No, I don't pick some kind of cottage cheese on purpose. I take a regular pack and don't bother. Its humidity can be more or less, but these fluctuations for the final product have never been critical. Obviously, pasty cottage cheese from trays and 0 fat content in polyethylene sausages is not suitable. This kind of curd has a very high moisture content compared to a regular pack. The moisture content of the flour could have been strongly affected. Did you use new flour? The moisture content of flour varies even with storage conditions. Therefore, if the next time you see that the dough is more wet / fluid / liquid than always, feel free to add a little flour.
