Cucumbers in adjika

Ingredients

tomato 2.5KG
bell pepper (preferably red) 1 kg
cucumbers 5 Kg
garlic 2-3 heads
bitter pepper 1-2-3 pcs.
sugar 200 g
vinegar 9% 200 ml
sunflower oil 200 ml
salt 3.5 tbsp. l. with a slide

Cooking method

  • The cucumbers are crispy and the adjika marinade itself is delicious. I tried this salad last year, and now I made it myself. I liked it very much! I cooked 1/2 serving.

  • I had time, so I soaked the cucumbers in cold water for several hours to increase the "crunchiness". (This is desirable, but not necessary) Wash the cucumbers and cut them lengthwise into 4 pieces, and then in half - it turns out into 8 long pieces. If the cucumber is long, then you can cut it across 2 times.

  • Pass the tomatoes and peppers through a meat grinder. Immediately in separate Grind the dishes and garlic with hot pepper, they will need to be put in the adjika last.

  • Pour the ground tomatoes and peppers into a large and wide saucepan, add sugar, salt, vinegar and oil to it, bring to a boil and cook for 15 minutes. Then lower the chopped cucumbers. Cook everything together for 5 minutes from boiling.
  • Then add the garlic and hot pepper, ground in a meat grinder, and cook for another 5 minutes.
  • Put boiling in sterile jars and close quickly. Wrap well until it cools.

  • It takes longer to write than to cook. The process is very fast, so I advise you to cook and wash the jars and lids in advance, and during the preparation process, start sterilizing them so that the cucumbers are not overcooked.

  • Cucumbers in adjika

Note

I would advise you to try adjika with salt before laying the cucumbers. It should be salty, salt in cucumbers, if not enough, it will be bland. I didn't have enough salt, I slightly added salt.

Obviously my recipe! I preserve a little, mainly eggplant in adjika and eggplant caviar, but this recipe suits us!

I have already closed them twice and poured them boiling all the time, so the last cucumbers were more boiled.
As a result, all jars are equally crispy.

As a result, 14 litas of adjika, but there are still ... a lot of tomatoes + cucumbers. Cucumbers, to be honest, are not very good in our family, and then half of them are illiquid. I came across your recipe and got down to business. 2 hours of business and 9.7 liters of goodies! A little bit remained in the bowl. Today I tried to persuade my husband to try it for a long time, and then I barely took away a spoon so that I could leave it to my mother to try. I made a full portion and I hardly regret it.
