Raisins are dried (in the sun or in the shade) grapes. For the preparation of raisins, special drying grape varieties are used, containing up to 25% sugars, with fleshy pulp, thin skin and a small amount of seeds. In the former USSR, raisins are mainly produced in Uzbekistan and Tajikistan. Raisins are tasty and nutritious product, they contain up to 87.5% sugar. It is used for the preparation of compotes, puddings, kvass, for baking confectionery and bakery products. The best variety of raisins is sabza.

This year I made "raisins" from 2 types of homemade grapes with seeds (light and dark). I don't know the names of the grapes.
I washed the berries, put them on trays. I had to lay paper on the pallets, because the grapes dry up and fall through the large cells of the pallets. The grapes were dried for 5-6 days (with breaks overnight) at a temperature of 60-65 gr. It turned out to be sweet, dark and light raisins with sourness. Delicious. From 8 pallets, 1 kg of "raisins" with a bone was obtained.

Admin, Tanya, made raisins according to your method. Very, very cool, but .... how little kapets Out of 3kg of raisins, the output is 390g. I bought it at 34 UAH per kilo (well, so that you understand, it's $ 1.5) Super tasty! So it will be TAKOOOOE NZ))))
If you had your own grapes, no questions asked, you must do it) And so cherries, cherries and other dried fruits and berries will replace raisins in baked goods by 100%

Tanyusha, to your health!
So, after all, any drying is a complete deception. The finished product at the exit, with a gulkin's nose

I have been drying for three days, but he, this grape, still has a desire to "score", but I’ll already dry it. And I know for sure that the first and last time. Well ooooooooo long
Pleases only one thing - it will not creak with store sand ...

Three days dry
you dry it whole, right?

It's not the first year I've been drying grapes, we have them from the market, I cut them off from the bunch without leaving * sticks *, you can buy inexpensive ready-made raisins with sticks

for faster drying:
for small grapes, such as raisinsevery I cut a grape
- or a thin sharp knife
- or nail scissors, they are also thin and sharp, a tight grape is well cut
- I lay evenly, very tightly, in one layer

it is easier with large grapes, it is larger
- I cut each grape in half, almost to the end, open it * with a book * and put it in the same evenly, tightly, in one layer

a lot depends on the grape variety, such as * isabella * very dense pulp, rather dried than dries up, light - less dense, and dried well and dry to hardness, dryers are different in power and temperature maximum (I always dry at maximum), but open or at least the cut grapes dries faster

the pleasure is expensive, especially if the grapes, albeit cheaper in season, are bought on the market

but also eaten as a delicacy, for grandchildren to chew, for children as a delicacy
and for baking, pilaf, etc. thermal cooking - I buy ready-made market

So I dried it, it's just that the very thick-skinned one got caught

look, I was indignant on this topic three days ago

I'll try to wither the black

Jeanne, embroidered your raisin?
I no longer communicate with pachyderms - they are not very chewy even when fresh, and the peel often flies through the body, and in dried form it is completely oak

if you just add some syrup, as Tanya-Admin does, then it will be delicious and softer
Zhannptica
Irina, he didn't dry out anyway. So live him in assorted jars with plums and eggplants

So, just yesterday I stumbled upon a jar of "something there" in the refrigerator, turned it over and realized that it was white grapes Sweet fruits "candied fruits (glace fruits)"
Even last year, I "syrup" a kilogram of grapes - and after all, the grapes stood first on the balcony all the cold weather, then they transferred it to the refrigerator - and it's worth it! Without preservation! Just in a regular jar under the lid, no sterilization!

This is what the "substitution of your own raw juice for sugar syrup" method of fruit preservation means.

For the 4th day I have been pouring plums with hot syrup. Everyone has no time to do them

Dry them whole?
Until dry, homemade grapes without disinfection treatment, so you need to dry them better so as not to rot.

For the first time I also dried grapes with whole berries, also 4 days, wait for abaldela.

Now I cut it into halves and put these halves tightly on the tray, in one row. The size of the grapes is different - and quite a trifle - boneless raisins, and rather large pink grapes. The halves dry in 1-1.5 days. I also dry until hard.

Any grape has a very dense skin - very! And if you dry it whole, the hot air will pass inside for a very long time, and the grape juice will evaporate for a long time.

Therefore, I do this: see the recipe and photo
Put the grapes in a flat bowl, and prick the berries with a fork, just lightly, just make a few punctures. I do it with an onion comb

and...

It is desirable to cut large grapes in half

Every owner of the dryer should try to make homemade raisins! I declare responsibly! Well, at least once in your life, try what a real raisin tastes like. True, then it will be difficult to live. Because the store will not get into your mouth .. I also write this with full responsibility!

At a decent discount, I managed to buy 5 kilos of seedless grapes. 4 kg of white raisins and 1 kg of black. Well, they ate some. I did it a little differently than Tatyana, but I will not make a separate recipe. Let it lie here.

So. We put a pot of water on the stove. You need three liters of water. The pan is better wide with a low rim.Let it boil, dissolve in water 2-3 tsp. soda.
While the water is boiling, we wash the grapes, do not pluck from the branches.
We take a regular colander or sieve. We throw a couple of branches of grapes into it and put them in a boiling soda solution. Literally about 30 seconds. You can immediately see how the remnants of plaque from the grapes come off.
After blanching the grapes are immersed in cold water. We are waiting for the water and soda to boil again, and we lower the next batch of grapes. We do this with all the grapes. Do not leave blanched grapes in water. Cooled - immediately onto a sieve so that excess water drains.

