Such a smell is given by proteins, of which there are a lot of ivan tea leaves. They are oxidized in the presence of excess moisture, which gives a "fish". Most likely I will make a sheet. But what I want to say, today I brewed it, and it smells like a rose. In the nineties, when I started making fireweed, I tried to twist both strawberries and currants, and once in the forest I picked up blackberry leaves. Then I did not dry anything, but immediately twisted it. So, during fermentation, the blackberry smelled divinely like a rose, but after drying, the smell disappeared. Then I did everything wrong and did not wait, but simply mixed tea with fireweed. Now I would like to repeat, but that meadow with blackberries is in Kursk, and I am in the Ivanovo region.

And all other parameters, except for the fermentation time, are the same.
And, here, granulated raspberries for 14 hours of fermentation are no longer so aromatic. More like tea (regular).
