Today (already yesterday) is the third day of dense development of the noodle cutter. We prepared a bunch of noodles, made dumplings, today we cooked lagman. Previously, it was always made with spaghetti, since I tried to pull the dough for lagman once in my life, and I will never again. Roll out the dough is a pleasure, easy and simple. It is only overshadowed by the stubborn reluctance of the noodle cutter to cut thin noodles, the wide one is easily separated. Well, okay, it's too late to worry.
I would like to ask you dear users for advice: What can you knead a tough dough? Rather, what kind of food processor will knead a very tough dough well and without straining? There is a sea of technicians in the house, you need a kneader. After HP, in my opinion, the dough is very soft. Although even his poor stove kneads in visible labor (Above I wrote the recipe for the dough I used, from the instructions for the HP) I have to roll it several times by adding flour, or stir it with my hands for a long time and persistently. What I would like from the device: Power, compactness, and a humane price. Kenwood for 20 tr. I definitely don’t want to. Although I have already tried to save money. Thank you in advance.

Since I mix the dough exclusively in a bread maker, I can still advise you once again on this option, how to try the dough of someone from the members of the forum. Links to recipes are in the first post of the topic. These are proven recipes from the noodle maker. Everything should work out! But if you still firmly decided to buy a combine, then welcome to the section of our forum dedicated to these devices HERE .

So today I, not having read this twig to the end, having seen a single copy in a china shop, bought a Peterhof RN-1601 noodle cutter for 245 Ukrainian units, that is, for almost 31 US dollars. In a china shop, a saleswoman tried to insert an insert with cutters instead of the one where the dough is rolled out ... well, and there were also "positive" moments characterizing the sellers in this shop (I still want to believe that there are also real sellers). Knowing that the assortment in our town is too heavy, I could not resist (but we do not even give guarantees for such units, so it will not work to change or return) and brought it home. The paper test went well, only 1.5 mm thinner paper still cut through worse than thicker paper. The box is like Mate's, only 1601 is written instead of 1602, and in the same languages on one side of the box. The barcode is the same. I haven't found a crown with a monogram anywhere! And the question arose this: I do not fully insert the handle into the hole to roll out the dough (the projections (about 16 mm) do not fit into the grooves by about 4 mm), and in the cutting attachment the handle enters the grooves with the protrusions completely, of course it there it is fixed more firmly. Is this a marriage? And nothing can be done about it? Just adjust? And it turns out that this unit is attached like a meat grinder only to the edge of the table? because the handle touches the surface of the table when rolling out the dough, that is, it should not touch the table like a meat grinder? Oh, and I will get tomorrow from my men right up to the New Year
vlad1252
My pen does not completely fit into one of the sockets of the noodle cutter, this is a marriage of course, but nothing can be done if they only change it for you. Really attached to the edge of the table. Of course, it does not cost $ 31, but I see the prices for all are about the same. Only if you buy an Atlas directly in Italy for 35 EUR

I have one! I bought it in the spring, at Maxidom for 1300 (minus 4% on the card), I'm quite happy.

The attachment is removable, the noodles are thin and thick, 9 positions of the thickness of the rolled dough. Before buying, I looked at Titania - by sight there was no difference, except for the price.

Hairpin , I have such an animal. Simple Soviet model. Rolls, cuts ... I can't say anything about the price ... I've had it for a long time. I can say one thing, now I want electro, so that both hands are free. It's easier to work with the dough this way ...

Hello! I'm new to your forum. I really wanted to buy a noodle cutter, but after reading this topic for some reason I'm afraid. I have no money for the expensive one, but is it worth taking cheap ones? And where? In our city, I have not seen them.

Well, what can you advise here? the topic has existed for a long time and as far as I could keep track of it, after all, the percentage of expensive noodle cutters here is less, and there are more satisfied with all noodle cutters than dissatisfied ones. A marriage can be caught by any technique, and if you carefully examine everything when buying and do not hesitate to twist everything, put the handles, see how the rollers for rolling out the dough adjoin each other, and then only pay money, then the percentage that then you will not regret buying even an inexpensive noodle cutter is very great. But where you can buy it, I won't tell you, I don't know.

