I wonder if Zakhari, in tied bags, threw his leaves into the freezer and back, or in the open ones? Something I have convulsions at the thought that not just in the heat, but in the sun, there is such a sun that oh. And what is interesting - in his photo there is fermentation under a cloth in a metal bowl, and I broke my head, where to get enameled or pastas dishes of a suitable volume and depth, everything is complicated for me, yes.
lappl1
Tiger striped, of course, in closed bags.

He also has enough sun - he is from the Crimea.

lappl1Lyudochka, my commander ran the tea through a meat grinder, covered it with a damp cloth and covered it with a blanket. So?
lappl1
Anatolyevna, Tonya, yeah, so ... Well done, you are with the commander. Do not ferment for a long time - 6 hours, no more.
Anatolyevna
lappl1, Time was noticed and the yogurt maker was turned off just right.

Report of an unlucky tea-maker: in the morning I took out a bag of irga from the freezer, put it in the sun. Cherry changed her diaper, rolled it from a slightly damp duvet cover into a very thick tablecloth, barely rolled it up. It does not fit into any bucket in this form, it lies on the table. Then she took up a pear of two collections (one slightly dried) and a cherry, sent to the freezer. I thawed them, the leaves turned out to be very heterogeneous - either the withered ones darkened abruptly and became wet, or yesterday's young ones, now you can't make out. I cut them into pieces with scissors as much as I could, set them in two low enamel bowls. I'm having a crockery crisis! Of the food non-metallic, besides this, there are only two buckets, but they have narrow bottoms and then expanding upward, which means that fermentation will be heterogeneous. I kneaded the leaves, sprinkled them with a children's water pistol, kneaded them again, covered them with plates - the only large porcelain and plastic one, pressed stones-bricks. In the guide I followed, they covered it with a plate on top, but in this case it won't work - the stones are above the sides. I covered it with a double, but not thick, damp terry ceiling. I put it at 11 in a room where it is 25 degrees Celsius. In the evening we go with the child to the beach at 5-6 hours, we will return at about 8. So I think - if you dry it BEFORE the beach, there will be only 5 hours of fermentation. If AFTER - all 9. I went to check how the Irga is doing in the sun - she poured her juice all over the table through a small hole in the bag. I put it in the second bag and put it back in the freezer. Probably, I'll make it at night, when the bowls are empty, there will be just one bowl. Certainly you can't ferment in pans made of thin food grade stainless steel?

leaves or berries? After all, Zacharius does this with leaves. well, and berries, but the leaves are also necessary.

You definitely can't ferment in pans made of thin food-grade stainless steel?
Why not? Can.

It still takes time to get to the beach. do not have time.

lappl1, to me it is better to "you". Then I'll do it after swimming. Irga collected only leaves, the berries were all dry.I will collect and accumulate cherries as much as possible, which means that I will also have to make large-leaf out of it. While she was spinning a small portion in her antediluvian meat grinder, she almost ended, she categorically does not want to spin in rolls, which means I will knead. Probably, too, first cut with scissors, is that okay?

Tiger striped, agreed! To me too.

The main thing is then knead well until wet. Then everything will be OK.
Tiger striped
Everything was very wet and still sprayed from a pistol during kneading. I thought about it and replaced the plates under oppression with a smaller one in diameter. I don’t quite understand what is the point in a wet towel, if the plate almost completely covers the mass, and so at least a gap of a centimeter and a half will remain. And if you could close it on top of the stones with one more plate, then it is completely unclear.

There is only one meaning - so that the leaves do not dry out.

I found a wild pear near the house. Rather, they poked my finger in it. The pear was cut down, and shoots started from the stump in all directions, I thought it was lilac. There are quite a few narwhal, and the leaves are so delicate that they burst in my hands when I picked them off in a bunch. Once the juice has gone, fermentation has begun, right? I rolled them up in a duvet cover, carried them into the passage room where it was cooler. Probably, I will have to do a pear in the evening, twirl it in a meat grinder without freezing, if it has time to wither, and then I’ll get it for tomorrow. With this wise thought, I took it out of the freezer, carried it in two bags, one in the other, in the sun. Although, on the other hand, the Irga was also all in juice, and I put it in the freezer ... It's hard for a tea-maker - to learn the habits of leaves ... "It is difficult for a bird-catcher - to learn the habits of a bird ..." (Bagritsky)

Question!!! Is it possible to hang tea in bags to finish drying, in which one of the pear varieties has already dried and crunches, and the other is not yet? Will it go slightly under-dried in the bag, and will it not dry out crispy if I do not interrupt the active drying in the grill and dryer?
Anatolyevna
lappl1, Lyudochka Tea is drying. It smells like apple compote! A scent for the whole house!

Tiger striped, yes .... One thing I will say - it is not worth overdrying. Someday it will dry in a bag. I usually do different flavors in different batches. But I have granulated tea, so everything together gives homogeneous moisture.

Drying now in the oven - stunning flavors float!
It's a good news.
Of the bad ones - the fuse in the meat grinder is covered. I'm looking for a new one on the Internet. Probably I'll buy them in bulk right away, obviously not the last time
Anatolyevna
And I am grateful to everyone! That's right.
And generally speaking. Here is how it was. I tell my commander that I need to cut the meat and chop the leaves. Okay, let's do it. Why leaves? For tea! I thought what to put in the meat.
I did everything right. Cut the meat. Leaves missed 2 times, small granules.
At home it smells like apple compote!

