I agree, crazy people, in spite of the heat (in our sun the thermometer rolls over +55, in the shade yesterday at 5 pm it was +40!) I make tea from Ivanushka grown with my own hands. It was necessary to do it a week earlier, already began to throw seeds, but the children, grandchildren - there was no time. And you can't wait - everything will go into seeds. And there is nowhere to store the ragged, the refrigerator is clogged. She cut off everything, cut off leaves in the house under air conditioning, separately flowers with seed pods. While she was ripping off, I realized why he was so expensive.
In general, I make tea granulated, leafy from leaves and seed pods of different fermentation. I have never made tea (I mean garden ones) of long-term fermentation, but here the leaf fermentation came out until 24h. We'll see.

I did it by weight, I somehow have no idea how to check the ratio? Anyuta73 haven't visited the site for a long time. Lyuda will appear and correct me if I'm wrong
Yanka
Quote: Natalo4-ka
volume somehow I can not imagine how to verify the ratio?
Well ... three liters of that, three liters of this ... I have not weighed yet, everything is drying, but it seems to me that the boxes should be heavier in weight than the same volume of leaves. So I wonder who did how?

Well, after all, you can thicken a sheet of three liters or airy so ... crap is shorter. I took it by weight.

We're really nuts!
Here I am, collecting ivanushka through the thickets with raspberries and nettles, and there are also logs in the grass. I flew with my nose more than once. I get out scratched, bitten. And there are also snakes ... but I don't think about it. Indeed, we are nuts!

Now I dried Fuzzy by the method of Anyuta, that is, half and half with leaves. I don't smell the smell, but at some point I caught myself on the taste of fireweed tea in my mouth ... So, I think, wow ...
Elena Kadiewa
Fuzzy last year, the smell was overwhelming! But without leaves.

Boots, devuli, our everything! I do not go to the forest without boots.
In our forests, snakes, ticks, wild boars, moose, roe deer, hares, foxes, otters, beavers ... generally keep quiet. And that's just what I have personally met. And also wolves, lynxes, deer and occasionally bears and bison, but they are found in Pushcha, not here. The wild boar is very much divorced, does not give a passage, it is necessary to make noise, especially in the forests far from habitation. Tomorrow we want to hit the road, the chanterelles have gone)))

And I, therefore, the other day went for an ivash in beach slippers
When I arrived, they buzzed me - they clung to me from all sides! The first thought was to run away immediately. But then I think that I came in vain?
Courageously defending, nevertheless, I scored boxes for the fluffy. By the way, it was the first and most delicious fluffy, as it seemed to me.
Then I took clove oil with me and they hardly touched me.

I can write my experience with tea.
How I got the first fluffy I wrote It was in the evening. That's how much it fermented - I don't remember, I got confused already. Either very little, or vice versa, long ... memory is short at all.
But in my opinion, the night he stood with me. It means, after all, for a long time
No more features were noticed behind him. My mother and I were stunned by him. And also, after drinking it, we didn't feel like eating for a very long time.
I collected the next batch in the morning, fermented for 3-4 hours, and I made one part with leaves, the other without. And in this batch, he smelled of bread. In the first flowers, and in this bread. And when brewing, it also gives off like bread. I didn't like it very much. As I understand it, the boxes are already very rough. Yesterday I went and specially picked up tender ones, already the last ones. He is already in fluff, but in some places you can still type it. I won't go again this year.
Let's see what happens. I added a little cherry leaf to this batch. By the way, he was very bad at my meat grinder.
Experiments continue
*Eve*
Vera, did you freeze cherry leaves?
-Elena-
Girls! Can you freeze withered boxes? Otherwise, I don't have enough time to go through the whole process.
Elena Kadiewa
Elena, no one seemed to freeze the boxes.
-Elena-
Very sorry! I'll think...

I was freezing, everything is fine

Not at all, I really am not a very experienced tea-maker, I made a white-pink one once without freezing, and the fluffy froze dried, since there was no time, I turned out a fluffy better, just like it was written, and smelled during fermentation and dried up to ringing ...
mironirina
Girls! I decided to make "Fuzzy". I typed, put it to dry, and he half fluffed up while he was drying! (I will take the fluff, of course, but how to avoid this in the future?

Irina, mature boxes become red (or pink ???.)))) In general, not mature boxes are green, slightly pinkish tips, but as soon as ripe, they become densely colored in red, pink or purple.

Lyudmila, the color of the boxes depends on the place of growth or on the soil. I have them green.
And as for the smell of bread, last year I did it and apparently I got overripe, the smell of bread was long and only a year later it almost disappeared.

Nadyushich, May be! My spouse gathered yesterday, to dry "bowed", almost burgundy. I, this year did not make tea from the leaves of Ivanushka, I'm only waiting for the boxes, the most delicious turned out.