We remove the cooled berries from the branches, clean them from sticks. We put dryers on pallets. I have Isidri 500, I put the nets. I was afraid that during drying the berries might fall down. The first tier was an empty pallet with a sheet for marshmallow. Just in case, suddenly the juice drips or a crazy berry arrives.
We dry first on a high temperature, 2-3 hours, according to the situation. Then you can switch to middle. Drying will take about 2 days. Depends on air humidity. We are now damp, so it dried for 48 hours. After the first day, I had to turn off the device and turn it on after 4 hours. Therefore, the drying took me more than two days. But that's okay.
At the exit we have dry raisins. At the same time, the middle is soft (not raw, but simply soft). The berries have dried up and turned into delicious raisins.

You don't need to pin or cut anything. If there are a lot of berries, then this is a lot of work.

From 2.4 kg of peeled light grapes, about 600 gr. excellent raisins.
Out of 900 grams of blue - about 300. It shrunk better.

It's incredibly delicious. I'll take a photo tomorrow, in the light of day.

For several years, since I bought the dryer - (the simplest) I make raisins by a method similar to the method Mams, but even easier and without soda - I don't want to eat it in the future.

I take grapes only kish-mish.
Once I tried to dry a large juicy one with bones, cutting it in half and made sure that the game is not worth the candle, this is wasted money and time. It is necessary to take a variety of berries with dense pulp and preferably without seeds, it is very unpleasant to get your teeth on them later

Berries at once I rip from the branches into a deep-frying net (colander).

So that the berries dry quickly it is necessary to break the integrity of the skin... To get cracks on it
I put two 3-liter pots on the fire, bring to a boil, lower the grid with berries in the first for 1 minute, then in the second for 30 - 60 seconds. There is a lot of dirt, therefore in my two waters
I shake off the water and pour the berries onto a tray with a net. Dry berries can be easily removed from the net, or rather, the net from berries.

Everything is done quickly with minimal effort.
Dry day at maximum temperature. If the berries are large, then a little longer. I swap the pallets once.
We eat raisins processed like this as candy without further washing, only for baking, if desired, you can soak in cognac.
I store it in plastic bags, in glass, and in paper bags (in which bread is sold) with equal success.

I'll write about my last method for drying grapes. Not entirely successful in its original design. In the future, I think to improve the process.

1. I usually dry 10 kg of grapes at a time, just as boxes with plums, grapes, bananas, peaches are brought from the wholesale, and I load all 5 dryers.
2. I described my method of drying grapes by cutting them into halves a little higher. A wonderful way, just cut it for a long time. But on the other hand, it dries evenly and is easily removed from the trays, the juice does not stand out, the halves lie on the * back *, on the peel.
3. But now I did it differently, because I cut my finger very much, and the grapes will not wait long, not only removed from the bush, I don’t want to throw out the rotten berries from each brush later.
4. Picked berries from the brushes.
And she began to crush them to remove at least some juice.
I put some berries, in one layer, in a colander with a flat bottom and crush it with a crush. The berries burst, the juice flows out. I put the crushed berries on the net (for ironing) in the trays of the Rotor

Dried grapes - raisins

, the rest of the dryers were already occupied for plums, bananas and peaches.
Cheap, more or less, the price lasts for a week, you need to have time to buy everything and shove it into stock
5. The Rotor loaded all 5 trays, the crushed grapes fit tightly, dried without interruption for a day and a half for 70 *. Rearranged trays 3 times.
6. I also pressed 2 liters of juice and froze.
7. Plus = quickly laid down, sort of opened and a little and squeezed berries.
8. Cons = drying time did not decrease.
And the biggest minus = the berries are wet from juice, viscous and sweet juice, so the berries are boiled both to the net and to the tray. Do not tear off.
They lay in trays for a day after turning off the dryer, a little softened.
Tore off the nets from the trays. To my surprise - the nets did not break, they turned out to be the strongest nets for ironing
Tore off the berries from the net - sticky, but peeled off. Uff ...
3.5 l * got drunk *.
The grapes were green, with small seeds, the taste and smell of raisins were delicate with sourness, the color was light greenish-yellowish.
9. The nets are very juicy. And not all of the grape peels were peeled off. Soaked all 5 nets in warm water, then rinsed them in this water, rinsed again with different water. Total 4 liters of very grape water. It is clear that I did not pour it out. I will use it for bread dough. I put it in the refrigerator, even if it ferments, then the dough will not interfere.
10. Conclusion: I will try the same next year, but not on nets, but like a marshmallow - on teflon rugs in the TRAVOLA wardrobe and in the M dry winds - as you put it, let it dry, you don't need to rearrange the trays. And it will be good to remove from Teflon rugs.
And squeezed juice from grapes is not superfluous.

Like this.

and without soda - I don't want to eat it in the future

Soda does not get into food ... Besides, there is so little of it that you shouldn't even pay attention. We blanch the grapes, break the permeability of the skins so that they dry better. After blanching, the grapes are poured over with cold water, which finally rinses off any remnants of the soda solution. But the grapes become clean (and who knows with what hands they were picked?) And safe. After all, when washing the grapes in the branches, you cannot wash each berry.

When I started using the dryer, I read a lot about drying methods and tried blanching with baking soda. To be honest, I did not see the difference when using just boiling water. And also I do not see the point in cold water, cracks and so it turns out more than enough, only the dryer does not need to waste time heating chilled berries, they fall on the tray already warm.
Here we will learn different ways and everyone will choose the most convenient one for themselves.

Here is the same grapes dried in the 17th year, lived for 2 years in a tin can in a vegetable box of the refrigerator. I dried a few more portions. Therefore, there were a lot of raisins. I threw the last grain into the compote yesterday. Nothing happened to him. Not withered, not a staff, not covered with mold.

So dried grapes should be this year too!
