Something is late spring (((Last season I made the first test batch on May 12! And in this - foliage is just beginning to appear.
On the 12th I celebrate my first year of birth as a tea-maker
Radushka
And some did not have spring. Summer immediately

Radushka, thank you! and then I am so glad!
Is it summer without spring?))

Yuri K, so this is great!
and last year I freed up space in the dressing room)))

I found a method of recycling our dormant tea, like mulch in potted flowers, and as a component for loosening the soil when transplanting plants. Taking into account the fact that you have to brew a couple of times a day, and a couple of tablespoons per teapot - a lot of useful waste is generated! And this is almost natural "leaf turf"

And my chickens are the first to peck our sleeping tea!

I already have overgrown cherry blossoms. Soon I will "cut"! Even cherry tea drinkers agreed that cherries are best added as a flavoring agent if desired. So ... I don't put cherries in mixes anymore

I'll pass it on, my good ones! She will be very happy!

Good health to all tea-makers !!! Take to your ranks !!! Quite by chance I saw this topic and of course became interested in this tea. I came across recipes on the Internet, and even so in magazines, but I decided just now to do tea with fermentation. My first tea will be from sticky birch leaves. Has already dried up and sent to the freezer. And the topic is to study and study, but nothing, I will master it slowly.

our kidneys are still swollen. But I will definitely do it in mixes, in small doses!

The main thing is that the tea does not turn out to be a failure. Birch did not take root among tea-makers.

Nothing, I'll try. Took from the girls here on the site. A birch tree is good for the body in any way.

Hello everyone! plucked blackberries. While the leaves are drying. I am now reading the topic again - last year for the first time I made mono-teas for testing from different leaves. The results are also different. There are also mousse teas, and there is nothing like that I want to consult about this blackberry of mine. Tomorrow I think to send her to the freezer, as a handful of leaves begin to crumple. The question is, if you take it out after 12 hours, heat it and back into the freezer. After I read it again, my head doesn’t think so well, it’s like I’ve read about such a double freeze.
Yuri K
kartinka, mono chat is not that at all ... Mixes are the power! And the stages of freezing / defrosting are practically the norm for the forum)) I do it three times. The third time I take it out of the freezer only when there is time for all the remaining subsequent stages of making tea
Radushka
kartinka, Marina, I can freeze and thaw more times. I often do this if there is not enough space, but new leaves have arrived. I change places until the time appears for cooking. Well, or when you have enough of the necessary components for tea. Mono I have a place to be only raspberries and pears. But, even I combine them and it turns out tastier than they separately. And I make cherries mono, because I use them as a natural flavoring agent. Even cherry lovers this year said that it is better to add it occasionally than to constantly drink the cherry mix. Strong taste becomes boring

And I only love apple mono tea :) for some reason. Although, maybe I have so little raspberry that there is no way to taste it mono.
Radushka
Karamelko, Alyona, but do not try raspberries mono if it is not enough! Mix with the apple tree! It will turn out very well, I'm sure! And, for sure, she will like it!

To make more raspberries for tea, you do not need to remove unnecessary growth as soon as it appears from the ground. I wait until he grows up to my knee and then already ... "brutal"

I've read a lot here, what a delicious raspberry, and I wanted it all separately, but, firstly, I just don't have enough of it, and, of course, it is very laborious to separate the leaves, but I do everything with my hands, without a meat grinder, which means that the branches are all- everything needs to be removed, I sit and chick with scissors. Meditatively.
Goes to my "village", which, according to the results of my personal consumer survey, confidently holds first place!
kartinka
Yuri K, Radushka, Linadoc, thank you very much for the advice, once again I read the topic and this hardening method. Today I put the withered blackberry in the freezer, put the bag with birch leaves in the same place and collected the sticky ones, although they are already big everywhere. And then they found a place with birch trees on the sea, only I have a picture of the children - I'll insert it later. I kept these leaves (it turned out like wilted?) In a bag and they had such a fruity smell. ... well, I put it in the freezer, I had to leave quickly, after the holidays I will be at home - I will repeat freezing and defrosting. In the meantime, I'll rip off the apple trees from the children
Happy Holidays everyone!

