Fermented tea made from leaves of garden and wild plants (master class) (page 284)

Galina Iv.
Tiger striped, Tiger, Tiger, well, not a criminal one, our capital! (do not scare off potential tourists))
My business is to identify the plant, and then I have to wait Veronica)), she can tell about tea made from her ..
paramed1
And I have something to wait for, my pictures finally in the village do not open. Tomorrow evening I will be in Moscow, maybe it will work out there.
Galina Iv.
paramed1, Veronique, yes, this is definitely a black elderberry, I recognized her)), trust the forester
large opposite leaves, the berries are already turning black, are collected in an umbrella, I give a tooth that it is a black elderberry
paramed1
Gal, if it's not red - they are similar, contagions! - one thing I can say is not poisonous. Leaves are used as a raw material, but rarely. The tea will turn out. But I don’t think it’s delicious. And everyone here already knows my opinion - there is no need to make tea from all green. And you can experiment when there is complete confidence in the plant, free time, which is not a pity to spend in vain. Elderberry grows at the back of my village, but I definitely won't make tea from it, I don't need it. And there was talk about elderberry, but about berries, they tried to dry them and add them to tea.
Tiger striped
Okay, I will not experiment. Is it worth making a mix of red and black currants? I plucked the last black one from my neighbor, and at the same time the berries, he still doesn’t eat them, I opened my eyes and saw that he had grapes twisting along the fence ... But black is still not enough, but we have a red bush, it is worth adding to black or not worth it?
paramed1
Tiger striped, red is tasteless at all. If only for volume. The grapes are good, the girls did and are very happy.
Tiger striped
Only twist the grapes into rolls, like currants? Somehow, they never worked out for me. Maybe because of the current sushi. And to tear red currants into a mix with black? I’ll have to go to the neighbors to beg for grapes, I’ll take their whole gazebo nafig, I’m worse than a garden bug.
paramed1
Oh, you need to call the people to ask. Or on the first page of a link to grape tea look.
Galina Iv.
Veronichka, let Tiger will play with different pieces of paper, we played last year too, and how! You just need to remember one thing: do not harm! we have already stopped at several and fs! I have only 4 of them left.
marina-mm
Tiger striped, the grapes must be edible. If this is a girlish grape, then, as I remember, nobody liked it. Lina did and someone else.
Quote: Linadoc
I made from maiden grapes, look back pages 7-10. I didn't like the result. But it can be girlish like that.
it was on page 83.

In what sense not to harm? Plants that I pick, or myself? And the grapes from the neighbors, I remember, are edible, they were once sent from Uzbekistan.

Annawhat do you want to know about grape leaves?

Annawhat do you want to know about grape leaves?
Do you have to spin them with rolls? Is it possible to knead if they don't curl up? I still haven't twisted anything, despite all the preprocessing.
paramed1
Tiger striped, first of all, do not harm yourself, beloved!
Alla, tell a man how a winemaker.to process the leaves, we had one vine for the whole village, and even that one ordered to live a long time ...
Tiger striped
And what harm can there be from tea if you do not brew something poisonous by mistake? Sometimes I have to buy such tea in the store, which is scary to drink it ... And I still drink, sometimes it replaces food and doping for me, because I can't digest coffee.
Galina Iv.
Tiger striped, Anya, I meant not to ferment unfamiliar plants
francevna
Last year I made a leaf from grape leaves, and now (lazy) only granulated. It takes up little space.
Because of the poor ecology, we have all my leaves, through a manual vegetable centrifuge I squeeze out excess moisture, wither, put it in a tight bag (better for freezing), squeeze out the air with my hands, and tie it tightly into the freezer for 24 days or more. Why are grape leaves good? Small, coarse leaves of other plants can be twisted in them, so it is easier to cut them. Usually the grape leaves are wet, but once I did not wash them, these leaves were very dry after freezing, it was impossible to wrap anything in them, but they twisted well through my meat grinder.

Tiger striped
francevna, Thank you! Then if it doesn’t work out, I’ll also do it through a meat grinder. Just now that neighbor who has grapes has just come to visit. She said that she had already picked off all the shoots and threw them out, but I can take the rest. She has no idea if her grapes are girlish or not. He only knows that it is edible, although it was ground in the local climate.
francevna
Yesterday I already gave up the grapes from the neighbor, I want something else.
paramed1
Tiger striped, well, they are completely different, these grapes! If the usual one, then he has a solid sheet, only carved. And the "girl's" has five leaves, it is called five-leafed. And curls in thin vines, and does not freeze. Real on the vine, thick base. If it grows up to the sky by itself, then it is girlish.
Elena Kadiewa
Galya, then I'm not going to you, why do I need your "criminal" capital?
Zachary
I remember I already wrote something

Yes, I completely forgot to say that tea made from grape leaves is wonderful cold as a heat and thirst quenching product. Excellent full-bodied taste with a slight sourness, all you need for a good tonic drink. An excellent replacement for all the supposedly teas from Coca-Cola and Nestle.

Zachary, well done, that he wrote about grapes and inserted pictures! I remember what the people did and were pleased! And the links should be. Damn, I remember our courtyard in Moldova, in the corners and around the perimeter there is a vine and a tent of grape leaves at a height of 3 m, and in the fall there are bunches of bunches ... From the porch you will snatch one and happiness!
Zachary
Began to torture the leaves of the quince. So they already looked after the freezing of the thawing process on the third day. The sheet is 100% darkened.

