Milk cakes (GOST)

Ingredients

Flour 510 g
Milk 100 g
Salt pinch
Sugar 265 g
Butter
+20 g vegetable
(or 120 g margarine)
100 g
Egg
(this is half an egg, the other half will go for lubrication)
30 g
Baking powder 2 tsp
Vanilla sugar

Cooking method

  • First, I'll explain how to divide the egg. Break the egg into a cup (the average weight of a selected egg is 60g), beat with a fork so that the yolk and white become a single mass and pour half into the dough. Set aside the remaining half, we will grease it.
  • Mix the softened butter with sugar, milk, egg, salt, vanilla sugar. Beat well to completely dissolve the sugar. Then add the flour sifted with baking powder and knead the soft, sticky dough. You don't need to knead for a long time, it's not yeast. Roll out the dough 6-7 mm thick on a well-floured table. Cut out the biscuits (whatever you want, curly, even, etc.), you can apply a pattern to them. The diameter of the biscuit is approximately 90 mm. Brush with an egg and bake for 12 minutes at 210 degrees. The biscuits brown very quickly, so I advise you not to run far from the oven.
  • Do not have time to blink an eye - they will burn.

The dish is designed for

12-13 biscuits.

Note

Remember those that look like chamomile? Nostalgia.

Milk cakes (GOST)

They were sold in our school cafeteria. And they always lacked a little sugar to be perfect. Apparently, the sugar was actively poked by catering workers, because if you follow the recipe, the biscuits are sweet as they should! This is the taste of a school afternoon snack and my childhood.

The husband immediately said: "Those for 8 kopecks?" We all come from the USSR. Everyone remembers the same thing.

In my opinion, they are not thin, but just smaller in diameter, so a lot came out. The thickness is the same.

I have already tried to cook a lot according to your recipes, and now I mold the pies exclusively by your method, but I still don't have enough bagels recipe for complete happiness as before. All that baked still does not look like those bagels ...

If the mug is huge, it means exactly Ikeevskaya.

Bagels? ... You need to try. Many Gostov bagels lived in my bottomless book ... I saw them.

They look like cookies.

Only in appearance. Thickness, consistency, taste - all the same.

But I think that size, for once, really doesn't matter.

No, it's me with a dough knife like Omela, only I still have Soviet times:

Cool biscuits rabbits !!!
The biscuits are also awesome, yeah ... The shape is interesting ... a semicircle, right? And why are you doing them so? Carved out a circle and then with a curly wheel for nalopop dough, right?

Luysia
Crochet, bunnies are really wonderful, but this is just a bunny calendar!

And the biscuits, all standard round, and the top two of the remains - a large round one was cut into two halves with a wheel.

Next time I'll roll it out, cut it into rhombuses or squares, it will be faster and the edges are already very nice from the wheel.
Scarecrow
I also bought a mold with which you can cut biscuits. I'll try it out with you soon.

Scarecrow, biscuits are just a miracle! And the products are simple. I baked for the first time on margorin, they cooled down and became hard, but we ate everything hard. Yesterday they put in the plums according to the recipe. oil and they stayed soft.

I baked some biscuits today. My first baking experience, and of course this recipe too.
Taste and result pleased, thanks for the recipe
For my taste, I need a little less sugar, and it seemed to me better to bake at a temperature a little lower, 180 degrees, so that the bottom does not burn, maybe this is my oven
Made light ones on purpose, we love just that.
That's what I did

Excellent result. And a man who appears in any of the local topics immediately gets a medal. Just for the will to win.

The recipe memory is good (I have a separate folder and they are all attached there). You should also leave a place or column on this sheet for personal notes. I always have notes: the dough is thick, take less flour, reduce sugar by a third, etc. Now you already have your own wishes: "reduce sugar".

Temperature is a specific issue. The bottom burns due to the uneven distribution of heat (especially the oven, the lower teng shoots strongly, it is possible to treat it by rearranging the baking sheet one position higher or placing another "distracting" one under the baking sheet with shortbreads). Reducing the temperature is not always an option; you can simply dry the products. The pastry will be hard.

Thank you for your kind attitude.
I mainly bake yeast bread for my home while in HP. Wheat bread is obtained, 50/50, too, I have already mastered mixed ones, I soon hope to master pure rye and other Borodino and whole grains, what is useful is already stocked up with malts, agrams, panifarin and others.
As for the biscuits - we regularly buy such milk cakes now, and they are still sold in our bread tents. And your recipe came in handy, so I decided to try it.
And my memos are just like that, with a place for notes

Do not leave open after baking, they dry and quickly, since the residual moisture is already low in the product.

Thank you! I will take into account, were open, of course

Scarecrow, I am very grateful for such a wonderful recipe !!!
And I am enclosing my progress report:
Milk cakes (GOST)
As a result, 9 biscuits with a diameter of 11.5 cm turned out (the daughter was presented with a special set and there was a form for biscuits). I drew conclusions - let it be better 8 pieces, but thicker. And the temperature regime is necessarily 220 degrees, no less, I did 200 first and they cooked for 20 minutes (while they were browned). As a result, the edge is overdry. The recipe will definitely take root with us, so we will work on the mistakes)))))
mollyunchik
Thank you so much for the recipe. Everything worked out. Everyone really liked it - they ate everything
AlenaT
Tusya, thanks a lot for the recipe.
I liked it very much, only in terms of quantity I have 18 pieces, no less.
Is that even thicker to roll out (more than 7 mm).
I take it off, cool it down and immediately put it in a tin box with a lid.
So they are even softer the next day than the first.
So yes, they burn out very quickly if you gape.
My oven needs exactly 10 minutes on a timer at T 210 degrees.

Sveta, what beautiful biscuits !!! And my husband suddenly says to me today, do you remember you baked biscuits ??? Oh how !!! We need to bake !!
Milda
Today I ask my husband what to bake? "Cookies or biscuits, dear?" They wished for biscuits, now they drink tea with them. They have lived, they don't want buns, they don't want pies either. Well, at least they wanted biscuits, otherwise the baking handles miss.
