  • Bethmenchen (German Bethmännchen - "betmanchiks", from the surname Bethmann) are typical cookies from Frankfurt am Main. Betmenkheny are baked from marzipan mass with ground almonds, powdered sugar and rose water in the form of balls, decorated with almond halves and glazed with egg yolk. The cookie is named after the Betman family of Frankfurt bankers and is currently prepared and consumed around Christmas. The recipe for the betmenchens is based on Frankfurt gingerbread, known since the Middle Ages. According to legend, the betmenchens were invented in 1838 by the Parisian confectioner Jean Jacques Gautenier, who served as a cook in the house of the banker and city councilor Simon Moritz von Betmann at the beginning of the 19th century.
  • 1. Pour boiling water over the almonds (100 g) for a few minutes to clean the skin. I did not find rose water (it is advised to ask for it at the pharmacy). So I poured a small amount of boiling water over a handful of dried rose petals. Grind unpeeled almonds (50 g) with a blender.

  • 4. The number of balls depends on the number of almonds. Each ball needs 3 halves. I got 172 halves (some of the tonsils broke, some were eaten) - divide by 3 - we get 57 balls. So, we roll the balls. According to other sources, their number is about 50.
  • 5. Lubricate the balls with yolk, stick 3 rugs of almonds to each ball on the side.
