Wow, it's so great to read when it worked out and liked it. Even the mood improves.

And the dough "bursts" very strongly when you roll it out, really. A very savory sound that gives a lot of pleasure. And I also experience great pleasure from working with the dough and from contemplation of those who eat the result of my labors. So we are brothers in mind!

stupid question. .. but without parchment you can. if with a brush and sprinkle? I have some strange baking paper, I baked on it, it stuck to the pies ... maybe I'm doing something wrong?

And another question, the dough is usually liquid. and you have it in the form of a kolobok ... that is, you make a sponge kolobok with your hands, put it in the HP. and from above do you report everything else? I have never kneaded dough in my Panasika ...
Scarecrow
You can do without parchment, just grease a baking sheet with vegetable oil and remove after baking with a spatula. Is there no silicone mat? On it, too, you can and hassle-free.

You are doing everything right. This paper is of poor quality. We'll have to buy another one (for example Paklan - brown or white). Everything bounces off quality paper - no matter what you do.

I mix products for dough in HP on the "pelmeni" mode. Then I pour the remaining ingredients right on top of the bun and set the "Basic, dough" mode. In Panasonic, the program will stand for a long time, it does not immediately mix. Here is a brew and will work.
SchuMakher
That's what happened !!!! Eat-e-e-e-e - !!!! Scarecrow thank you very much! I added candied ginger on my own, it turned out a little bit tart-ginger cheesecakes ... only sour cream was not enough for pouring

Cheesecakes with sour cream filling
Scarecrow
Have you peeled off the baking sheet well? Cut how? Didn't the filling creep?

I can imagine how much enthusiasm after the first preparation of the dough in HP. Without the hassle and application of hands ...
londar
Chuchelka, tomorrow I have planned to bake these cheesecakes, and if you start up the dough from your cabbage pies, it will work out fine, you yourself have not tried that?

And another question: And if you put this dough on live yeast, then how many of them do you need ???
Scarecrow
I haven't done this yet. I was sitting now comparing two tests - they are similar. But it seems to me that the cheesecake is a little more dry, so the sour cream from the filling does not soak it, but just makes it moderately tender. But the pie dough is very tender and fluffy. Sour cream won't soak it?

In general - nina ...
SchuMakher
Scarecrow

- they came off the baking sheet normally, I dusted it with flour, although I usually sprinkle it with semolina ...
- cut perfectly, given the sharpness of the knife
- the filling crawled out, but not much, it was worse when an Uzum hit the foot
- I used to make the dough in a food processor, it was suitable in a microwave oven ... of course there is more trouble, it is necessary to precipitate, to maintain heat ... in HP, of course, it is better.
Delight was after these deformed rolls in the oven, straightened and took a human form, when cut and laid out, I thought, and how will it become round?

The only questions are - what consistency should the filling be? I had like 20% sour cream .... and how much sour cream and what fat content should the sour cream be for impregnation?
Scarecrow
londar

About 20 grams of compressed yeast.

