Fermented tea made from leaves of garden and wild plants (master class) (page 63)

Anyuta73
Ludmila, my sun ... I'll tell you a big secret today my mother-in-law called and told me very nice information (I've already infected everyone with these teas) ... I'm sitting here in Moscow and I'm suffering without leaves, and she picked me leaves and stuffed them into the freezer says: "you will come, take away" all relatives have gone crazy. Either mom picks up a bag of leaves, then my sister, then my mother-in-law ... then you save me with leaves. How happy I am ...
olesya26
Luda, he was immediately intoxicating when I was twisting it in a meat grinder. Then not very much, well, now I became stronger. I don’t know for the color either, maybe there was practically no juice in it, the granules after the meat grinder were not wet, I sprinkled with water, THANKS for the HELP
Anyuta73
olesya26, after the meat grinder, do not spray with water, it is better to cover the container in which the tea is fermented and heated with a damp towel.
Quote: olesya26
now became stronger.
It's good that the heady smell, sushi .... a day is a lot ... it's time to dry.
olesya26
I'm already dry. I didn't sprinkle the cherries like that when I put them on the inside, they were completely dry, maybe that's why I covered the pale tea with a rag
lappl1
Quote: olesya26
maybe the reason was almost none of the juice,
Olesya, there should be no juice, because the leaves are wilted. And they are dry now. But the granules are moist after the meat grinder. this is sufficient for fermentation.
olesya26
I would like a beautiful golden color of tea and here And yes I am the leaves before drying the soap, they were dirty I do not know how not to wash them. So tea from the store is also made from unwashed leaves
lappl1
Quote: olesya26
I want a beautiful golden tea color and here
Olesyadon't despair! will be not just golden, but black! Just follow the recipe. Do not ferment for a long time - no more than 10 hours.
And further. I understand that you have both loose leaf tea and granulated tea. So, the leaf is always light. And granulated (through a meat grinder) - dark. So, if you want dark tea, then spin the leaves through a meat grinder. And to make them twist more easily, first freeze them for about a day, maybe more. Let me remind you that we ferment loose leaf tea with oppression, granulated tea without it (we slightly press it with our hand).
Well, about washing or not washing - everyone decides for himself. I live in an ecologically clean area. So the leaves are not mine. And many girls wash and do not complain about tea. About store tea ... Don't be scared. It is collected in the mountains. It's clean there. I speak as a former inhabitant of the foothills ...
Anyuta73
Olesya, if you wash the leaves, then before twisting them you need to dry and wither or dry and freeze. There should not be a lot of moisture in the leaves. It is better to wither summer leaves, they are more tender and filled with juice, but autumn leaves are tougher and less juicy, so it is better to freeze them. Ludmila I have already said that the juice that is released when the leaves are twisted is quite enough for fermentation. And the color is not so saturated, apparently because in the first hours of fermentation, there was insufficient temperature (Ludmila I also wrote about this).

Anya! And I'm very happy for you! Now, on New Year's Eve, you will make tea (as long as you come for the leaves)! I represent your feelings - it's cold outside the window, and you have summer!
Anyuta73
Lyudochka, now you just need to put it all together, otherwise my tea is scattered in different places and I will have summer in winter
lappl1
Nothing, the main thing is that to collect ...
Anyuta73
That's for sure))) Lyudochka, did you receive the letter?
lappl1
I'll take a look ... My son is still visiting, something is not up to the post office ...
Ahhh! Sorry, Anya! There is a letter! Thank you so much ! I will answer tomorrow.
Anyuta73
Well, great))) And then I really thought it didn't come, I wanted to re-write

I made the first batch of currants and peaches, I think I did not ferment it, as it turns out after brewing it is light and smells like a regular dried one. The leaves did not curl after the freezer, the heaps did not hold, fermented whole, then cut and dried. 80.0
olesya26, about your light tea ... I have questions.
1. You write that you made the first currant + peach tea from whole chopped leaves. It turns out that this tea is loose leaf. But not even rolled into rolls, but simply chopped. As a result of the juice there you have - zero! Loose tea is always light. And this one, not twisted until the juice appears, even more so. Currants, even twisted in a meat grinder, give light tea. I will not say about the peach, I do not know, but I sense that we also have a peach without tannins, so it will also be light. So this tea, by definition, cannot turn out to be dark for you. But this is not a disadvantage. If there is aroma and taste, then let it be light for yourself ...
2. Where did you dry your tea (oven, dryer or pan)? and at what temperature?