And who ordered on the Internet? (Sorry if I missed something)

Do you want to order online from another city or in your own city? If in your city, then it's not a problem right away, check everything with a courier and if something doesn't suit you just don't take (don't buy) and that's it. I buy almost everything in online stores, but we have a lot of them and therefore there are no problems. But if you order in an online store in another city, then it will be impossible to check everything before payment!

Crochet, if you are from the club "Do it yourself" and you enjoy it, then you definitely do not need it. I have . I use it. I am so pleased that I even ordered a wooden noodle dryer from Germany. But my hands hurt from rolling, given the age, and you are only 31! Buy if you want to get old. By that time, I think a lot of things will be invented to make home life easier.

Why is it noisy? If the dryer is infrared, you will not hear a sound from it, but it will turn out even faster, for noodles - what you need.

Lika, the wooden dryer is also prefabricated. I, however, do not disassemble, since there is enough space. I still think wood is better for wet noodles. And so, well done, an inventor.

NataliaK
Thank you very much for the information on the noodle cutter! I will deal with its acquisition, because once I have already tried it, I really need it. And Bergof had to be returned to the store due to the fact that the handle does not fully fit into the hole and there is no normal lever, and it is on the rolling, where you have to scroll the dough several times. The arm is damaged, so I am looking for a typewriter without such a defect. The owner of the store said that the whole batch is like that (stamping). It's a shame. Moreover, our prices are growing by leaps and bounds

I've been using this noodle cutter for many years. They are still on sale, they are inexpensive, about 300 rubles. Trouble-free, never broke, and there is nothing to break there. Super easy to use. I make the noodle dough on eggs, with the addition of salt and a few drops of vegetable oil. The noodles do not dry out, are well stored, do not crumble.

Cuts without rolling. There is no additional roller there. It's a pity, of course, that there is no rolling roller, but I'm used to it.

When the noodles dried up, they became very fragile. Share a secret, how about you?
Rusya, maybe you sprinkle the dough with flour when scrolling? I hardly ever sprinkle flour. Only at the very beginning I slightly sprinkle a silicone mat, onto which the rolled sheet from the noodle cutter goes. And the noodles themselves, no, no. And further. How do you dry your noodles? If this process takes place at an elevated temperature and low moisture, then the noodles crumble more. I, as you saw in the photo, dry on a dryer for 10 hours at room temperature. Each stick is removable on the dryer, so it's easy to both put on raw noodles and remove dried ones. I dry my noodles in the kitchen, where the humidity is slightly higher compared to other rooms. I put the dryer on the refrigerator. Below, next to the refrigerator is a sink. Maybe that's why the noodles don't "get brittle". When I need smaller noodles, I break it with my hands. In principle, noodles are generally quite fragile and brittle product. This is normal. I made bows according to the same recipe. It turned out and did not break at all. Also, I think a lot depends on the rolling of the dough. You need to prepare everything you need in advance and, without wasting time, quickly make noodles. Take a piece of dough so that you can scroll at a time. Keep the rest under a bowl until the end of the process. Success in making delicious noodles!

Hooray, the noodle maker is coming every day! Welcome! As I bought the noodle dish, I hardly buy pasta! And I make noodles for the first, and for the second. Ordinary dishes become very special when you replace purchased noodles with homemade ones! Many people think that making homemade noodles is a "relic of the past" and they do it out of painful idleness. But this is not so! In addition to the noodles on the noodle maker, you can roll the dough for so many dishes!
so congratulations on your purchase and wish this purchase not to be idle

And who made the noodles through the noodle cutter?
I have a Fakelman noodle cutter and the thickness is regulated only for the layers of dough, and the noodles come out very thick. Therefore, I adapted to roll out the layers of dough to the thickness I needed, and then cut it with a special noodle knife.

