Ingredients

Enoki mushrooms 1 package
Cucumber 1 PC.
Glass noodles 50 g
For the marinade:
Water 250 ml
Salt, sugar and vinegar taste
Allspice 2 pcs.
Carnation 1 PC.
Bay leaf one small leaf
For refueling:
Soy sauce 3 tbsp. l.
Lime (lemon) juice 2 tsp
Ginger juice 1 tsp
Odorless vegetable oil (preferably light sesame oil) 3 tbsp. l.
Salt and sugar taste
Garlic and zest optional
Ground black pepper, red paprika taste

Cooking method

  • I suggest making a wonderful salad in the Chinese spirit. We treated ourselves to such a salad several times in a Chinese restaurant where Chinese dine. I tried to reproduce it. Serve well chilled. Its zest is that it uses the so-called "golden carnations" - enoki mushrooms - very useful in their properties and interesting in appearance.

  • - Pickle Enoki mushrooms. We wash the mushrooms without cutting off the mycelium. We cut off the mushrooms from the mycelium. Cook the marinade from the specified ingredients. I add vinegar by eye. I do not recommend making the marinade very sour, so as not to kill the natural taste of the mushrooms. Add the mushrooms to the hot marinade, simmer over low heat for one minute and set aside until cooled. My mushrooms were pickled in the refrigerator for 24 hours.

  • - Pour boiling water over glass noodles and let stand for five minutes and drain.
  • - We cut a cucumber into thinnest strips, if there is a spirozer, it is better on it. Add it to the chilled noodles. Add mushrooms there without marinade.
  • - Making a gas station. In a container, mix ginger juice, lemon juice (preferably lime juice), odorless vegetable oil (preferably light sesame), soy sauce. Garlic and zest optional.
  • - Season the salad with dressing. Pepper and sprinkle with ground red paprika to taste. Let it brew in the refrigerator for half an hour and serve. Fresh cilantro goes well with this salad, as with all oriental ones.

Note

The history of the use of enoki mushrooms began about 300 years ago, when inconspicuous porcini mushrooms were found on trees in Japanese forests. They began to be eaten by adding them to soups. Ancient healers dried them and made medicinal infusions. Later, mushrooms were grown artificially on trees.
Nowadays, with the invention of new technologies, these mushrooms are grown in plastic bottles in the dark.
Enoki are used in Korean, Chinese and Japanese cuisines Enoki contain the polysaccharide flammulin, which scientists prescribe anti-tumor properties. They improve digestion and are considered a dietary food. Zero cholesterol, low carbohydrates and high protein make this product attractive for those looking to lose weight.
Mushrooms are a source of potassium, which helps lower blood pressure, and is beneficial for patients with hypertension.
Enoki contain selenium, which is a good antioxidant.
Mushrooms are a source of vitamins B, B2 and B3, which help with fatigue and stress. They are saturated with protein (over 50%), calcium, iron.