And I can say with confidence that if you make a cherry (pear, apple, black chokeberry, plum, strawberry ...) in a meat grinder, ferment for 6 - 10 hours, dry in the oven at the beginning of drying at a temperature of 100 - 120 *, and then dry it at 60 *, then you simply cannot get light tea. It will be very dark, very tart and very tasty ...
Elena Kadiewa
My family fell for our gulls, I will probably brew it as a reward. If I’m very tired, I’ll make some tea for myself, and my strength seems to be increasing, I feel, I didn’t make enough tea, I found this site late, our summer is short, and now that’s all, there are no leaves.
Anyuta73
elena kadiewa, do not be discouraged, but turn around next summer. I'm sure not a single piece of paper will be wasted)))

Luda, girls, what is it - she went to the hacienda for 2, 5 days, and here they have already scribbled 5 pages ...! In general, my family and friends have tightly switched to my teas + gifts at work to colleagues ... I counted - I shed a tear: I start to get nervous without a significant supply, and here less than half is left ... break off. The pear completely flew around, the black and cherry half, the rest are still mostly green ... Fu, I relieved from the heart, I climbed to cut off everything ... to replenish supplies. I will not show the collected bags, the neighbors thought ... overworked, tried to give valerian water and calm me down. Here is a humble packet (one of 12):
Fermented tea made from leaves of garden and wild plants (master class)
Taking into account the autumn season, winter is on the nose, I made a lurch towards the prevention of acute respiratory infections, that is, "for the soul + prevention." The apple tree, blackthorn, blackberry, elk and cherry were strengthened with pine, cypress, barberry and raspberries (anti-inflammatory, antibacterial, lubricant), I thought and added lemon balm, mint, sage and basil (as antiviral agents). Dried for 8 hours (did not freeze anything), fermented for 3-4 hours (since I was twisting these bags in a meat grinder for more than an hour), dried on the stove, in the oven and in drying (since there was not enough space for such an amount ). Now the battery of bags is being dried in a suspended state. But, most importantly, I calmed down - there is a reserve! I realize, but I can't do anything with myself. But what a FRAGRANCE! By the way, I still have tomatoes in my greenhouses, I collect peppers, even though we have already had 3 days, as a minus at night:

In-in, and I'm about the same ... Like and treated a little bit, poured it with me, but my beloved is not enough. I, like that Kashchei, wither over tea, count, sniff, and today I hint to my husband that we should take my child and me to the dacha (yesterday we stayed there all day, closed the season), to his question, what to do there, there are still no leaves , I explain that yesterday my neighbor noticed a cherry tree, there are still leaves on it, and the same neighbor has Victoria with leaves, and we still have some raspberries on the bushes ... and today I devoted all day to him, my beloved, a whole day were in the garage, he plastered and painted, and I put things in order on the second level, after yesterday's removal from the dacha something terrible was happening.I hope, or rather, for sure, we'll go tomorrow, if only the weather doesn't let us down
lappl1
Linochka, clever girl! As always! And your leaves are quite decent. Well, greenhouse plants - anywhere !!!
And I have already cut off everything in the greenhouse. My peppers and tomatoes are on the veranda now.
Girls, and we have a snowball today tried to go. But in the trees, with all the desire, something else can be found.
Quote: Linadoc
I realize, but I can't do anything with myself.
Yes, only a snowfall with a blizzard can stop us. And that's not all. Some freezers are stuffed with leaves to the eyeballs. But all the same, sadly, the tea season has come to an end.

Why so ??? We understand here ... Although I also felt intimidated ... Yesterday I took a picture of my tea for the entire season - 2014. But it was not me who shed tears, but my men ... They say, and where did you hide all this? In general, I exceeded my usual plan for the preparation of tea by 50%. As I dare and sum up the first result on aroma indicators, I will immediately post a photo of all my tea and a report ...

It seems that she treated her a little, poured it with herself, but there is not enough left for her beloved.
Lena, girls, here you are convinced that there is never too much of our tea ...
Lena, I hope you can collect more leaves. Good luck!
Elena Kadiewa
Thank you, Luda, I also hope, but north is north, in the morning you get up, and it's already snowing, it's time, October
Anyuta73
Oh girls .... even though the season is over, and the leaves in the freezer still warm the soul ... Since I cannot rush to the dacha for the leaves, I will twist what is in the freezer.
Linochka, yes you are just fine fellow, I would have so much free time in the country, I probably would have ripped off the whole neighborhood, and Lyudochka, it would help me and there would be nothing to fall off in the fall. But I only dream of a greenhouse. As soon as I finish repairing the house, I will throw out the greenhouse and put up the greenhouse. Vegetables are just a sight for sore eyes, it's October on the street, but you have such beauty.
Elena Kadiewa
And yet, my lowest bow to you, Lyudmila, for such a necessary topic, for this titanic work, for the patience in working with us, for timely answers and support in everything !!!

