Ingredients

OPARA
wheat flour 140g
water 140g
fresh yeast 1g
DOUGH
dough 281g
water 300g
wheat flour 445g
rye flour 150g
fresh yeast 7g
salt 14g

Cooking method

  • OPARA
  • Dissolve yeast in water, add flour, stir until smooth. Cover with foil and leave to ripen at room temperature for 12 hours. The dough is ready when completely covered in fine bubbles.
  • DOUGH
  • Knead the dough, flour and water for 1-2 minutes. Until a homogeneous bun is formed. Continue kneading for 20 minutes.
  • Then Add finely crushed yeast. Knead for another 2 minutes.
  • Add salt last. And continue kneading for another 4 to 6 minutes.
  • Leave the dough to rest for 60 minutes.
  • Then put the dough on the table, sprinkled with flour. Press down lightly with your hand to make the dough look like a cake.
  • Fold the dough on both sides

  • Leave to proof for 80 minutes. The dough should double in size.

  • Preheat the oven to 240C. After planting, reduce the temperature to 210C. Bake with steam for 50 minutes.
  • After baking, remove the bread from the mold and let it cool.
