Because, I repeat once again, this is never about cooking, this is a physical law!
P.S. Alternatively, you can reduce the amount of filling. The vapor will be less and it will not create enough pressure to break the dough. And if, at the same time, the thickness of the dough is increased ... 100% result! This, of course, if someone loves a lot of dough, little meat, albeit juicy!
