A tomato 3 pcs (300 g)
Green basil (I added broccoli) 35 g
Cheese 125 g
Gelatin 4 g
Olive oil for frying
Salt taste

Cooking method

  • Caprese is a light snack made from tomatoes, mozzarella, basil and olive oil. Due to its coloration, imitating the Italian flag, this appetizer is a national Italian dish. I bring to your attention another option for serving this dish - in a glass (the components change slightly).

  • 1. Cut the tomatoes into 4 pieces, fry in olive oil until soft. Salt to taste. Rub through a sieve. I got 160 ml of tomato puree. For this volume of liquid, 4 g of gelatin is required (for a different volume, the weight of gelatin must be recalculated). Soak gelatin in water. Put gelatin with tomato puree in a water bath until the gelatin is completely dissolved. Pour the mass into glasses and send to the refrigerator for 1-1.5 hours.

  • 2. Coarsely chop the zucchini and fry in olive oil until soft. Salt. Boil cabbage in boiling water for about 5 minutes. Grind the zucchini and cabbage in a blender (the author uses zucchini and green basil; I was able to buy zucchini and broccoli for a more intense color). You can use gelatin, but I didn't use it for a softer texture. The puree keeps its shape perfectly even without gelatin.

  • 3. Tear the Mozzarella cheese into fibers and mash with a fork. You can also take feta or cream cheese - it would be better to go to the glass and the taste of these cheeses is not as bland as that of "Mozzarella". Who likes what more. Put on the frozen tomato jelly. Put the green cream on top from the pastry syringe. Decorate with nuts - pine nuts or pistachios. I used crushed almonds.