Lyudmila, that’s how we are all different with different tastes ... And this year I decided not to do it out of boxes, it is very tough and harsh for me. I hope that the white pink will not disappoint ... And I like ivanushka purely more than the boxes, and also ivanushka with cherries sooo. And by the way, the cherry does not stick out in it ...
Barquentine
Girls do not fluff up the fluff when drying. Melu. I'm afraid to translate the leaves. Or better to add. I did it already, but then the boxes just appeared
Elena Kadiewa
Barquentine, will not fluff.
Nadyushich, our tastes coincide with you! Also waiting for what the pink and white will show. And I don’t do a fuzzy, I stayed from last year.
Yanka
The fluffy also seemed too tart to me, either it is necessary to pour less, or it is like that ... Narwala is still fireweed today, she walked late in the evening, so she just scattered it in the attic, tomorrow morning I will sniff and then add it. The thought moves to scroll then everything together, leaves, flowers, boxes, without taking into account the ratio, how it will turn out, and it will turn out ... What do you think about this? Or are you better off not needing flowers, just leaves and boxes?
Elena Kadiewa
Yanka, I am also going to do it tomorrow, put it all together!
Yanka
Well, I hope it won't be bad for sure ... This time I don't want to ferment for a long time, I decided to try it for 6-8 hours.
Natalia-NN
And I did it today. On Saturday, I ran for boxes. I thought I was late, but no, I was in time. True, some have already pushed. Since I am a meter in sprout with a cap in a jump, and the bushes are almost two meters, I was all in fluff.
Barquentine
Girls, and still collecting leaves from pushing Ivanushki? I noticed flabby granules are obtained.
Natalo4-ka
Barquentine, Nataliya, if the sheet looks decent, then I would collect. Better such a sheet than none. And look from the northern sides of the forest, where there is little sunlight, in such places it is younger.
Tsari
Lyudmila many thanks for the recipe! the tea turned out super! and he has a good exit! directly inspired!

Girls, I tried my Fuzzy today. The color of the tea is not as dark as from the leaves, it is lighter, with a slight redness, and transparent. The taste is interesting, with a slight sourness, not very tart yet. I like. The photo is just this, it was taken in between the blanks, there was no time to direct the beauty Ivan-tea Fluffy (from immature seed bolls) ... Verdict: to be tea !!!
sveta-Lana
I collected a small portion of tea boxes, collected them with flowers, but did not add all the flowers, it seemed that there were a lot of them, I dried them separately and poured them into a bag, now I decided to pour them into a container and found that the boxes were fluffed up there
Apparently when I went through, I missed them, it seems like not a lot, I picked it up as best I could, but they are so thin ... and how now? Can I use these flowers or not risk it?
Natalo4-ka
Quote: sveta-Lana
or not to risk it?
Svetlanawhat are you risking? If a little fluff gets into the teapot, this can only spoil the appearance of the infuser, provided that the teapot is transparent, and then I strongly doubt it. It will not affect the taste
sveta-Lana
Natalo4-ka, it's just that the rose hips also have fluffs, they are prickly and they need to be removed, and for the first time I deal with Ivan-tea, so I asked
Natalo4-ka
Svetlana, nope, these are not prickly, they are like a dandelion, get wet and stick to the wall of the teapot or a flower. If there are not many of them, then it's okay. I wouldn’t worry about it.

I wonder how you manage to remove them?
I usually just pour through a strainer and do not need to clean the niche! Cleans itself.

Good day!

Thank you so much for your work! It was on your site that I found step-by-step instructions for cooking ivanchay, and I have been actively using it for several years!)) And now also "Fluffy" !!

I have one question: when making fluffy tea, however, like ordinary tea, the finished product turns out to be too light in color, why is this happening? Maybe the oven temperature is not 100 degrees? The stove is modern, electrolux ... And more .. If you didn't have enough strength to finish drying the tea right away (the deaf night overcame it), can you dry it the next day? ...

Once again - thanks for the answers!
Nadyushich
Victor, my fluff is also lighter than granulated from a leaf, although I dried it with a fry. But when brewed it is sooo black.
And if I don't finish drying my tea, although this very rarely happens, then I leave it in the oven overnight, slightly open. There is enough heat in it to dry the tea.

By the way, the first page clearly shows the color of both the granules and the tea.

Good morning!
I sit drinking fluffy. Delicious! Perhaps subjectively, but the second fill seemed sweeter than the first. Who has what feelings?
I have: fermentation for 7 hours, drying with frying in the oven for about 1.5 hours.
Made in the village, yesterday brought 240g. On the way home, I scored more boxes - I dried 344g. I will try in 10 days to go again. There, in one place, the grass was mowed and Ivanushka is just blooming.
mironirina
Girls, tell me what I'm doing wrong. I collect the boxes unopened. I specify, both green and pink. I try not to take very large and very elastic ones. I'm fading. And already in the process of drying, they begin to open. Then I put it in the refrigerator in the hope of interrupting this process. Freeze and scroll still not completely thawed. I observe how the deformed boxes release fluff at the mouth of the meat grinder. That is, some of the boxes have fluff in any way. This can be seen on the milled pellets. I do it in half with the leaves, so it can be clearly seen. In principle, this does not bother me, but somewhere in a message on the forum, the girls wrote that when fluff gets in, tea acquires the smell of a baked crust. I don't want that.
I understand that some of the boxes I have collected are ready for the breeding process. The question is how to define them? Or don't give a damn about it? Tell us, what is your percentage of fluff in your finished tea? Well, not up to grams, of course ...

Added on Friday 05 Aug 2016 10:52 AM

The boxes I collected are exactly like in the photo from the first page. I do not think that the author has them fluffed up during the preparation process. On the other hand ... tea is called "Fuzzy" ...

I specially registered to express my gratitude for your work. Thank you very much, dear, tea lovers, - the moderator Lyudmila and your friends - Anyuta, Tatyana, Lenochka, of course Zakhary and many others. I read the whole forum like a fairy tale. But I was on a hike in the Elbrus region. And I only had bowls, a kettle, plastic bags, stones as cargo, and a fire.
Girls, everything worked out! Harvesting, drying, fermentation and even drying. I made the last frying in the final hotel, in the dining room.
Tea is a miracle, overwhelming !!
Thanks to all the forum users for the wonderful recipes, cool videos and for such a kind spirit of your forum. With admiration and the kindest wishes, Natalia
