waiting for how he will behave in a day
I tried it. They again reduced their elasticity, but less than the first time. Due to the lack of sugar, of course. You gotta pop everything on the first day
Anna1957
But it is interesting: if we add cocoa to a part of our chickpea flock and dip the deposited marshmallows into it, will it turn out like "in chocolate"? Only, apparently, it will have to be warmed up a little so that it is liquid. Or just make a new batch with less agar

And how much longer peas in the broth cools down?
For the first time I stood it cooled down on the stove. Lost well. The second time I stood in the refrigerator for a couple of days, it got off worse, and the broth was stronger. Everything is not clear.

Sugar, of course, holds. You have to do a little to eat and not leave. Although I want more at once, so that there are several days.

And then Ostap suffered

Angel, on the third day the broth did not whip up, poured it out. Probably, it is better to do it right away after steeping.
ang-kay
Natasha, probably.
Anna1957
Angela, what do you think: our portion of 125 g of broth corresponds to how many eggs or proteins?
ang-kay
Vegetarian marshmallow (lean)

Here's a table if I don't get scolded.
Anna1957
That is, you think that the weight of the egg is proportional to the weight of the broth, right? I ask because I want to stir up a biscuit. But it is already necessary to move to Omelka. By the way, I want to show a photo of the whipped broth
Vegetarian marshmallow (lean)
ang-kay
Whipped perfectly.
Made with applesauce. If it’s okay until tomorrow, I’ll share it.
Still, the broth whips better when it is fresh.
About eggs. I don't think so yet. I didn't think about it.

Hurrah! by common efforts, we found out the reason for the good whipping of the broth !!!

Well I do not know. Today I have 3 or 4 days, I already forgot when I was cooking. And it was whipped perfectly, baked a biscuit - look at the photos at Mistletoe in "Vegetarian biscuit".

Well, again, the whole theory collapsed
Wildebeest
Natalika_1Natasha, why did it collapse? It is generally always best to cook with fresh ingredients. Anna just forgot, when she remembered, she decided to try and everything worked out for her. Conclusion: 3-4 days in the refrigerator did not spoil the original product.

The broth, by the way, was perfectly whipped without sugar in 6 minutes.
Stunned how fast! What kind of mixer do you have, modern?
I think maybe it takes a long time to whip because of a low-power mixer ...
Today I brewed a new broth, I'll try to whip it fresh in the evening.
ang-kay
Elena, I whipped with both powerful and old Tefalev. Not much depends on it.
Elena_Kamch
AngelaI mean, the new one is much better?
It's time for me to make a present for myself or something ...
ang-kay
Corrected. The letter is superfluous. It seemed to me that the less liquid, the worse the whipping. Accordingly, the smaller the bowl, when there is little broth, the faster the process. Did you understand it?
Elena_Kamch
In general, the container with the broth should be narrow enough so that it all goes to the mixer?
ang-kay
Yeah. So it seemed to me.It's like with mayonnaise.
Elena_Kamch
Now I will try to whip up a new broth

The photo shows MUM5. The liquid was at the very bottom, I was afraid that the corollas would not snag. It seems to me that the main condition is the richness of the chickpea broth. Well, the mixer is good, of course.
ang-kay
Anna, my broth is already yellow with a little pulp, if I may say so. And the result is not always good. Perhaps it also depends on the variety of chickpea. He, too, according to his varieties and degree of old age. We guess, we guess ...
The marshmallow is great. Free myself, I will capture.

Maybe. From the protein content in it. Today I was whipping up the same old one.

So this time I had one. Thickened almost to jelly. Fresh! The container was narrow, the rims hooked well. Sugar added more than 1: 1.
And again there were no hard peaks!
The chickpea was different ... In general, until I understood the reason. In addition to the mixer, there is nothing more to think about

The recipe is interesting, although I don't like chickpeas, but for the sake of interest I had to buy)))). It's good that my husband is a vegetarian, gladly accepted the fact that I made him chickpea cutlets !!!! And I, having obtained a magic broth, started witchcraft. The broth did not want to climb, and after 30 minutes I decided that this was due to the fact that the corollas did not reach it well, so I added more broth "by eye", well, and sugar for the volume (there was not). The process started immediately. I ran to cook the syrup, the children, my husband mixed under my feet ... Then I also added a little something, I decided not to put citric acid, since my agar behaves badly with it. In short .... something turned out, soft, keeps its shape, but you need to be very careful, otherwise it breaks. The taste - my husband liked it. I (mymra), I catch chickpeas, maybe as self-hypnosis. I'll see what happens tomorrow. Probably cool to use as a cake coating!
ang-kay
Leila, all is well that turns out. The marshmallow is soft, most likely, that there is not enough agar. as I understood, then everything is "by eye" practically. The recipe contains lemon juice. Behaves with chickpeas great. There is no chickpea taste at all, as for me. And nobody mentioned who did it. But everyone has their own. I can hear agar in any quantity. Try it, if you still do it, do everything according to the recipe and see the difference. And the cake is already there

Thank you for sharing your impressions.

ang-kay, most likely so, I just feel agar too (although everyone speaks without taste), I was afraid to overdo it.
There is no pastry bag, so I put it with a spoon ...

Vegetarian marshmallow (lean)

Leila, They keep their shape, but it is clear that they are sissies. Agar will have to be added, even better than 5 grams, and not 4, as in my recipe. A portion in the saucepan remains when infused. Sprinkle with powder. It will take a little moisture.
Anna1957
I, too, from the whole variety of chickpea dishes, I feel a pea smell and taste only in chickpea milk. You can try to muffle with vanilla.
Dynusya
Angela, please tell me if it is possible to use a decoction that has stood on the table for a day at t19 *
Tastes normal. In the pre-New Year bustle, I forgot to Remove the refrigerator ..
Happy New Year!

Diana, can. Thank you and happy holidays.

ang-kay, thanks for the answer I will definitely do it.

Angela, I did! Delicious and tender marshmallow. Thanks for the great recipes
Whipped km orson. I didn't really hope for the result, after all, not a whisk. The broth whipped well, and when I added hot syrup, the mass became liquid again. I twisted it for ten minutes, and it did not thicken. Poured into a container, the mass remained liquid. After a while, the top began to thicken. There was no time to wait. Therefore, I spread such puddles to dry. Maybe it was necessary to wait a little, then I would have laid out tall beautiful marshmallows. How was it after the syrup was injected? If everything is frozen, everything is fine, so no more agar is needed. Maybe because of the lack of a corolla it happened.
ang-kay
Diana, the mass was just hot. It was necessary to cool down to 50 degrees. In this I was fine, I worked right away, but did it in half with applesauce, so I waited there too.
Thanks for sharing.
