Classic, old, very solid cake, but "decorated" with various additives. And the form immediately takes on a new meaning.

I've been baking for a long time. More often I make a "shirt", there were no problems with taking it out. It was just as good when baking in Nordic. And then I got an electric oven and it started! I concluded that when baking in a gas oven, the crust is stronger than if the cake is baked in an electric oven, so it comes out better, as if it becomes more solid due to this crust. I don’t know why, perhaps because the humidity in the electric oven chamber is higher than in the gas oven, where the cake is drier (with the same baking parameters) at the end of cooking.
Yes, it is also softer from the electric one, immediately after shaking it out of the mold with a finger on the surface, if you press, it is noticeable.
And, if I can shake from the gas, helping the cake to get out, then from the electric it will definitely lead to its destruction.
So vooot. I think if for the last few minutes a cake in Nordic is baked with a slightly open door in an electric oven, then the situation with taking it out of the mold can get better by removing excess moisture.
I bought a non-stick lubricant from Kotani to lubricate the molds. Fast, convenient. I put the mold in the sink, spray it and it's done in seconds. It is easy to take out the finished cake with such a lubricant.
But with a "shirt", in my opinion, it is better, there is a glossy surface.

Also, if you don't want to "go out", you can try to help like this: turn it over, put a hot, damp towel in several layers on the mold and wait a little. The cupcake inside, sorry, will sweat a little and, due to this, will move out of the form. This method has been tried for a long time.
