premium wheat flour 235 g
baking powder 7 g
salt 5 g
cocoa powder 35 g

semolina 0.5 tbsp.
serum 150 ml
cottage cheese 600 g
sugar 2/3 st.
eggs 5 pieces
baking powder 10 g
vanilla sugar (optional) 1 pack.
some sunflower oil and flour to grease the bowl

Cooking method

  • "Palm"
  • Option 1.
  • Beat the sunflower oil, egg and sugar (best with an immersion blender) until "mayonnaise" is formed.
  • Add cocoa, flour, stir well. It will turn out to be something like nutella.
  • Add soft butter, baking powder, knead until smooth.
  • Option 2.
  • Instead of butter and sunflower oils, take 135 g of margarine.
  • All components, except the baking powder, quickly mix until smooth. Add baking powder at the very last moment before baking so that it does not start working ahead of time. Stir quickly but thoroughly.
  • "Cloud"
  • Option 1.
  • Pour the semolina with whey and set aside for at least 30 minutes.
  • Beat the cottage cheese, semolina with whey and the yolks of all 5 eggs.
  • It is desirable to take plastic cottage cheese. I prefer "Blagoda", but this recipe for cottage cheese is not critical, it is only desirable that it is not too wet, otherwise you will need to balance the combination of cottage cheese and liquid, that is, take a little more cottage cheese and less whey.
  • Beat whites of 5 eggs with sugar until hard peaks.
  • Mix the curd mixture evenly with baking powder and carefully stir in the whipped egg whites.
  • Option 2.
  • Instead of whey, you can take kefir, yogurt, natural yogurt, sour cream.
  • Then you can take a little less cottage cheese and more sour milk.
  • For example, if sour cream, yogurt or yogurt are thick enough, then you can take 1 tbsp. sour milk and 500-550 g of cottage cheese.
  • Everything else - according to the first version of "Clouds".
  • Pour about 1/2 tsp into the bottom of the bowl. vegetable oil, pour in 1/2 tsp. flour, mix it all with a brush and spread it over the bottom and sides of the bowl.
  • Put the "Palm" dough on the greased bottom of the bowl and distribute it evenly, pressing down) it along the bottom and side walls of the bowl, reducing it to about 5 cm in height.
  • Put a "cloud" on top in the resulting trough, level it a little and put it in a slow cooker on the baking mode.
  • Focus on your multicooker: add about 20% to the time of the standard program.
  • That is, for example, I have a Redmond M150 MV. In this MV, the standard baking time is 50 minutes. I am increasing this time to 60 minutes.
  • Do not open MV after the end of the baking program!!! and leave in the "heating" mode (70aboutC) for 60 minutes.
  • Turn off the heating, but still do not open the MB for another 10 minutes, then remove the bowl from the MB and leave the cheesecake to cool in the bowl at room temperature. It is advisable not to shake the bowl all this time, not to knock, since the "cloud" is very gentle.
  • Then put the cheesecake in the refrigerator for several hours, preferably in the same bowl in which it was baked.
  • Take it out carefully so as not to wrinkle the "cloud".

In this case, you can leave the "palm" the same, and everything that has been added in addition to this recipe can be molded into columns (or walls) about 1 cm thick and poked into the cloud after you have filled it over the base.
