the zauralka))))
Yuri K
sweet_blondy, Zhen, let there be more days, summer is not over! By the way, Ivanka has not bloomed in those parts yet, she is only picking up buds!
Likar Nadiya
is not geranium a case?
It looks like a geranium. I collected the same in the forest the other day. She still has light purple flowers. The smell is interesting. After withering, when I put it in a bag, I caught something remotely similar to the familiar smell of homemade geranium.
Now I am drying tea, I called it Wild-wild apple, pear, hawthorn, elk, sage and geranium. But .... The smell is still "original". The farther from the kitchen, the nicer.
sweet_blondy
Vanayayayayayay
John's wort also want)))
did you go straight and tulgan? They showed me the woods outside the village

There were flowers? And the leaves are alike. Smallish though. But it smells like geranium. Although it may be so, it is still to the north.

Of course outside the village, Zhen!

lily_a, there was no color ... The petioles are very long, three petioles each with a leaf from the rhizome.
sweet_blondy
Yuri K, what if there is still somewhere closer))) I'm still looking for ways not to go so far
of course the summer is not over yet. will have time. just can't wait

tell me where you found it? closer to the river or at the edge of the forest? Is there a lot of it in general?

Very little, if we had not been shown this clearing, we would not have found it ... Then how many we drove, we did not meet again
sweet_blondy
dachshunds ... in general, as I understand it, the quest is not easy))) otherwise my husband and I are trying to figure out - should we take a day off on Monday and not rush there
Yuri K
sweet_blondy, I understand that I will disappoint you. But we need to look for those in the know, to find it ourselves will be a very significant problem, especially since it does not bloom yet (I repeat) there yet ..

I don't know what to do with St. John's wort? Only to dry, without our fermentation and other things?
Radushka
Yuri K, geranium is. When it starts to fade, it will look even less like a "home" one. BUT ... it still tastes bitter to me. Therefore, I add quite a bit of mono-geranium to a liter teapot to our "regular" tea from the garden
Yuri K
Radushka, I had a handful, it turned out to be not enough to collect))) I threw it into the mass to the wild raspberries)))
