A very interesting recipe, but I would like to clarify how much chickpea and water should be taken to get a decoction of 125 grams?
Thank you!

There are too many recipes there. So I printed it out on paper and put it in a culinary notebook on my computer. Now you definitely won't have to search.

Angela, I never cease to admire you !!! Super!
Natusichka
Angela, please tell me how you cooked chickpeas? How much water and how much chickpea? How much time to cook?
To what temperature did you chill before whipping?
Can I whisk in Kenwood?
Soak agar in cold or what kind of water?
After pouring in hot syrup, how much more time should you beat? Or to what state?
ang-kay
Natalia, Elena, Svetlana, thanks for stopping by. Help yourself! Thanks for the kind words.

how did you cook the chickpeas? How much water and how much chickpea? How much time to cook?
Natusichka, took 200 grams of chickpeas. Filled with water. Water is about 1 in 2.5. Stood hours 5. Leaked. Poured water on the "eye" again, about 1 to 2.5-3. Cooked on low heat under the lid for 1.5 or 2 hours. I did not watch. Got soft on and off.

It stood at night at room temperature.

Any mixer.

Soak agar in cold or what kind of water?
In the cold from the tap. If it was warm or boiling water, I would write.

Now I'll insert a photo, but it's hard to see. Pour in, beat. The syrup ran out, and that's it.

ulaaa, it's not important. You can cook more, go for soup or something else. I cooked 200 grams.

I understand that after the chickpeas have been cooked, the water should be drained either in this water and crushed?
If you drain, then the proportions are understandable and not so important, and if crushed in water, then it is possible that the ratio of chickpeas and water plays a role
ang-kay
You don't need to crush anything. You just need to leave the chickpeas in the water to cool. Then drain the broth.

mmmmmdaaaa, for you beautiful girls you can't keep up with leaving admiring comments, and even when there is, not to mention the preparation of sweets!
Gorgeous, no words!

ang-kay, Angela, I absolutely love it! Indescribable beauty! How does it taste? Did you like it?
Don't you need them in the refrigerator?

Do you take a photo with a tripod? Very impressive!

Ludmila, Elenathanks girls. I am very glad that my experiment interested me.

Elena, liked the marshmallow, very gentle. Besides the taste of agar (and I always feel it) there is nothing extraneous. If I didn't know what I made of, I would never have guessed. Marshmallow and that's it. Don't go to the refrigerator. Agar at 40 already solidifies.

Nope. I hold in my hands, rest my elbows or hands. That's another procedure. Special thanks for the praise of the pictures. Today it seemed to me that they were unimportant. And now I see that it’s okay. It's dark now in the afternoon, as in the evening. I couldn't take a picture of bread yesterday.

As I get agar, I will definitely make marshmallows. I look at your photos and my drool is flowing ...
ang-kay
Do It. You should have agar there.
Elena_Kamch
Nah, Angel ... You won't find agars here in the afternoon with fire
I've been trying to have fun with him for several years now ... I order only through the Internet. And then, as if on evil, it ended. You can't order quickly, but there are no stores
ang-kay
How! And I think that Kamchatka, algae, agar.
Elena_Kamch
Ehe-heh .... forgotten land ... Algae, well, Korean ones have appeared And there is no production of its own. Although seaweed is lying along the coast ...
Well, the Chinese do not forget To get to all corners of the world

That's for sure.

Sveta, we now sell agar in Metro. Well, in Indian spices.
But has no one tried it with stevioside yet? I think it will work out great - this is not a meringue, where sugar fixes the structure. Agar, like chickpeas, is simply a unique product for losing weight.

Let stand for several hours.
This function is not feasible for us.
I did make a marshmallow. Agar is not dead. My marshmallows stood for an hour and began to disappear. We'll have to do something else by night so that these marshmallows can rest until morning.
Only during their preparation, I got so emotional that I forgot to add vanilla and lemon juice.
Anyone who does not make such a marshmallow will lose a lot. They are so delicate - that's something !!!!
Angela !!!!! Thank you very much!!!!

ang-kay, by nightfall I will make a double rate, sprinkle with powdered sugar, and these will fly away without sprinkling.

Two days later, one thing remained. I just lay in a vase on the table. The crust is dry as expected. The middle is tender and soft.

ang-kay, Angela, I made a test marshmallow with my granddaughter. She will be brought there, then here. So I forgot about vanilla and lemon juice. In the evening, I isolate myself in the kitchen and will not forget about these additives.
Natalika_1
Angela, I looked at your photos - it's interesting, but I have it shiny and kind of wet - is it because it's not dry? although the evening is already, about 5 hours have passed since the preparation (it began to disappear after 30 minutes))). But if I sprinkle it with powder even now, it will be absorbed. - What did you do wrong?
ang-kay
Nataliya, the humidity may be higher or colder at home. Can not say. The next day my bottom was also wet. I collected it in pairs and sprinkled it with powder. Try sprinkling with powder. Or maybe the agar is weaker. He's also different.

Anna, handsome. How does it taste? With stevioside or prescription?
With stevioside. I tried to measure the amount of sugar by weighing the sugar in teaspoons (a bag of stevioside is considered = a teaspoon of sugar), but it turned out a lot. I decided to try along the way. As a result, she put in 10 sachets, which is significantly less than the original recipe. I added more lemon juice, ~ from half a lemon. Agara - 5g. Liquid vanilla extract - 1 tsp, obviously can be increased.
Well, the taste with stevioside is certainly not the same as with sugar. And in general, although it retains its shape, it is still not a marshmallow in density, but rather a soufflé. Although quite dense, several in the photo lie on its side. But for those who are losing weight - clearly from the category of previously unavailable sweets. There were vague ideas to add a banana, applesauce - but the amount of agar, apparently, will need to be increased.
Another consideration: stevioside was poured directly into a bowl of whipping chickpea broth - it is probably better to dilute it in lemon juice. Agar can be cooked in the microwave, but it foams a lot and tries to escape, so I cook in a transparent tall beer mug.
It must be boiled for at least 2 minutes to reveal its gelling properties.
ang-kay
Clear. So there is still work to do.
Anna1957
This is probably a great option for those who make money by making cakes to order. This soufflé marshmallow can be used by diabetics and weight-loss diets. It can be used as an interlayer and for decoration.
