Biscotti without butter and sugar, with whole grain flour and oatmeal

Ingredients

oatmeal (long boiled) 120 grams
whole wheat flour 100g
egg s-1 1 piece
peeled ripe banana 100g
pitted dates 80 gram
raisins, dried cherries and cranberries 50 grams
nuts (preferably hazelnuts or almonds) 50 grams
baking powder 1.5 teaspoons
salt pinch
any sugar substitute optional

Cooking method

  • Pour the dates and raisins separately with boiling water, leave until they swell. Then drain the water, it is better to put it on a sieve.
  • Peel and chop the nuts. Small is not necessary at all.
  • Cut the banana into slices, add dates and an egg. Make a smooth puree with a blender.
  • Add nuts and raisins.
  • Grind the flakes, you don't need to grind them into flour.
  • Mix ground flakes and flour, salt, if necessary, any sakhzam, baking powder.
  • Pour into the prepared mixture, stir first with a spoon, then with your hand.
  • Leave for 10 minutes to swell.
  • Place a silicone mat or baking paper on a baking sheet.
  • Divide the finished dough into two parts.
  • Make bars with wet hands.
  • Place on a baking sheet.
  • Prick with a match or toothpick in several places.
  • Put in an oven preheated to 200 degrees for 20-30 minutes. Do not overdry!
  • Take out, gently transfer to a board and cool slightly.
  • Then flatten the bars with wet hands and cut them obliquely with a sharp knife, into pieces 1-1.5 cm thick.
  • Transfer to a baking sheet and dry on each side for 8-10 minutes.
  • Then you can turn off the oven and leave for another 20 minutes to remove residual moisture.
  • Transfer the finished croutons to the board and cool completely.
  • Store in a closed container, wrapped in paper or napkin.

Note

As it happened to me more than once, one thing was thought, but it turned out completely different
The result pleased
The croutons are crumbly and crunchy.
Advice -
if you put raisins, then sakhzam is not needed at all, there is more sweets than enough;
if - cranberries or cherries, then you can add a little.

Croutons are very convenient to take with you on the road for a snack
