After rubbing, approximately 1.5 kg of puree is obtained. I put about 100 grams of sugar on 500 grams of puree, maybe even less. For whipping, I divide into two parts, in each white of a small egg. Beat mashed potatoes for 5-6 minutes at speed 5, then add protein and 5-6 minutes with protein. A minute before the end of whipping, add the speed to the maximum. Set aside 250 g of the beaten mass to coat the finished cakes. Remaining quantity for 3 sheets in the dryer. All 5 dries poorly and for a long time, therefore three. I cover the sheets with paper, make a hole in the middle. I cut the plastic cup into 3 rings. After drying, I just threw everything away, without bothering, or if I do it in a row, I use these rings more than once, nothing is done by the dryer. I spread about 470 grams of whipped mass on a sheet. A spreading frame would help a lot, but for now I level it with a rectangular spatula for dough. I dry for about 12 hours (usually in the evening and night) at a temperature of 70 degrees in a dryer, periodically (after two hours) rearranging the sheets in places. Of course, the bottom dries the fastest. In the morning I turn it off and go to work. In the evening, get it out, free it from paper. I cut each circle into 4 parts, coat it and put it in the oven with the door ajar for 2 hours. I try to keep the temperature up to 70-80 degrees.
