So, with such ratios, neither thin nor wide noodles were cut on a typewriter, the dough needs to be steeper and maybe not add oil.
In the end, I just rolled out the ribbons and made half-ravioli-half-pelmeni, there were no problems. After boiling, the dough is tasty, not rubbery.
By one in the morning, I butted to sculpt dumplings and threw half of the dough and minced meat into the freezer and curtailed production, the next day I cleaned the device from flour with an ordinary paint brush and like new.

I make the noodle dough in much the same way - for every 100 grams of flour, 1 egg + 1 tablespoon of water (to ease the efforts of the stove). Cut the dough into portions.
