Sardinian eggs

Ingredients

boiled eggs 6 items
olive oil 3 tablespoons
wine vinegar 4 teaspoons
salt taste
garlic 1-2 teeth
fresh bread crumbs 2-3 tablespoons
fresh parsley 1-2 tablespoons

Cooking method

  • Put raw eggs in a saucepan with water, bring to a boil and cook over medium heat for 7 minutes. Take out and put in cold water until it cools completely. Then peel and cut in half lengthwise.
  • Pour oil into a frying pan, add vinegar, salt and put on medium heat.
  • Put the eggs in the pan, yolk down. Fry until the vinegar evaporates, gently turning it over several times with a spatula, being careful not to damage the yolk.
  • Place the fried eggs on a plate and cover with a bowl or deep plate to keep warm.
  • Put chopped garlic and parsley in the remaining oil, fry a little. Then pour the bread crumbs there and stirring them constantly, fry until golden brown.
  • Place the crumbs on top of the eggs and serve immediately.
