Pickled pumpkin

Ingredients

pumpkin 1 kg
water 400 ml
sugar 350-380 g
allspice 5-6 peas
carnation 6-7 buds
fresh ginger piece (the size of a plum)
cinnamon 1 stick
star anise 2-3 stars
vinegar 9% 90-100 ml

Cooking method

  • Peel the pumpkin and cut into large pieces, cubes or wedges. Place in a large saucepan. Heat the water a little and dissolve sugar in it, add vinegar, stir and pour over the pumpkin. Leave the pumpkin in the syrup for 12 hours. It is possible up to a day.
  • Put the pan on fire, add spices and simmer over low heat for 10 minutes.
  • If used immediately, then just cool under the lid, put into jars without spices, pour over strained marinade and put in the cold. I stand on the balcony while it's cold.
  • And if stored for a long time, then hot decompose in sterilized jars and roll up.