I kept these leaves (it turned out like wilted?) In a bag and they had such a fruity smell. ..

No. If such a smell appears, then fermentation has begun.
Dry in the "sheets". It's easier this way (no need to stir up). Less risk of overdrying. Well, unless you forget about them (it happens to me).
My road from the place of harvesting leaves is very long. And in the heat, fermentation also begins (a fruity smell appears).
I wither on arrival, wrapped in cloth, and freeze. There was no spoiled tea yet. After hardening by freezing and thawing, I ferment for a very short time. Literally 2-3 hours
kartinka
Radushka, to me for you girls-boys, today wrapped 250g of black currant and 200g of apple. The leaves are even sticky. Last year, my notebook did something like that, but it just froze one thing only once, and twisted it once, now I will write everything, so that for sure everything will turn out right and right. One moment confuses me - how to catch this strongest smell. Now the main point is to jingle so that when crumpled, the leaves remain a bunch. And I also think, mix the currant-apple tree or wait and get the leaves? While vomiting, such a smell was building ...: girl_romashka: I have the opportunity to collect more raspberries (a lot). What will be tastier with currants? Or divide the currant-apple-raspberry equally and the rest of the currant-raspberry? So far so, and later I will still type - the apple tree has 2 trees. And raspberries and cherries are like shoe polish. .. There is also a wild pear, but you have to go for it. ... we have a site there that is not fenced off - maybe someone breaks the leaves in the freezer, there is also a blackberry.
I also froze the birch. The place was found the most environmentally friendly, on the coast. And the birches are small. .. the leaves are all sticky, but not enough. ... 300 grams only. Or is it enough? So I'm thinking, to get some more in the forest somewhere already non-sticky, or so leave it? this portion is already frozen. .. (I already messed up, there was no time at all, after collecting it in a bag and a long journey, I didn't really wither and put it in the freezer, so that it wouldn't dry out before our arrival). But now I will heat and freeze the whole freeze 3 times. As it should be

I would try to make a mix of those leaves that already exist (including birch trees, since they passed the "batch test"). But, I usually have a lot of raw materials. And I can risk a couple of games. So, decide for yourself.
Just let me give you advice. When you completely defrost it before fermentation, then let the remaining moisture evaporate. I defrost it in bulk on the fabric and stir until the leaves stop sticking to my hand, but are not dry yet.
What kind of flavors are still available?
kartinka
Radushka, the children have 2 different apple trees, blackberry, a lot of cherries, gooseberries, currants all three, walnuts, viburnum, some kind of red grapes, wild pear, wild rose, raspberries, a lot, mint, like I remembered everything. My trees and dandelions (I have already made honey and syrup from the legs and heads) and oaks are now dried apple trees and cherry petals, so I put it separately for decoration. I want to look for Ivan tea, and I don’t know if he is growing here, probably growing. .. I remember lupines on the roads, but we don't know Ivan yet, and I can easily take risks. Yesterday at midnight I read about raspberries-Radushka and currant - I also want to make mono, the more full of raspberries, only I will do everything only through a meat grinder, in granules.
In the freezer there is a birch and a blackberry, black currants and an apple tree wither. Today or tomorrow it will be time to freeze.
Radushka
kartinka, Marina, raspberries will not give granules. But, this does not affect the quality of tea in any way. Currant mono will not give any granules (even worse. Than raspberries), or color. It must be mixed with apple, pear, strawberries (if any). The profile does not indicate the area where you live.
Mint grapes and cherries are great for hot tea

