What can I say, it worked. Mode 5 "butter bread", crust "medium". Although, for our taste with my wife, it is a little different ... Dense, as in our opinion, did not fully rise and the top cracked. The next one will follow a completely different recipe (in its own way).
2. Bread with fried onions (yum, yum !!!)

Recipe:
- Fry several large onions (finely chop) in 2-3 tablespoons of sunflower oil until golden brown. Pour all this into such a bowl so that afterwards it is convenient to choose this oil (it is very important, it is the oil in Chinese cuisine that has a wonderful smell)
- 1 medium-sized yolk together with water, you should get 170g of liquid (mix the yolk with water until a uniform consistency);
- 1 tablespoon of oil after frying onions (cooled down);
- 1 heaped tablespoon of sugar;
- 0.5 teaspoon of salt (in our opinion, it is enough, since we do not particularly salt the dishes, but 1 is also possible);
- 2 measuring cups of flour (the one that comes with the bread maker), BUT - not flush with the edge, but with very tiny slides (it turns out a full shape with bread, seen in the photo. Did 3 times - nothing escapes, everything stays in form);
- 1.25 - 1.3 teaspoons of dry yeast.
- Pour in the onion after the signal (hour 40 min) and, when kneading with a silicone spatula, help a little when kneading, for even distribution of the onion in the dough.
Bake on program 1 "main mode", the crust is "medium", do not leave on the heating (we did not like that the bottom of the crust in the mold turns out to be somehow wet) but immediately disconnect from the mains.
The weight of the bread is in the region of 460-465g.
Teaspoons and tablespoons - the most common (those that we use in the kitchen. More familiar somehow)

1. 3 ordinary tablespoons of sunflower oil;
2. 1 ordinary teaspoon of salt with a small slide;
3. 2 ordinary tablespoons of sugar with a small slide;
4.120g dark beer + 120g water = 240g liquid. Remove gas from beer as much as possible by stirring with a spoon). I add lukewarm liquid to the bucket (somewhere around 40 degrees) or add warm water to the beer, or heat it up (I do this in the microwave)
5.1 ordinary teaspoon of squeezed lemon juice.
5. 3 measuring cups (the one that comes with the bread maker) flour (2 cups rye flour and 1 wheat flour, layers = rye + wheat + rye);
5. 1 teaspoon of caraway seeds or coriander beans (as you like), add immediately;
6. 2 teaspoons (the one that comes with the bread maker) dry yeast.
I put the crust medium (my wife does not like very fried), but on a dark one it turns out like a store one - dark.
Whole grain bread mode, unheated.
It turns out very tasty !!!

Well, yesterday I tried to bake bread in a new assistant. For 300 grams of flour and 170 ml of water, the bun was wonderful, it was kneaded perfectly, it also steamed beautifully. And the pastries failed, the roof fell, after all, there must be a lot of water. And yet, I chose a dark crust, well, I got a thick crust, especially on the bottom. And this prevented the normal pulling of the bread from the bucket, despite the long standing. The scapula sat tightly on the pin, did not come off, and the crust, in turn, did not break, and everything was kept tight. So I had a take 2 today.
I set a medium crust, kneaded at the rate of 200 grams of flour and 140 ml of water. After the last kneading at 1 hour 55 minutes, I took out the dough and transferred it to the L11 form (I smeared the form with non-stick grease, hurray, I read about it here!).
Voila! It's just a miracle, it turned out to be a neat brick evenly baked!
