Fresh Corn Fritters by Nero Wolfe

Ingredients

Cobs of milk corn 6 pieces (grains - about 400 gr)
Milk 50-100 ml.
Egg whites 2 pcs.
Flour psh. 2-3 st. l.
Salt 1 tsp
Vegetable oil for frying

Cooking method

  • One of my cookbooks is “At the Table with Nero Wolfe or Secrets of the Kitchen of a Great Detective”, I. Lazerson - S. Sinelnikov - T. Solomonik. I have always loved detective stories (mysteries-riddles for stimulating gray cells ...) and an unusual, ingenious and funny couple - Nero Wolfe and Archie Goodwin - long ago became one of the favorite characters of this easy, but cute genre.
  • In addition, I was lucky - when in the 90s I began to collect a series of books about them, my choice of publishing house (and there were at least three of them) turned out to be successful (I realized this many years later, reading the book by Lazerson-Sinelnikov “At the Table …. ”) - the translation more or less retained the atmosphere of Wolfe's culinary gourmet ... and allowed to feel at least an echo of Haute Cuisine - Haute cuisine ...
  • Judge for yourself - here is the most striking (for me) gastronomic moment - the dispute between the great detective and his personal chef Fritz (from the novel The Doorbell:
  • “… Wulf and Fritz stood at the table and argued about how many juniper berries should be put in the marinade for venison chops.
  • Wolf: Very good ... I said three berries, but do as you like. If you put five, I won't even try - I will understand everything by the smell. Four - wherever it went ... "
  • “My God, I certainly would not have felt the difference ...” - I thought, and since then, experiments with spices have turned into a sacred rite for me ...
  • True, the recipe for corn fritters from Wolfe's Cookbook is a rare exception: no spices - the natural taste is so harmonious!
  • So, before the corn season is over, try these surprisingly tender and tasty - "golden" - fritters, which differ from ordinary pancakes in that they do not use corn flour, but grains of milky corn - they are mixed with batter, scooped up and fried in a pan in a large amount of vegetable oil ...
  • So:

  • Remove the shell from the cobs and make several deep cuts on them with a knife so that the milky liquid can drain into the bowl (This makes sense only if the corn is in the initial stage of milk ripeness, if it is the same as in my photo, then this item can be omitted, as little milk will flow out ...).

  • Then, in the same bowl, cut off the grains from the cobs, add salt, milk (its amount depends on how much juice has flowed out of the cobs), sifted flour and stir well.
  • For my taste, it is better to make the batter thicker - not only with flour, but also with half of the grains crushed in a blender: that is, both flour and milk - how much is in the recipe, but also additionally grind half of the grains. A thicker dough will require less oil - and this is always welcome, right?
  • Fresh Corn Fritters by Nero Wolfe
  • Put in the refrigerator for at least 15 minutes, and before removing the mass from the cold, beat the egg whites into a strong foam and gently add to the chilled dough.
  • Scoop up the dough with a tablespoon and dip it in hot oil in a frying pan (in the recipe there is a layer of butter about 1 cm, at first I poured half as much as for ordinary pancakes) and fry until golden brown on both sides.

Note

For many years I have been using a frying pan only for lightly sautéing vegetables in stew soups, and for fritters I like to use a grill waffle iron (I have three interchangeable molds), you can get by with even less oil, and fritters turn out to be more voluminous - such as on first photo.

It is better to serve hot - in the heat, but I also like the cooled ones, if the temperature outside the window is not subzero ... And in winter, by the way, such pancakes can be made from frozen corn - it will also turn out very tender and tasty! Although, as with juniper berries - "three-or-five", "fresh-frozen" - there is still a slight difference in taste ...