Anya, do not even hesitate, I will help ... Only I'm afraid that the two of us will not cope. We'll have to call all the Bread Maker for help in order to free all the trees in the village from the leaves ...
Anyuta73
Yes, give us tea-makers only freedom and more time, and hold on to the leaves

Girls, in my opinion, we have not yet had a photo of a transparent teapot with tea and petals. Then here, I brag:

Allochka, thank you very much! I forgot ... And my husband and son reminded me in the morning ... with gifts.
I join in the congratulations ! I congratulate all Teachers on the holiday. I wish you joy, happiness, health and all the best!

Yes, I forgot! I went to tell my husband, he and I ... are also high school teachers. It's a pity I didn't bake a pie today, only sausages. Have to tea beer with sausages.
lappl1
Linochka, happy holiday to you and your husband ...
Tashenka
Yeah ... And I forgot about my holiday ... I put the boys to bed, I'll go and celebrate with tea. At the same time I will erase the dust from the glass teapot. True, I will not have such a riot of colors: rose petals, fireweed flowers, apple peels and His Majesty TEA of his own making. Luda, thank you again for encouraging me.
And I'm waiting for the gingerbread recipe!
lappl1
Tashenka, and I congratulate you on the holiday! What is it with our memory? Well, okay, I haven't been teaching for three years, how I moved to Russia ...What about you? Precisely, TEA turned his head.
I feel that Alla is also related to the holiday. And with the beginning of the school year on September 1, she congratulated us. Now - Happy Teacher's Day. Alla, and a happy holiday!

Lyuda leafy which, I washed, well, I froze the wet leaves After defrosting, they were not dry, but wet
The cherry was dry and stood unchanged, I think it was given the impetus that I shoved everything onto the heating boiler for three hours and there it was 30 degrees. The story is the same with the peach. The color is light, the taste is bitter - tart, the smell is not strong, slightly intoxicating. I dried in the electric oven with convection for one hour 100 grams, and then 50 grams That's where I'm trying to understand the rake Thanks for the help
Girls I congratulate everyone on Teacher's Day !!! Happiness, health, mutual understanding, creative success !!!!

This is where the rake itself is trying to understand Thanks
Olesya, yes, there is no rake, except for a long fermentation, a heating boiler and a lack of aging for 1 - 2 months.
Temperatures over 30 * kill anarobic bacteria that provide the fermentation process. So it's better to ferment the tea at room temperature under blankets than on a cauldron.
And since the peach has a taste and smell, then everything is in order! And I repeat - leaf tea has a light color.
Wait a month or two. Tea will definitely be infused.

Girls, today I tried to grind hawthorn fruits in a Redmond vegetable cutter. the mass turned out to be quite wet, put it on fermentation, as you think. how much can I withstand this mass? Or every 6 hours, sniff and catch the brightest smell and quickly put it in the oven.
Tried fermented mint tea today, mixed feelings. There is no mint aroma, but there is something very pleasant, I liked it.
I made a hawthorn today and my soul sang, what a charm, my own tea, real magic, alive, dear, prepared with joy and love. Of all the successful projects of the year, this discovery is the brightest for me. Thank you, my dear tea experts.

I also have one wish, now for the New Year I want to buy a Bork teapot, but the toad chokes me so ... 15,000 rubles, these are the bastards, these capitalists ...

Tatyana, we have not yet fermented berries. So you are the first.
How much to ferment? I think no more than the leaves themselves. Hours 6 - 10 will be enough. But with berries I can be wrong. In addition, I warn you that a very wet mass can interfere with the fermentation process. The withering process of the leaves helps to remove excess moisture from the leaves. Here's what the book on traditional tea says about it:
... when withering, it is the changes in moisture under the influence of a certain temperature that determine the course of biochemical processes inside the tea leaf. Water in cells is the medium in which the interaction of substances dissolved in it takes place. It is known that at large dilutions, some reactions cannot occur or they take much longer to complete than is necessary to complete a particular production process. Therefore, the leaf must be dried to the same degree of moisture.
By the way, I was thinking about fermentation of berries. But it seems to me that they must first be properly dried. maybe something will work out. We have a lot of black chokeberries this year. Maybe try?

I wrote in the recipe that I do not ferment the mint, but immediately after the meat grinder I send it to dry. Then there remains a delicate, not pungent smell of mint. The first year I tried to ferment it, but it turned out to be very poisonous. Maybe you re-fermented it? And, in general, in your case, it is too early to judge about tea. There has not been dry fermentation yet. In a month or two, the tea will appear and it will become much better.
