Ingredients

Cake
sugar 300 grams
wheat flour / grade 400 gram
baking powder 2 tsp
vegetable oil 180 grams
carbonated water 400 gram
salt pinch
cocoa regular 5 tablespoons
Marshmallow interlayer
chickpea decoction 125 gram
sugar 125 gram
marshmallow syrup
agar 5 grams
water 90 grams
sugar 170 gram
Additionally
lemon juice 1 tbsp. the spoon
vanilla taste
Chickpea layer
boiled chickpeas 450 grams
honey 2-3 st. spoons
dates with stone 120 grams
any nuts (I have walnuts) 100g
lemon juice 3 tbsp. spoons
salt pinch
lemon zest 1 tsp
vanilla optional taste
Additionally
any syrup for soaking the cake as needed
Liquid vegetable cream 450-500 grams

Cooking method

  • We continue chickpea experiments. Today is an absolutely lean cake. It was possible and vegetarian biscuit use from Omela, but I decided to use a recipe I had tested over the years.
  • Cake
  • Sift flour, mix with cocoa, sugar, salt and baking powder.
  • Combine oil with water.
  • Mix with flour.
  • The dough is like sour cream.
  • Cover the mold with paper, and grease the sides with vegetable-based margarine.
  • We bake in an oven preheated to 180 degrees for about 45-50 minutes. We focus on a dry splinter.
  • Marshmallow layer.
  • Soak the chickpeas for several hours.
  • Drain water, pour clean.
  • Cook until tender. Leave to cool in liquid.
  • Strain the broth and begin to beat.
  • I can't beat quickly. Beat for 20 minutes.
  • When the mass thickens, gradually add sugar, vanilla and finally lemon juice.
  • When the mass beats up to solid peaks, in a thin stream
  • pour in the syrup. We don't stop whipping.
  • Syrup
  • Soak agar in water, stir and leave for 30 minutes.
  • We begin to cook when the whipped broth has thickened.
  • Put on fire, bring to a boil with constant stirring.
  • Add sugar, stir and cook until strands are formed. About 10 minutes. Stir constantly.
  • Pour in hot immediately.
  • Beat until the agar is completely distributed for another couple of minutes.
  • Chickpea layer
  • Fry the nuts and remove the crust if possible. Chop coarsely.
  • Pour boiling water over the dates for 5 minutes. Take out the bones.
  • Grate the zest.
  • Boiled chickpeas, honey, lemon juice, dates break until smooth. I did it with an immersion blender.
  • Add zest, vanilla, nuts, salt. Stir.
  • Assembly
  • Cut the cake into two parts.
  • Put in a ring or split form.
  • Soak in any syrup. I have a pear jam.
  • Put a chickpea layer on top and tamp with a spoon.
  • Pour the marshmallow layer.
  • Cover with the second cake (I did not soak it).
  • Refrigerate for 2 hours.
  • Beat the cream.
  • Grease the top and sides of the cake.
  • Decorate with this cream.

Since I have been dealing with boiled chickpeas and baked goods from it for a long time, I want to warn you that products made from it quickly grow moldy (for 3 days, for sure) if they are not stored in the refrigerator. As for meringue from chickpea decoction in this regard, I don't know. The marshmallow did not last more than 2 days for me, it was not stored in the refrigerator. Since the cake has a layer of boiled chickpeas - keep this point in mind.

But the meringue lay in a vase on the table for exactly two weeks, I finished the last thing today. Dry does not spoil. Only can get moist.
