I will answer my questions myself.
Yesterday I baked bread, according to the recipe given above. But instead of cheese, I added raisins, doubled the sugar and added a bag of vanilla sugar. It turned out to be a very tasty baking. I made one mistake: you need to put the raisins in the dispenser, otherwise the machine will stir it so that you won't find it later. In the morning she cut bread and wondered: where did the raisins go?
Next time I will try to add not 110, but 200 grams of cottage cheese.

The bread is just wonderful !!!!! Lightweight, fluffy, soft, rose very well
I added 2 tbsp. l. honey, a little more cheese than 3 tbsp. l. and 100 g of cottage cheese 23% fat. Before baking, greased with milk and sprinkled with grated cheese.
A wonderful bun for tea!

Try to put smoked cheese "pigtail", the one that is in the form of long thin stripes and then woven into a pigtail, produced in Adygea. I put it smoked, and in the dispenser (or before the last batch).
You can also put chunks of Parmesan (real, but expensive) and not crumbs, but chunks.
Try it and you will succeed.

The instructions for the bread machine say that it is due to the fact that during work the lid of the bread machine was open (I added milk somewhere 20-30 ml) .. Today I worked on the mistakes and now I bake like this: I mixed baked milk with 23% baby curd and cheese, cut into large cubes, added on a signal ... and loaded everything else as it is written further according to the recipe + sugar .. (and yesterday I threw everything right away) now the kneading is in progress, but I really like the bun and no need to add milk ..

Flour -4.5 tbsp.
Serum - 0.75 tbsp.
Water - 0.75 st.
Freezer curd (homemade) - full glass with top.
Sugar - 4 tbsp. l.

Raisins - 2 tbsp. l.

Yeast - 1.5 tsp (rather even a little less).
Cycle time - 3 hours 50 minutes.