SchuMakher

Yes. the filling should be something like this. if it seems to you that it is liquid or it is difficult to work with it - a tablespoon of starch. Sour cream for filling requires 20% (that's it), about 400g.
SchuMakher
Scarecrow but I had 100 grams as a maximum, it was a shame to dilute with some water for liquid and quantity ...
nelya
Excuse me, but can I get some advice before it's too late? I have a x / n without alignment temp. As I understand it: I mixed warm milk + yeast + sugar, salt + 250g. flour. And then? just leave to stand for an hour? can mix something like that (sorry, I'm a dude in these matters) and then add everything else and turn on the "dough" for 1.25min?
Crochet
Nelechka
I also have HP without leveling, I do this, put the products for the dough into the bucket and mix them in any mode, for a few minutes, until everything is well mixed, I leave it in a warm place for 1 hour. Then I add all the ingredients remaining according to the recipe and turn on the "Yeast dough" mode (1 hour 25 minutes).
nelya
Well, I said, but it's not my fault, it turned out to be cottage cheese after adding sugar, like water, God, how I caught it on the table, it was everywhere, just not in a roll ... well, I still put something on a baking sheet and baked ... True, the cheesecake came out straight, they are getting cold ... and some sour cream is very thick, it poured the cheesecakes, and they are like under a mountain of snow, there is even nothing to photograph, but they pinched off the taste (though they are still very hot), but the eldest son said that he wouldn’t go to sleep until he tastes the cake from the cottage cheese he bought (whether this cottage cheese is wrong) but I won't tell my son this, I praise that he is an assistant. Thank you very much for the recipe, for the second time I will buy cottage cheese myself
Lilyok
My family here the other day again asked for such cheesecakes, they themselves even ran to the store and stocked up with all the ingredients. I had to do it. Now I make the dough a little more, so that I get more cheesecakes. Sweep away in a moment.
I have already filled my hand, it turns out wonderful. Thank you very much again.
SchuMakher
I read it carefully, I just thought that, talking about the filling, you just forgot to write about sour cream .... You forgot about sugar in the dough Well, that's it! Hold on to the cheesecakes! we will do it "as expected"! But, I want to note, and with sour cream in the filling, it turns out superbly !!! Thanks again for the recipe !!!
SchuMakher
Scarecrow well, that's another matter, all are smooth, nothing leaked out and did not creep deliciously
I have exactly 18 of them!
Mummy mama
I'm trying .. I really liked the recipe :-) Half fit into my oven, half into a multicooker for a sample!
Mummy mama
Wow! So I cut too thick .. I got 6 in a small baking sheet - the oven is small, and 6 more in MV .. Total 12! Already pulled out of the oven. blushed! And the smell !! flooded and left .. waiting!
But in MV, while they are white, they put Baking for the second time .. I feel I will bake it in the oven ..
SchuMakher
Mummy mama I think that in the cartoon they need to be turned over to the other side, so that they would blush better ...
Mummy mama
I've already tried it :-)) Thank you! They are really fried from the bottom, and white ones from above Are baked in the oven - waiting to be eaten :-) So, in principle, it turned out !!!
kolynusha
Scarecrow, I loved your cheesecakes so much, I often bake them now. It's good that I didn't try to stuff sour cream into the filling, otherwise love could not work out with them Thank you
SchuMakher
And I love them in any form .... by the way, in "sour cream" they are even more tender, due to the large amount of liquid filling

In principle, you can try adding sour cream to the filling, however, not 400g. Slightly less.

And my favorite is with Philadelphia. Then they remind me of cheesecake ...
SchuMakher
I think 200 grams and exactly 30%, it is thicker, there will be no liquid filling

I never paid attention to Philadelphia on sale ... you have to look ...
Mummy mama
I am reporting! Delicious (I really don't eat myself - I can't), but the children ate and my husband!

And niktone tried to pour the cheesecakes not with sour cream, but with cream ??

Take my fat plus sign as a recipe!
Already baked it twice. Once, of course, as per the author's recipe.
But the second one ... I don't know which one, but I also stuffed fresh apples into the cottage cheese, cut into cubes! I sprinkled them on the curd before folding the roll. The apples became baked and added juiciness and sourness to the cheesecakes.
And if you also try to pinch them, cheesecakes, from below, then they also take the shape of a flower. I was so afraid of the curd that it would leak out. In vain I was afraid, by the way.

Good day. I'm new here, although I've been using a bread maker for a long time. You describe these cheesecakes very tasty. In short, I put the dough in a bowl. Then I'll put it in the oven along with the rest of the ingredients. I have several questions:
1. What test mode should I put after transferring? Basic or pizza?
2. My stove is 250 or something Panasonic, in short the difference from 255 in the volume of the bucket: mine is slightly smaller. Since I had 600 grams of tworg, I kneaded 2 dough norms. Shift generally in the stove to knead further or handles? You get a lot of dough, will it fit into a bucket after kneading?
3. And of course, like many people, there was no sour cream at hand, BUT there was cream of 500 ml 35% fat. Will it ride?

Thanks in advance for the answers.

The vatrukhs came out lush and very tender, but I would add sugar to the sour cream
Cheesecakes with sour cream filling
Scarecrow
And they can be sprinkled with powdered sugar to correct the situation (if you want sweeter). But vatrukh are notable - you can right on the cover.
Zhuzha
Scarecrow, thanks
I sprinkled them with sugar, there was no powder, and I was too lazy to grind sugar because of a spoonful of powder
Siberian
So I put them in the right place!
And now the result of my today's "cheesecake" torment torment (drum roll .....):
Cheesecakes with sour cream filling
I got 26 cheesecakes.
It is so delicious that my husband, while eating the cheesecakes, could not utter a word! He hummed, shook his head and burst swallowed vatruhi one after another!
And then, falling off, he said: "Scarecrow - respect for the recipe!"
From myself I can add: these are not cheesecakes, but a continuous food ORGASM !!!
The fill, however, turned out to be thin, but the spouse dipped another vatrukha into it and sent it to the food tract ...
Siberian
Scarecrow, they just embarrassed ...
By the way, this spouse tried to dissuade me from pouring sour cream into the cheesecakes, but I was hard as flint, since the master Chuchelka said "NECESSARY", then so be it !!!
Suslya
So this is how I got stuffed cheesecakes. Here they are in a saucepan
Cheesecakes with sour cream filling
Here they are in sour cream under the lid.