I don’t understand what the difficulties have arisen? I roll out the dough to the desired thickness, and then into the noodle cutting part - everything is super cool, the noodles are thin, already transparent
Do you also roll out the layer before cutting into noodles, or not? How can she get fat - I can't understand

I roll out the layer, of course, only then, if it is passed through the noodle cutting part, it seems to undercut the noodles, because the thickness cannot be adjusted. Thin dough is obtained for a noodle cutter, but I don't like thicker. Maybe I am not explaining clearly ...
In general, this method did not take root for me.
For rolling layers SUPER! And it's better for me to cut with a Bergofov cutter, already slightly dried layers of dough.

RybkA, when passing a layer of noodle dough, it is necessary to lift it from below with your hand at the level of the roller and support it where the already cut dough appears from under the roller. Then it will be wonderful to cut at any thinnest layer thickness.

And I have a problem. Yesterday we brought a Bergner noodle cutter. Of course, I immediately knead the dough and make noodles. Everything turned out great. (Reverance to all noodle makers - perfectly prepared theoretically)
True, on the wide noodle mode, they cut into groups of 2 noodles, every other time they were not cut.
Today the noodles were first cut with a terrible crash - the husband ran into the kitchen to find out what happened. Then the shavings began to fly, and at the end the unit died. It just jammed - do not crank. The remaining dough was cut with a knife.
With all this, the dough sheathing part and cutting of thin vermicelli work perfectly.
Tell me what to do? Change immediately or poke around and try to establish?

Panevg1943

Fadeeva, check if the roller for rolling wide noodles has jumped out of the side holders (they are plastic for many noodle cutters). When slicing noodles, raise the dough where the noodles exit to the level of the roller. My advice: change the noodle cutter if it's not a simple mechanical displacement of the roller.
vlad1252
Most likely the gears in the noodle cutter block are jammed, try to disassemble and look. See my posts in the topic, I wrote how. Everything is of terrible quality, both in execution and in assembly. I myself regret that I bought a cheap one ...

The husband looked - one tooth at the gear was deformed. Tomorrow will change.

And why so categorically, I bought this noodle cutter from them - it really is made in Germany, and it weighs not like Chinese consumer goods, but almost 3 kg, and the quality of the rollers and the performance are very good. If you paid twice as much, it does not mean that everything else is rubbish.

vlad1252
lesik_l You probably have not read the whole topic, such things have already been discussed. In world practice, many firms actually locate production in China. Under its own brand and with its own quality control system. The same Panasonic for example. The company has a website, offices in many countries, well, in general, the seriousness of the company is beyond doubt, and by and large it does not matter where the goods are assembled. Try to search the Internet for information on your noodle cutter, find the manufacturer's website, find out who they are, what else they produce. I think there will be very little information. Even a small firm almost always has a website on the network. Read above what I found on my Austrian Peterhoff. I think yours is from the same place. Just don't worry, no one told you that the machine is bad, just from my bitter experience I want future customers not to be guided by the inscriptions on the boxes, but to know for sure: there are good Italian and Chinese cars under the guise of Austrian, German, English, etc. And they will work 50 to 50. If not right, correct.

Little mouse, there are several posts about this noodle cutter in this thread. I have this noodle cutter for about a month, made noodles a couple of times. I can say one thing, you need to choose the best recipe for the dough and learn to "feel" the dough when it is ready to be cut. Sorry, I can't write more precisely. She cuts well, but, again, there is nothing to compare. If you are interested in something in more detail, then ask.

rolls out the dough normally, wide noodles are cut from any thickness, and small noodles only if the dough dries a little, self-taught baker gave advice:

Quote: Self-taught baker

If the dough is done ONLY on eggs, that is, without WATER and REST OIL, then everything will be cut wide and small.
CHECKED.
And the calculation is simple - for 1 medium egg - 100 grams. flour x / bakery, but it is better to take Italian (type "00", for me Farina is good).
It doesn't work out that way, just, as previously advised, dry it.