I scrolled the sheet twice in a meat grinder.

On the left is the first run, on the right is the second

the first run the fine granule crumbled after mixing.

And here is the second run, I said before that you need to do at least two and three. The granule is dense, strong does not crumble when stirred.

At the moment, the pellets are in fermentation.
francevna
Zachary, are you doing one quince? I only did it in mixes. Write how the tea tastes, did you like it?
If it's good, I'll do it in mono.

I will definitely unsubscribe, I scrolled the leaf with green quince fruits for astringency
francevna
I brewed yesterday's tea, I didn't expect what would happen
so delicious. I thought that grapes would give sourness, but there is none at all. I'll put in a photo tomorrow.
lappl1
Oh, guys, while I was doing village affairs, there is such an interesting conversation!
Tiger striped, my opinion about northern grapes is ... It seems to me that you shouldn't do it mono. And the grapes themselves are sour, and the tea will probably be the same. But in mixes it can be attached to an apple, pear, cherry, strawberry, raspberry.Alla and Zakhar have southern, sweet grapes, so the tea is appropriate. But as Galya said, you can play. we, too, until we checked all the flavors, did not calm down. I now make tea from four to five plants, no more. Ivan tea comes first, of course ...
Zachary, thanks for the pictures! As always, the beauty is indescribable. You can admire the granules, and drinking tea from these is a pleasure.
francevna
Zachary, my quince fruits are very sour, but there are also sweet tastes, they treated me. I have a very large, thick dark green leaf.

So this is an ordinary grape. Yesterday I cut two baskets of leaves from a neighbor, today a neighbor has half a basket. Lies rolled up and dried. I think it will always be possible to mix with something after drying if mono doesn't like it. I dried the plum today, 11 hours of fermentation, after the failed silage willow tea, this is the first thing that I decidedly disliked. Cloudy tea and the same cloudy taste. I didn’t throw it out, maybe it’s still going to lie down. It remains to make black currants, it is now freezing, grapes and that's it. On Monday I leave for the regional center, on Tuesday for St. Petersburg and tea-making is covered until next season.

KMC, mixing and making a mix initially are two different things. When you mix, they are mutually saturated with smells.

Should I try to mix part of the grapes with an apple? Only the apple cider is already freezing, and the grapes have just begun to wither, they should have time ...

Tiger striped, no, it will not lie down. I had a plum for a year and remained the same cloudy. In the mixes, she behaves decently, moreover, if we prepare mixes at the stage of leaf processing, and not later, in finished form. Therefore, Lind @ the rights:

Nothing will become apple cider in the freezer.

Tiger striped, Anya, in frozen bags I usually have one type of leaves, and when twisting I open 3-4 bags, take out the leaves one by one and twist them, this tea tastes better than mixed ready-made mono teas.
Let the apple tree wait

I don't quite understand ... That is, only, for example, an apple tree freezes, and everything else just creeps? And wrapped in a thawed apple tree?
lappl1
Tiger striped, Anya, you can freeze everything. And you can freeze some leaves, but not others. For example, I never ice Ivan tea, and garden scent is a must. This makes them easier to recycle.
francevna
Anna, everything is freezing, but apple, raspberry, plum. .. Each in its own package. I do not twist the whole apple tree at once. , and I take a few leaves of an apple tree, raspberry, plum, again an apple tree, etc.
Now it is clear?

Obviously, I was confused "in the freeze I have only one kind of leaves." And if you mix red currants with grapes and apple trees? Here you also need to have the same number of leaves in all, here's a puzzle.

Tiger striped, Anya, not necessarily the same number of leaves from different plants. I wrote in the recipe - the proportions and composition can be anything. It happens, and a couple of handfuls of cherry leaves per 1 kg. put the leaves of another plant. Our tea is a creative process. there are no taboos here (within reasonable limits, of course, about which I wrote in the recipe).
And red currants are tasteless. Do not waste your time...

Tiger striped
Do different plums taste differently? We've got a half-wild with small blue fruits. And in the village there is - and now it is growing in our garden - a plum, which gives large yellow and very sweet fruits. Here's another question ahead for the future: Has anyone tracked the taste of teas from trees that have borne fruit and those that haven't grown anything this year?

Light, you know, it’s me, most likely, naughty with the plum. If I had the same position with the leaves as yours, and I still didn't have Ivan-tea, I would drink for her sweet soul. So make your plum.
Anya, you most likely have the turn. Praise him, so do it.

I didn't notice the difference. True, I only tore such leaves from cherries, but the result was no worse than with leaves from fruit trees.

lappl1, Ludmila, well. I will do
Tiger striped
lappl1, no, I know thorns very well, in my childhood my mother collected it for wine. Unfortunately, there is none. And these are plums, tall, not prickly, small-fruited, they grow here everywhere and everywhere.

Light, no, plum! By the way, there are also a lot of cherry plums here. This year alone, she almost dried up from the heat.

Girls, a friend came to me yesterday. I go to her with fireweed tea, to brag. I say I'll give it to you as soon as it ripens. And she - no, no, the pressure decreases from Ivan-tea, she, they say, cannot have it.
Have you noticed such properties in our seagull?
