Almond cranberry pie

Ingredients

almond petals 200 g
butter 100 g
light honey 100 g
sugar 100 g
eggs 3 pcs
frozen cranberries 100 g
juice and zest of half a lime
flour 75 g
corn starch 50 g
baking powder 1 tsp

Cooking method

  • 1. Grind almond petals into very fine crumbs. Separate the whites from the yolks. Mix almond crumbs with honey, lime juice and zest, egg whites and whisk with an immersion blender until smooth. The resulting mass is similar in consistency to thick semolina.
  • 2. Beat the softened butter with sugar, then, without stopping whipping, add the yolks one by one. Add almond mixture and whisk everything together. In several stages, add flour mixed with starch and baking powder and mix until smooth.
  • 3. Place the dough in a baking paper lined dish. Spread the cranberries on top and put in an oven preheated to 180C for 40-50 minutes (until a dry skewer). Sprinkle the finished cake with icing sugar.

Note

Very easy and quick pie. Lush, aromatic, with a slight sourness.