If you have a lot of raspberries, it is very good to make a steamed tea. The aroma is wonderful, the taste ... hmmm ... If there are blooming ROSES, then it goes well with fermented rose petals. Moreover, they are suitable even from non-aromatic
kartinka
Radushka, no roses, no strawberries either, or rather, there is a bush along the path, there is a bush, that's the whole plantation: girl_pardon: More for show. children work, they have on the site near the house, what has grown and fit. Here, dandelions for honey, for example, as I will, what I can, I will collect slowly. Now, so far, what has been collected, it is freezing. How will the tea be if the apple is black currant and birch? Probably in equal parts should be taken? Or add birch to raspberries? What would really sweat, so it is better to sweat and blackberry is better to mono or attach it where? Why, my hands are already itching to do something .... although we need to cut off the young paws while we are. I only made 3 cans of Christmas tree syrup, and I didn’t hide already one 3 liter bottle, I smiled like a compote.
Radushka
kartinka, Marina, apple + pear (she said that there is a wild game) + raspberries + currants + birch
And strawberries can be diluted. Or do you have a mustache there? This berry may not be ugly, but the leaves are always there, I think. Blackberry - almost like a cherry ... very fragrant. Not more than 10% by weight of the total (and preferably 5%).
And what of the wild Russians are there? Besides the birch ... Is there an alder? Blackberries ... wild or meadow strawberries
And I ask again - where do you live?
kartinka
Radushka, Kaliningrad. Probably there are wild-growing but .... I, as a young naturalist: crazy: I know that there are such in general, but in the face by surnames - I know tansy, aspen, maples 2 species, walnut, lupine, yarrow, St. I don’t know there is a rose hip, a wild pear, I have to go specially. While in the freezer raspberries, apple, birch, black currant and black chokeberry. I will make this mix in equal parts, and add 5% chokeberry. Do you get granules? In theory, they should. Today defrost-freeze, tomorrow evening I will ferment-dry. tomorrow and once and there will be questions, how much to ferment. I reread the recipes again, is the fermentation of granules 3 hours enough?

Girls, I, of course, will go to the topic to re-read, barked a meat grinder, than you twist the leaves? I had a mulinex, but even from the time when the meat grinder was bought for life, 30 years ago .... I'm even afraid to say in the store why I take it, I looked different in the morning. I would like if for the leaves, that would not be a pity. ... or no longer hide and buy more expensive
This, of course, is not the main topic, but this is also such a necessary moment for the process.
Mini-report: apple-black currant -birch (sticky leaves) 200g each and blackberry 30g after the first freezing
Apple and chokeberry-darkened all at once
Black currant - did not darken at all, the leaves were green and remained
The birch almost darkened, but stickiness remained.
The smell smelled of all the leaves of grass. Maybe because I didn't defrost it for a long time. Only thawed it, dried it a little and put it back in the freezer.
The raspberries stayed with my daughter in the freezer - I'll try to go to pick them up until tomorrow.
I dried everything after the freezer - turned it over with my hands - threw it into the freezer again.
While the leaves are all separately
Radushka
kartinka, Marina, all is good. It should be so. It is possible not to stir during intermediate defrosts. Only with the one after which immediately the linking. The wild pear is worth going for, believe me.
In Kaliningrad, strawberries grow (the leaves are definitely growing). Divorce.
I bought my grinder after I asked my spouse to help with the twisting. It was enough for 1 kg of leaves. Then he told me to find the right model. I don't see the point on the road. But, reverse (reverse) must be mandatory. And, preferably, a metal sleeve. If not metal, but plastic, then immediately you need to take spare. And not just one. I only use mine for leaves. We twist the meat on an old manual.
Everybody here says that autumn blackberries are the bomb. Maybe. I made only summer ones. Delicious too.
Google says that your alder grows. It is necessary to search (required). After last year's experience, I realized that the best mix using alder 20%
kartinka

