Cooking method

  • 1. Add some cold water to gelatin, stir, leave to swell. Pour 50 ml of cream into it, put it in a water bath and cook until the gelatin is completely dissolved (the cream with gelatin cannot be brought to a boil, otherwise the milk will curdle!). Add sugar, stir to dissolve crystals.

  • 2. Grind the nuts in a blender, add ground cardamom, dissolved gelatin, the rest of cold milk. Put the mousse in the refrigerator to harden (about 1 hour).

  • 1. Milk (500 ml) with sugar and soda bring to a boil and cook over low heat, stirring occasionally, for about 50 minutes - until the desired color, at the end of cooking added another 70 ml of milk, because the caramel came out thick.

  • 2. Decide on the size of the roll. I baked a pancake on a baking sheet. Based on this, the size of the cake turned out to be 25 cm long and 30 cm wide (cut off the edges). Then the length of the caramel roll is also 25 cm. Of the five bananas I mashed 4, I left 1 for strips. So, add banana puree, vanillin and gelatin dissolved in milk (as for mousse) to the caramel. We send it to the refrigerator for solidification (about 30 minutes).

We put 3 strips on top of the mixture, divide the fourth into three parts and continue 3 strips to the full length - 25 cm. We roll it with a roll, I fastened it with foil on top. We send the roll to the refrigerator for several hours.