I think I've dried it out after all - it's me. Watching him, like a child, turned away for 5 minutes to have a snack - he was already all crispy. Girls, this is ugly. Started to dry at 5 o'clock, one of two bowls of a large-leaf mix - 2 varieties of pears and a little cherry. At my disposal were: an airfryer, a stove with an electric oven and a dryer. The airfryer is most convenient, the fixed temperature is 150, 125 degrees, and less - by eye. The Ales stove is the most terrible! From which the instruction and the regulator of the oven in which it has only 9 divisions and the inscription min - and that's it! I dug up technical data on the network, it says - the minimum temperature is 135. Shchaz! She covered two baking sheets with paper, put them on the number 1, then 2, then 3 - it still barely flickers, especially below. And everything does not fit into the grill! As a result, I dried in the grill at first 125, then about 100-90, then even less, then sent it to the dryer. The dryer - also not for sure - has two temperatures: the minimum is about 30-40, the max. - up to 80. Dried on max, covering the pallets with parchment. And what was in the oven was dried in the grill. So I ran back and forth for two hours, so that later, it seems, still dry out ... And one more bowl stands with the same, fermented !!! Horror. The smell was very strong, while it was drying, I brewed the remains from the grill - the taste is pleasant, there is almost no aroma. Now there are three bags with labels: aero + dryer, aero and oven + aero.
Summary (besides the fact that leaf dryness is just a piece of cake and generally much more difficult to dry than granulated): in such an abnormally hot summer, you should not get carried away with mixes, even of one type. And it turns out that one variety from the shade is still sluggish, and the other - from the sunny side, is already crunching with might and main.

The whole evening at the Tiger Striped arena ... A question about storage: is it possible to store tea in enameled cans? Before departure, to which a week. And then can it be kept in fabric bags for about 3 days, until I get to the house, where it can already be poured into a permanent container?
lappl1
Tiger striped, it can be in cans, and in bags ... It happens that in cold weather I have tea in bags and hangs out for a week ..

Thank you very much for being tea makers! lappl1, Thank you! The second bowl with pear, 9 hours of fermentation, dried safely in the airfryer and took up the last 2 bags. I rinse my pillowcases in a baby car that stink of washing powder. If tomorrow they dry up and the smell goes away, I’ll move the nine o'clock in a pillowcase, otherwise it’s a little cramped in his bags.

Yes, but this must be taken very seriously. I specially sewed linen bags, did not wash, but only soaked them in clean water and twisted them in a typewriter. odors of washing powders are harmful to us.
Gaby
Svetiashka, I want to share what you can also store tea, the more it scrolls you through a meat grinder. In addition to cans, last year I came up with another container - plastic bottles of 1.2-2 liters. You can easily find this container, somebody even drinks drinks, wash it, dry it in the sun and fill it up easily. Lyudochka showed me plastic containers and it dawned on me that you can store meat grinder tea in plastic bottles and get hermetically sealed.

Gaby, Vika, Thank you! This is really the way out
There is a problem with raw materials. Its not. It's hard to find in the city. And the one that has a lot of low-quality leaves (wilted, blackened).
Gaby
Light, you can not only put it out, but also put it anywhere, for example, in a closet on one side.
And raw materials are a profitable business, the main desire is, maybe someone goes to the suburbs, ask them to bring the leaves. It's not long to prepare them, so you won't bother anyone much.

I wanted to call home to freeze the cherries and peaches, you can't. First you need to dry. And when I get home this is a question
Anatolyevna
I know where to get pear and currant leaves, you can also take some cherries.
Linadoc
Vika, Vikusya, hello! Good to see you ! An interesting idea with bottles! And I got hooked on Zakhar tea, very aromatic and not dreary. All in one package and when there is time, then you do! I’ll go for another apple, pear, blackberry and goof.
Tiger striped
I twisted the irga, which for two days wandered from the freezer in the sun and back, according to the method of Zacharias (just started not from the sun, but from the freezer). What can I say - although the bags were closed, the upper leaves dried up, not wilted. I tried to throw them away, but not all of them. And the cuttings of the leaves were wound on the shaft of the meat grinder and formed light veins in the granules. I played, probably, an hour and a half, cursing everything in the world. Now I will have tea with the smell of my labor sweat - it was not always possible to make sure that it did not drip into the meat grinder. I cut the pieces pulled out of it, wound on the shaft with a knife and threw them into the total mass. And then, since it was all too dry, she sprinkled water from a pistol. I risked exposing it to the sun under a towel, then I thought about it and covered it with another lid. According to my reports, you can start a separate branch called "Encyclopedia of Tea Maker Errors".
francevna
Linochka, it's good that I reminded about the goof, I haven't collected it this year, I have to go after it.
Yesterday I took out 9 packages from the freezer: raspberries, grapes, apple and pear. I kept it on the street for 6 hours, everything got warmer, the leaves turned black, the aroma is delicious fruit. and sent it back to the freezer. And today there is no mood to make tea, apparently the weather is affecting, we now have +28, not 36-38, and tomorrow Yandex shows +20 for the day.So you want to breathe in cool air, and the leaves are nice to collect in such weather.

Linadoc, I will come to you for an apple tree, a pear, a blackberry and a sucker. And then I ran out of raw materials.

francevna, Alochka, I can ask a neighbor for grape leaves, her Isabella. Does the taste of the tea depend on the variety or not?
francevna

What can I say - although the bags were closed, the upper leaves dried up, not wilted.
I noticed that the leaves behave differently in different frozen bags. I bought large bags for freezing, they are dense and not cheap, I store fish and yeast dough in them in the refrigerator. And there are the usual large bags for packing. So withered leaves behave differently, in thin packages they dry out, and in special ones they become moist and fermentation in them is much stronger.
francevna
Anatolyevna, Tonya, tea from grape leaves will be sour, but it is very useful, mix it. My neighbors and I have different grape varieties, so several varieties are picked at once. from 7 to 11.
Linadoc
Svetka, let's fly, I'm waiting (and help is needed, apples, plums, pears, blackthorns, blackberries are waiting, And also mushrooms).
