I've had this a couple of times. not with this cake, with plain bread. already like not the first samples in HP were, that is, it seems to have filled my hand. and suddenly the bread was no longer produced. at first I thought about my crooked hands, but after the third loaf in the trash can I remembered that flour can be bad. changed - everything began to work out again.

maybe buy a kilogram of flour from another manufacturer ... but what if it helps.

cinnamonik, it seems to me that the collapsed "roof" from stopping. After all, we put the dough in a preheated oven, but here it is still suitable until the m / in temperature picks up. Maybe you need to bake the missing dough?

It seems, only, I overcooked it a little and did not regret the cognac (the color is darkish), but everyone really liked it. They said that the purchased ones are much tastier (for Almaty residents I will say that they were from Becker and from Nazik):

I also want to say thank you to the author for such a recipe, it is sooo simple and sooo tasty, now I will constantly bake, baked this year according to 4 different recipes, this one was the cheapest and easiest, but took 2nd place after the cake on cream, so I think next once, it is not necessary to bake a cake with 20% cream, let's see what happens, the cake itself is a little opal, I thought it would be hammered, but despite this it turned out to be soft, porous and juicy, just the same as I like, I advise put more raisins, 2 bags of vanilla sugar, and lemon zest, then you will not remain indifferent to this recipe either !!!)))))

And I was not very pleased with the recipe this year .. Last year, for some reason, it turned out more delicious))) The consistency is dense, and the top failed again. Generally. You can eat, but I won't bake it anymore.

I do not know what you mean by "more comfortable", but on Saturday I managed to experiment twice. The first one is almost according to the recipe, but the cake came out only 8-8.5 cm, and I read here that some had it under the lid and decided that the yeast let me down.
I quickly made a second batch of 1.5 servings, with live yeast. But she was reinsured and made a dough to be sure. Then I added more flour and left it to come up for about an hour.
It almost ran out of my bowl, it grew so actively.

As a result, those from multi and the first, according to the recipe, and the second - on dough and with a lot of flour, came out almost the same in taste and airiness. The second is slightly higher, but identical in taste and moisture.
But those that I cooked for testing in the airfryer are more humid (the absence of bottom heating affects), and immediately after baking they tasted like rolls. I even got upset. But in the morning they cooled down, matured and became incredibly tasty. And in the context, they are lighter.

In general, I liked the recipe.

There was a small flaw - the roof fell a little. But since the cake was the same without narrowing and widening in height, I decorated it upside down, it came out decently and beautifully. And how delicious! Everyone at home liked it.
M. b. someone has already analyzed their mistakes and modified the recipe: how to avoid roof subsidence?

There is one thing, but this recipe is closer to cake, but not to cake. I made another one according to my grandmother's recipe with fresh yeast, dough, with whipped yolks and whites. The effect turned out and I liked it more and the smell is like a real Easter cake. Thanks to all.
