Ingredients

Tomato juice 2 l

Carrot 1 kg
Onion 1 kg
Sweet pepper 1 kg
Rice (I take round) 1.5-2.5 st.
Salt 2 tbsp. l.
Sugar 3-4 tbsp. l.

Cooking method

  • 1. Cut vegetables into strips (well, or into cubes - as you like) - not very finely
  • 2. I personally take tomato juice freshly prepared, for 2 liters of juice I usually buy 2.2 kg of tomato
  • 3. Boil the volume. juice, add vegetable oil, bring to a boil again
  • 4. Add carrots, after boiling, keep on low heat - 20 minutes
  • 5. Add onions - after boiling, keep on low heat - 10 minutes
  • 6. Add pepper - after boiling, keep on low heat - 5 minutes
  • 7. Add washed rice - after boiling, keep on low heat - 25 minutes (do not forget to stir occasionally). 25 minutes is an approximate time, since the mixture must be cooked until the rice is cooked. And rice is different.
  • 8. Finally add salt and sugar.
  • Roll up in sterilized jars. The output I get is about 8 pieces. 0.5 l cans

Note

This salad turns out to be low-fat and in winter it is eaten as a completely independent dish.

The salad turned out to be thickish (all the liquid had evaporated), the rice was quite slightly undercooked.
