I have had HP for several years. I bake bread 2-3 times a week, mainly based on a mixture of white, whole and rye, with a bunch of different additives (mashed potatoes, wheat germ, crushed flaxseed, onions, nuts, etc.) and I also replace some of the yeast for leaven, it has also lived with me for a long time. I bake on the 3rd setting, "Whole grain bread", small size, 3 hours 32 minutes.
It happens that bread goes great for weeks, the roof does not sit down, and then suddenly - for some unknown reason - it begins to fall day after day, at least kill yourself. I already reduce the amount of yeast, and the amount of liquid - nothing helps. And then - bam - and again everything is in order. Do you know this? I think yes .
So: a few days ago I put the bread on and I see that the dough rises too quickly, it will EXACTLY fall when baking! This is after the second kneading and kneading, of course. Then it occurred to me: what if I crush him again? I took out the bucket without turning off the HP, dumped the dough onto the oiled table, at the same time removed the mixer, kneaded the dough neatly, folded it a couple of times, formed the bread, returned the blank to the bucket, and the bucket - in the HP to continue the process.
