Linochka, hello Cinderella, you are ours! I must try to make tea according to Zachariy when I collect the leaves.
Mikel
Good afternoon! For a month and a half I have been studying the recipe for delicious teas and discussion in this topic. And I ferment, I ferment different leaves, all the free shelves in the kitchen are already filled with tea.

MikelHow good that you like tea! Stay with us here well!

Mikel, welcome to the tea maker family. Please yourself and your loved ones with delicious and healthy tea

Nobody tried grapes with cherries? I want to try it, but I'm not sure if they are compatible.
Elena Kadiewa
Our grapes do not grow, but cherries (if you love them as much as I do) will go with everything! You need to try everything!

Today I played withered and then frozen leaves of a young wild pear. I never expected such a smell. The smell is rather unpleasant - it either gives off iron, or even rust. Has anyone come across this? Here's how to determine the end of fermentation with such a smell? The leaves of an adult pear, although I have dried them out, just smell sweet in the can. Therefore, the question arose - I read here several times that freshly dried tea does not smell. Are we talking about the tea itself or about its broth? I smell both pear and cherry, but the broth has almost no smell. Dried granulated irga, dried in a bag, smells very weak. And another question: is it possible to drink such teas the next day after brewing? I always pour out regular tea the next day, if not drunk, but what about ours?
Luna Nord
You can drink, but tea still needs to go through dry fermentation for at least a month, the longer the tea is stored, the better it gets.

Maybe you can, but why? I think it's better to brew less, I enjoy so much

I did apple mono a week ago.
Just then they asked how to allocate time? I have all the photos over time (except for collecting leaves) - you can look at and estimate how much and what will be required.
I don't always have enough time to collect. Therefore, I collect as much as I can. Withered and in the package - I sign the package - type / date / weight.

First, in a meat grinder with a large grid

It turned out to be almost a whole bowl

The second scroll on the middle rack directly to the container where fermentation will take place

Now look carefully at these two pictures:

White sweating is clearly visible - that is, already during the second scroll, the mass began to ferment in full. It (the mass) was so warm that a pot of room temperature was fogged up !!! And that day it was VERY hot here !!!
On that day and there was no need to look for a place, but still I turned on the cartoon for a couple of minutes on the Yogurt mode ...

I also ferment the remains from the meat grinder ...

At first I wanted to dry the whole mass on one baking sheet, but then all the same I poured part of it into another form - after all, when the layer is thinner, it is easier to track down and to interfere too ...

these are the granules

I was confused by the fact that after drying there was "dust" from the apple ... and quite a lot ...

the dust is clearly visible on the left ...

Conclusion: except for "dust", this tea does not cause any problems. And dust is not a problem, but rather a small flaw ...

I just haven't gotten used to brewing large leaf yet. And all the time it turns out more than fits into me. And the child generally refuses this, requires ordinary tea. If the apple gives off dust, as I understand it, it is better not to twist it with a fine grate? And I don't have another here. So, again, large-leaf, and it takes up so much space, how will I take it? Can this tea be tamped during storage and transportation, or just crumbled in hand? I reluctantly tamped the pear in the can, otherwise it would not fit.

just crumble in hand?
again, you will get trash - only even more ... better on a medium / small grate ...
francevna
Anyuta, beautiful tea turned out.
After scrolling, I ferment on a large wire rack, then on a fine wire rack and immediately pour it onto a sheet for drying.
Vasyutka
francevna, Alla, I understood correctly - twist on medium, and after fermentation on fine and dry?

It turns out a little dust, just the sheets crumble into small pieces. And at a meat grinder, I don't have enough strength to process so many cherries and pears. I have an antediluvian Soviet meat grinder and there is nowhere else to take another.
francevna
Vasyutka, Nataliya, I do not have a medium lattice, only large and small. After fermentation, I scroll on a fine wire rack and dry immediately.
Elena Kadiewa
Tiger striped, last year I twisted all the tea on an ordinary manual meat grinder with a fine grate, there were no more options, and this year I bought an electric meat grinder especially for tea, but both times I spin it on a large one, I like it better.
Tiger striped
elena kadiewa, on a small one I twisted because there was no other, but today a neighbor gave me a large one, already twisted a batch of cherries on it! I tried irgu - it's something! For the first time such taste and aroma.

My friends are lovers, do not be lazy and use the meat grinder at least twice and then you will get good strong granules.

here is an example of double scrolling after drying. The granules are strong and do not crumble.

