  • When I cooked the sauce, I added a little heavy cream and two tablespoons of starch. From this, the sauce became denser, richer and tastier. Melted chocolate in a hundred grams of heavy cream. I scooped up some vanilla sauce and mixed it separately with two tablespoons of chocolate cream. It turned out to be several sauces.
  • Nice-tasting "snowballs". Elastic: fluffy on the inside and slightly plump on the outside.
  • Together with sauce and creamy chocolate, it tastes like "bird's milk".
  • Berry lovers can experiment endlessly, changing or supplementing one component with another.
  • Enjoy your trip to the land of desserts!
  • Einfach, schnell, leicht und fein!

Note

Residents of many countries liked this dish. And in each country it has its own name.

- île flottante, œufs à la neige (French)
- Schnee-Eggs (Snow Eggs) (German)
- zupa nic (Polish)
- Kanarimilch (Austrian)
- madártej ("bird's milk") (Hungarian)
- schneenockerln, šnenokle (Serbian)
- lapte de pasăre ("bird's milk") (Romanian)
- Lumepallisupp (Estonian)
- dragon Alla Neve, dragon di neve (Italian)
- isla flotante (Spanish)

I decided that these "snowballs" can be presented in some original way.
For this I prepared several different forms: a silicone ring and a metal ring with a bottom for forming a salad ... And even a pastry syringe. It was interesting to experiment.
At first, I just scooped it up with an ordinary tablespoon and boiled it in water to see how well the protein would slide from the spoon, and whether it would be possible to make a ball. Then I switched to a silicone cup. But the protein didn't want to keep its volume and shape. The protein stuck out of the mold. When I tried to turn over and shake out the protein ball, I got only half. The mass is not fully preserved - it is too large.
The second attempt also failed - part of the protein is separated and remains formless.
And yet I chose the best option - this is a large salad spoon. With it, scoop up more of the whipped protein, and with the second spoon remove the excess, giving the mass a spherical shape.

And these are some failed "pancakes"

Residents of many countries liked this dish.
As a child, my mother cooked this, and then they were also called "snowballs" (and my childhood was a long time ago)

I have a persistent inferiority complex
and when you try to overcome it, by preparing recipes, you realize that you are also physically arranged differently (your hands grow from a place located below your back).

If I happen to be on this list, I will definitely be in the tail.
You forgot that our forum was filled with fried roe deer, smoked eels, crushed crayfish ...
Continue the list? ...

Move over! I'm also impressed! And I don't know when I can get away from him
With such craftswomen, this does not threaten us
We'll be impressed (and cook whenever possible)

Irina, the fact of the matter is that; - Someone from eggs and milk and vanillin chudyusa creates

In Estonia, Lumepallisupp + snow egg soup .. sauce is poured into a larger bowl and balls are laid out. Many Estonian desserts are called soup.
I love this .. I haven't done it for a long time.
Irina, your table setting is, of course, very beautiful.

Irisha, this is breathtaking! Bravo!
And filing Carried away in the bookmarks marked "urgently cook"

Thank you very much!

And I have met, it seems, something called "clouds". It was interesting, but dumb, because I just can't imagine how it tastes? I did not dare to do it)
Elena-Liza
Of course, I took this beauty into my bookmarks! But it seems to me that I will admire this masterpiece only in the picture. I totally agree with the girls above. About physically (the hands are not just growing out of the wrong place, they are also wrapped in prendebobel), and the psychologist is also required.

Girls, lovely! Thank you for the positive!
It's so nice that you liked this dessert! Try it!
It's scary at first: the squirrel is so airy, and you don't know how to approach it. And even in boiling water
It must be handled with care so as not to disturb the shape.
And then it will make such a fluffy "cloud"

My first portions failed the test. 8 balls were sent to marriage

Ira !!! looking at your photo, I still decide to cook them again!
Gata
Natasha, I mean, you made them and you didn't like them? or what? And I really want to try to make them on a long weekend ...
NataliARH
Gata, did, about 2 years ago, it seemed to me too sweet, I think the recipe was not for me, but from our master Irina it's a sin not to try!
Irina Dolars
You need to taste the protein when you beat and add powdered sugar and lemon
ALL TASTE DIFFERENT!

I think this amount of powder is optimal for this amount of protein.
It can be reduced. Since the sauce pleasantly complements the taste, and with chocolate cream especially
We licked our plates without blinking

Irina Dolars, Irina, many thanks for the detailed description !!! I have come across this dish called "Floating Islands". But since there was a very truncated description, I did not even take it (you can immediately see when the recipe castrated incomplete)

And now I will definitely do it !!! (Only after Maslenitsa, otherwise all the days are already scheduled - when to make which pancakes))) Thank you! The recipe is a miracle !!!
Irina Dolars
Thank you, Yulechka!
I'll add more photos later
Irina Dolars
Well ... Made an addition to the recipe
Scoop up the whipped protein with a large spoon. With a second spoon dipped in water, give the cream a rounded shape and remove excess.
Now we put our "cloud" in hot water (or milk). The protein breaks off the spoon and floats to the top. Cook for 2 minutes. Then carefully catch it with a large spoon and turn it over. We timed another 2 minutes. If our ball is large, then carefully turn it sideways with two spoons. Not pressing, but pushing the ball. And so in a circle, lightly boil. You cannot drown it by force - the air will begin to come out, and the protein will begin to flatten. If you digest the "snow", then it will boil down in volume, it will turn out not as fluffy as it was intended.
From the remains of the cream, you can "stick" a lot of small "snowballs" - and cute, and fun for children

Ira, I cooked them! What a deliciousness it is! I didn't even take a picture. After your photos, I'm ashamed to shove my own. But very cool, fast, tasty and beautiful!
I cooked it in milk, from which I later made the sauce! Delightful and .. little!
Irina Dolars
Happened? How big are the clouds?
It is a pity that there is no photo. Was it really too lazy to make a portrait of a plate with dessert
Here you are FulYuganka! You compose everything
I don't think the white sauce balls look worse than these
