Ingredients

Wheat flour (I have 1c) 330g.
Butter 250g.
Matsoni (kefir) 250g.
Salt pinch
Soda 1 \ 2h. l.
Filling*:
Powdered sugar 200g.
Vanillin 1 \ 4h. l.
Wheat flour (I have 1c.) 150g.
Ghee butter 60g.
Lube yolk (I have yogurt)

Cooking method

  • Chop the cooled butter into crumbs with flour mixed with salt and soda.
  • Add kefir, knead the dough (add flour if necessary).
  • Divide the dough into 3 parts, form a ball from each, dust with flour, put in a bag in the refrigerator for 40 minutes.
  • For the filling, mix powdered sugar, vanillin with butter, add flour until crumbs are obtained.
  • Roll each ball into a rectangle (dust the table well with flour), 2-3 mm thick. Distribute the filling, roll up, press down.
  • Put the rolls on a baking sheet covered with paper, brush with yolk (yogurt), cut into 2.5 cm pieces. Move the pieces slightly apart from each other (this is important).
  • Fast gata
  • Bake in an oven preheated to 200C. The exact time depends on your oven, I have 60 minutes.

We have a similar Gata from celfh, but the composition of the products is slightly different. Maybe someone will be interested in this option.

Marish, the filling is not felt as current in the finished gata. It dissolves and it turns out, as it were, puff pastry is denser and softer.