Zachary, Thank you! I was killed at one time to scroll the leaves on a manual meat grinder, and you 2 force
So I decided, until I buy an electric one, I will be without tea

! I was killed at once to scroll the leaves
Here is my electric meat grinder covered in the middle of the process. I had to twist half the mass by hand
So that's what I mean, the device even protested after one scroll, let alone push it to the second ...

and push him to the second ...
the second one already passes without problems since the mass has already been broken through during the first run.

Tea is being dried in the oven, the first batch is being dried in Isidri. Beautiful and dense granules turned out, the aroma is all over the house.

I don't know how, but she defeated the party of Irgi in her antediluvian tame Soviet one. Hands in calluses and plasters, but ah did it! The child, looking at my torment, said: "And why are you so stubborn?"

In the opposite direction - by itself, but without tension it will not work.

I have dried the tea, every time I say 1-1.5 kg to myself, but it doesn’t work, I processed 3 kg.
Raspberry-50%, grape-40%, apple and pear -10%

Wow, what volumes, but I've never managed to collect more than 1 kg.

Tiger striped, Anya, I also collected more than once. Packages lay in the freezer, 9pcs, that's all I did while it was cool here.

And I like to do it in small batches. Since we twist it in a manual meat grinder, it has become an honorable duty of the spouse. And the electric one worked with such a voltage that I no longer wanted to operate it. The granules are all strong. Twist once through a fine grate. There are simply no other gratings. All the same, it's good that this meat grinder has survived and will serve us more and more.

Galina Iv.,. Yes, I twisted the first tea, and when I made a batch with freezing - defrosting, I was killed here.

I have to leave in four days ... And in St. Petersburg you no longer pick it up, although there are blackberries and apple trees, but the city is too dirty. And why didn't I stumble upon this thread earlier? Now I'm collecting what I can, even in small batches, to understand how it tastes. I managed to collect irga, cherries, pears, now an apple tree and a plum are drying. I think - is it worth collecting cherry plum and mountain ash or again to ask the neighbors and tear the cherry?
francevna
I would have collected cherries and apple trees, I like them. ,

This summer I am very addicted to leafy mono and mixtures - I wither the leaves, as always, then I cut them coarsely and knead them hard. Ivan-tea helps well in the mixture, it gives a lot of juice. I only let Ivan tea through the freezer, the freezer does not really help the rest of the leaves. Sprinkle with water if necessary, but without fanaticism. I tamp it tightly and cover with an inverted plate with a load. A bucket-shaped plate where it is fermented, so I often don't cover it with a damp towel, all the leaves are covered.
After fermentation, I cut it again, finer, then for drying. It turns out small-leaved tea.

Next year I will do more granular, because my memories of this summer are the constant cutting of leaves
Well, it takes a lot of time. But there is so much tea this year that I hope there will be leaves for the next tea year as well.

Or as an option, you need to look for an employee from family members

I had a nine year old kid today. To my surprise, I twisted the entire drain. But what about the freezer, I understand - it makes scrolling very easy! Irga with a short freeze, 4 hours, I scrolled yesterday out of sheer stubbornness, and the pear and plum, frozen for the night, scrolled easily. In the evening I will scroll through the apple tree I collected yesterday and try to find it before leaving, but then because of the heat the apple trees turned yellow. Pears are more persistent, there are a lot of wild animals nearby on the former farms.

Mary Poppins, and why Ivanushka in the freezer? After withering, it spins so well, even on hand!

Mary Poppins, I am very glad that you have tea this year! And there are assistants - or in the form of email. meat grinder, or someone who loved your tea.

Strange, even a freezer helps garden scent. You would have kept them there longer, then they are cool spinning right frozen. But I also make Ivan tea without freezing.

Long ago, when I did not have an electric meat grinder, I connected an ordinary drill to the meat grinder, something like this 🔗
everything turned out great.

And yesterday I took out my month-old monomaline tea ... the smell is awesome!

Here's another fan of mono-raspberries! Radushka, your regiment has arrived!

Elena, Ludmila, the freezer helps to give juice to Ivanushka so that it is enough not only for herself, but also for dry strawberries and raspberries. And the apple tree does not lend itself to me manually, even frozen, maybe the hands are rather weak?
I can't spin rolls from garden rolls, they spin right away, and the point is not so much in rolls as in the fact that the juice is allocated. And so I grind the whole mass already coarsely crushed and with a sufficient amount of juice.

Luda, I probably no longer need a meat grinder or an assistant, but a good chopper, like for paper. Then grind the mass properly and put it on fermentation ..
I don't really know what I want

I think it's a black elderberry.

Is it good for tea? I would not like to rashly make tea from some anchar. Although I can imagine how popular such tea would have in our criminal capital.
