Then - sugar, cinnamon, nuts, roll up, wrap the roll with a snail, anoint, sprinkle with sugar, and bake at 160 degrees, not for long.

Khachapuri should be allowed to cool in the oven. I immediately took out mine and it fell well. But it was still quite tasty.
And I'm still looking for a recipe for real Georgian khachapuri. Nowhere, even in restaurants, they do this. As I tried it back in Tbilisi, I can't sleep well. But there it was strangely cooked. No fries, everything is just swollen (cheese). And the dough is the softest. It seems that it is cooked not just in the oven, but also in a steam bath. I'll have to try. I put minced meat balls almost on the edge below. I close it with the top. I press down between dumplings with my fingers and "blind" the bottom. and then I go along the bottom with a corrugated dough roller. I do the same between dumplings. the result is such cute dumplings. It may sound confusing, but in fact it is easy and fast. It's faster and easier for me to make than making dumplings on a special dumpling pan. And it turns out prettier.