[/ quote]Radushka, I realized tomorrow or the day after tomorrow I'll go for a pear, there is a forest nearby, I will look for an alder. In the city today I specially looked in the district - I found it, but I will not collect the city one. I asked the children about strawberry leaves - they promised to collect them, but there are 5-7 bushes in total and there are few leaves, well, how many will turn out. I took out an old manual meat grinder, if I don't buy it, I will give my husband a training session
Ps, after scrolling through the leaves, he will need to give him another dough for bread
Elena Kadiewa
kartinka, Marina, Moulinex immediately grunted at me, bought Polaris, changed parts 3 times already, but they are not cheap!
Our girls praise Axion, but you need to buy caps right away, they fly.
Thank you for keeping the topic!
kartinka
Elena Kadiewa, so there was a moulinex 30 years ago - then it was not cheap and reliable - not that current tribe Today's meat grinders were watched by the axion - just the plastic sleeve confused me. ..
Yuri K
kartinka, not only Axion girls praise, but I too. I doubted it somehow, but last season I worked with a bang. Only one bushing (fuse) flew out, and that was my fault. I decided that it was faster than a meat grinder auger, I wanted to push the mass under the auger in the depth with the handle of a tablespoon. Although he knew what it was fraught with!
The main rule of tea-making is not to rush with the volume of raw materials to be scrolled and more often to sharpen meat grinder knives (and a grate!)

Hello tea makers!
In August I found you and my "tea sickness" began. Made a lot of teas. And then I found out that my blood pressure jumped up and my heart rate increased from raspberry tea, and I was delighted that it was so tasty, and that I added a lot of raspberries to almost all meals.
Therefore the question. Has anyone encountered such an effect? What other plants can this be from? Or is this autumn raspberry so strong, or did I fry it very hard?
Tricia
Natalyushka, Nataliya, good afternoon and welcome!
It seems that this is an individual characteristic of you, since teas act sooo differently for everyone. I feel bad from the blackberry - I'm hypotonic and it pretty much lowers my pressure.
But from frying in the direction of increasing / concentration of trace elements, nothing changes, on the contrary, some of the beneficial properties of tea decrease from increased heat treatment.
Yuri K
Natalyushka, my opinion is, not raspberries are the reason for the rise in pressure (but tachycardia as a result of the rise), maybe you began to drink more liquid, that is, drink tea. Is this option possible?
Blackberry is a well-known "hypotensive")) But raspberries are "acetylsalicylate", it is unlikely that it will raise the pressure.
KameJIia
Natalyushka, I agree with the previous comment about individual intolerance. We drink autumn raspberry tea constantly, concentrated and very rich. They did not notice that he had a negative effect on well-being, despite the fact that my husband has problems with blood pressure.
________________________ ____________

I read the last pages, write about birch tea. This year I collected birch buds and filled them with vodka for tincture. Now I smell it - the aroma is simply amazing, balsamic. I did not expect such a smell from birch at all. I plan to add a teaspoon of tincture to the tea for flavor.
Luna Nord
I stopped completely making teas from garden-non-garden leaves, because my husband's blood pressure began to rise and his head hurt badly. I found information in the internet that such teas should not be abused, you need to drink in moderation and intermittently. As a result, no matter how much I liked the process of making and drinking tea, I stopped doing both.
Natalyushka
Thank you. So I will test mono-teas and select for myself.
Radushka
All people are different. And nothing can be abused. Yes ... Although, my husband has been drinking only such teas for three years now and he only feels better. And he drinks tea decently a day. He even drinks coffee with tea

For example, seborrhea is aggravated by starchy foods.

Also, the entire past period from the beginning of the collection I drink only my own teas. Now I don't even look at the usual one.
Sometimes I have coffee, but it's almost exotic, once a month, maybe two.
kartinka
KameJIia, Karina, I have known this medicine since childhood. Tau, as the knees were always broken, washing wounds and watered with sticks and blew with the whole family, burns decently, softly said. The knees heal very quickly. And my grandmother was rubbing with such sticky, but in tea, I don't remember what they would use, write later how it turned out.
Ps - but I thought it myself - and again did not make it sticky
Radushka
Yuri K, all my acquaintances who switched to garden teas stopped drinking store teas. And by the way, even big cherry lovers, this season they ask to make cherries separately and give them as an aromatic additive.

I have an incomprehensible reaction to Ivan tea. That's fluffy gorgeous. I have never had a lot of raspberries. I make mixes / rustic. I drink a lot of my own tea, plus a hypertensive person (chronic renal failure), plus a blockage at work, plus a climax - the pressure can jump, but I don't associate it with tea. From the store, it sometimes jumps.
