Angela, sorry for being late ... With another medal to you! And happy New Year!

Tina, Thank you so much! And you with the past and coming holidays. All the best!

ang-kaythanks for the recipe
I do it a second time.
Maybe I don't finish the broth, or the chickpeas are like that - the mass does not turn out to be peaks, it is watery,
but the cooled chickpea broth was also liquid, without jellied meat.
A little "pea aftertaste" remains,
perhaps because I forgot to add the lemon.

result:
Vegetarian marshmallow (lean)

Olya, seemingly wonderful. Try whisking longer. You can really beat for 30 minutes, or even 35. It doesn't give me peas at all. But everyone has their own perception. Thank you for such a wonderful report. I'm glad the recipe has entered the family.

The same marshmallows from experiment # 2, but collected in a package:

Vegetarian marshmallow (lean)
Sample No. 3:
From the first batch of chickpeas (the marshmallow that is in the message above) I collected the skins and threw them to cook for the company to a new batch.
jellied meat again did not work, but everything was whipped perfectly, better than last time, although it was whipped about the same amount in time.

Agara put a little more (by chance, the scales didn't work right away, and then it was too late).
I tinted it with grape juice (rather, even with homemade grape syrup, the bottle survived from the summer).
They kept their shape, practically did not blur.
It turned out VERY tasty, half of the chickpea taste is absent - lemon shades well

Olya, that is great. Well done.

And I accidentally had 3 marshmallows uneaten, though those that I did with berry puree (but I think it doesn't matter.) They lay, forgotten, probably for a week. When I discovered and tasted them, they were completely dry and crunched like bezeshki. Thus, the issue with meringue on stevioside was unexpectedly resolved (remember that you cannot bake them without sugar). Even on the Sybarite site, no one succeeded

ang-kay, but I'm so glad :-)

Anna1957Anna, when I made marshmallows for the very first time, I did something completely wrong (didn’t finish it off) - it spread into cakes, and they also dried up in the meringue, disappeared quickly.
I especially liked the fact that inside it turned out to be an even porous structure,
I still do not succeed in the usual meringue, there are emptiness inside, and the last time it turned out to be some kind of prickly one :-))
Now some of the pink marshmallows are drying, but due to constant sampling, they probably will not have time to dry completely.

Thank you! Using this recipe, I got just wonderful bird milk sweets! I poured it into a mold, cut it, doused it with chocolate, it's a bomb! All the same, mass is more like a souffleле

TatianaKo, to health.
Sikorka
Please tell me how you can replace sugar or mix it in half with what?
ang-kay
Sikorka, I haven't tried anything. Read the topic, the girls were replaced with stevioside. But I had to eat quickly. You can try with fructose. Everything empirically.

Today I again make such a marshmallow, or rather, a coating on a cake. Regarding the whipping of the broth, an understandable circumstance became clear: if you cook 2 cups of dry chickpeas, and not 1, and pour water on a finger above, the broth turns out to be more concentrated and whips better

Anna, thanks) Something has gone missing from us. I haven't made such a marshmallow for a long time)

Basically, aquafaba should be made from any legumes.
ang-kay
Yes, I read that it turns out green peas from the marinade. But my hands somehow do not reach to try)
Pchela maja
Eh, there would still be a recipe for marshmallows on eggs, but without sugar, which we do not eat.
ang-kay
Pchela maja, go to YouTube. I definitely saw it with a sugar substitute

there was a recipe for marshmallow on eggs,
I have it on stevioside. But it is fragile, half breaks. Bought a mixture of stevioside with erythritol but haven't tried it yet.
Oops, I have a meringue, not a marshmallow, it turns out)) Marshmallow never did.
