The only thing that is still not clear to me is that the lower part blushes much faster than the upper one. In general, this is understandable, because the bottom begins to bake as soon as we put the dough, and the top only after the lid is closed, and then it is also necessary for the dough to rise to the very surface of the cell. I will also look at savory pastries to see how noticeable the difference will be there, sweet dough fries very quickly.