The sour cream was so deliciously baked, I already took off one cheesecake, what a charm it turned out to be, just they didn't turn red with me.

The sour cream is absorbed. And you can't say that it is watered from above.

Only you to the employees before use (if possible, of course) warm up in the MK. A little bit. It will be great - once out of the oven.

Damn ........... I'm kind of slow-thinking !!! I re-read the recipe 5 times but still did not figure out the HP modes ((((
what, how and what to bet on ((((I will not get used to my HP

In your HP on the "dough" program, does the kneading start right away? then
Quote: Scarecrow

If you have a different oven and the dough is mixed as soon as you turn on the program, just mix the dough products and leave in the HP bucket for 1 hour. Then add the rest and turn on the "dough" mode.
that is, on any mode, 2-5 minutes of kneading (or just with a spoon in a cup) - this will be a dough. stand for an hour - add everything else and set the "dough" mode.
Curly Sue
Thank you, Linochka!
the dough has already stood for an hour, it has risen very well (only the recipe says that it should turn out to be a bun, but I got it like a cool dough for pancakes)
Now I watched the bun of the main dough, it turned out normal, like a pizza. what will happen in the end I will find out in 1.25 minutes
Curly Sue
Looks like a baker out of me ... put I put my "creation" in the oven ..... the dough was beautiful, soft, plump, breathable but sticky
there were no problems with the filling, but I look in the oven that the dough with the filling floated (((
in short, in 30 minutes I'll pull it out, take a picture, but there are no bright expectations (
I didn't understand what I did wrong
URAAAAAAAAAAAAAAAAAAAA I did it !!!!!!!!!!!!!!!!!!! I shouldn't have worried !!!!! a little awkward, but it worked !!!!!
I added some more cinnamon to the sour cream, oooo aroma

After such a call, I certainly could not help but bake cheesecakes. Neighbors dropped by our samovar today. While the samovar was boiling, a neighbor says: "We are only after supper, you don’t offer us anything for tea." You should have seen this well-fed neighbor in one hand with a cheesecake, and in the other with a bun, even my conservative husband collected the remains of sour cream from the bottom of the bowl. I'm really in it, Tusichka added a little sugar, thank you! Well, very tasty and beautiful!

Dear cheesecake experts!
What do you think about replacing sour cream with cream? And then something is standing in my cream and there is nowhere to stick it ...

Knock knock ... It's me, the pie maniac. I decided to change my hand and leaned into the cheesecakes. Attempt number two took place. So it means:
Cheesecakes with sour cream filling
It is yummy in the oven and spreads mind-blowing aromas.
Cheesecakes with sour cream filling
They are in anticipation of friendship with sour cream.
And after this very friendship, they were hidden in a very, very "safe place"
Work on bugs. The first time a glass poured out of milk, the dough was wonderful, tender, but could not withstand the load of the liquid filling. I folded the roll, but cut it without squeezing the filling - well, no matter how. So she poured out onto a baking sheet and "shoved" the filling into place. The second time there was 3/4 cup of milk. It rolled out (even kneaded by hands) perfectly, the ball's filling - vanilla cottage cheese "President" + 100g mascarpone + cranberries. Curled up and cut perfectly. The main thing here is to adapt and not press hard with the sawing movements.
The result is excellent. The family asked about the cream on top, they really liked it. But we don't give out our secrets. Satisfied muzzles "hid" them, spinning wonderful spirals.
Take THANKS again for science and recipe

Scarecrow
Good!

I usually pour a glass of milk. And I keep track of the filling. It should be the consistency of soft curd in the trays. Mascarpone flows very much after whipping. If anything, fix it with starch.

Tasty is not the right word! I doubted very much that, first, the filling would bake the dough, the second, sour cream .. wouldn't it be superfluous ...
The dough from the filling did not float, it was baked. And sour cream is in place ...
