Fermented tea made from leaves of garden and wild plants (master class) (page 255)

Mary Poppins, is it really near Moscow ?! I like very cloudberries, especially in winter - soaked, under a birch bark cap, vigorous! Mmmm! ..
That was a long time ago....
Mary Poppins
YaTatiana, no, it's near St. Petersburg, I come here for the summer in the village. There are no such swamps near Moscow
I never ate the soaked one, we always cooked jam and rolled compotes. I still have jam, I want to make cloudberry liqueur this year. They brought me from Finland, for which I do not like liqueurs, but cloudberry is incomparable
Radushka
Today we tasted irgu-mono (granulated, 14 hours of fermentation, frying at 150, then 100, finally dried in a dryer at 70). Well, so ... acceptable. Light, pleasant aroma, slightly stronger taste (you guessed it), tea infusion color is unsaturated. Verdict - rather weak for mono. I will definitely use it in the mix.
lappl1
Quote: Radushka
Well, so ... acceptable.
Radushka, found the exact word - acceptable. I also think so. You can do it, but if there are other options, then it is better to use them.

Recently I went to the forest for cloudberries.
Mary Poppins, and I have never seen a cloudberry. Now I'm going to Yandex, look and read. and then tell us how it happened.
Quote: YuLi
And 7 kg of fireweed ... I got hot in bags until they got home; one package was poured into a basin for cooling.
YuLi, Yulia, if possible, then do not collect in packages, especially if a lot of time passes from collection to delivery home. Now I go for fireweed with a 20-liter wicker box, although I'm very close to me. But I am sure that the leaves will not steam up.

Mary Poppins, went and looked at the cloudberries. There are a lot of tannins in it, so a noble tea should turn out, given the rest of the rich composition.
YuLi
lappl1, Ludmila, yes, I already understood that I need something breathing. I think we need to sew the bags. It turned out two sheets, roll, there is nowhere to openly dry so much. It seems that it is not yet heated.
lappl1
Yulia, then tell us what happened. Good luck!
Mary Poppins
Lyudmila, you are our irreplaceable specialist, and you have already managed to check the composition)) Now I’ll think - but should I go separately for cloudberry leaves
You will be in non-rubber after summer - come for cloudberry tea .. or liqueur .. and I will treat you with jam
marhel
I read Temka and also dry tea, I tried it from a walnut, I was not impressed, there is no aroma. But what were you waiting for? Iodine smelled very much at first. I think let him lie down for a while. Made from peach, almost suffocated from the strongest almond smell, even my head ached. Until I feel the aroma of peach, I have no desire to try after such a strong smell.
lappl1
Mary Poppins, dear, thank you for your kind words and invitation. God willing, we'll see you.
marhel, everything is clear with your teas. Unlucky You have chosen plants for tea. The nut (you yourself already understood this) is not suitable for tea, and the peach has no tannins, and the leaves are given that pleasant aroma by essential oils, which disappeared during drying at high temperatures. So it turned out what happened. You try to make tea from the plants that are given in the recipe - apple, pear, cherry, raspberry, currant. And you better make a mix, not mono tea. You will immediately understand that tea is worth making. A peach can be made, but try drying it at a low temperature so as not to lose its flavor.
YuLi
Ludmila, good morning to you!
The first thing I did in the morning was to check my rolls, the surfaces under them were wet. Now she unrolled both sheets, laid out where she could - one on the bed, the other on the blanket on the floor, turned on the fan for speed. In general, the leaves have withered only in the upper thinnest layer; inside are wet, in droplets, and vigorous. In a denser fabric (such as a waffle one that came to hand), the leaves inside are a little warm, there are already darkened ones (by eye about 5% of the total), in the second darkened pieces, there is less heat. I'm waiting for it to dry up. I'm glad, of course, for the harvest, but I wasn't morally prepared to process such an amount
Natusichka
Quote: lappl1
why are you looking for problems for yourself? You are warm now. It will ferment great at room temperature. or wrap a saucepan with plaid jackets.

Lyudochka, I wanted to try, because I don't have so many pots to put everything on fermentation! And here the saucepan is free ...
Well, everything, convinced, I will not!
Yesterday I shoved the leaves that were dried into the freezer: strawberries, raspberries, garden blackberries, currants. Hope to leave. make tea.
lappl1

... because I do not have so many pots to put everything on fermentation! And here the saucepan is free ...
Natusichka, a saucepan from a multi can be used without a multi. We feel sorry for your work. I'm sure you're doing great. You are smart!
Quote: YuLi
such an amount was not morally prepared to process
YuLi, yes, this is a very important point - to collect as many leaves as you can process. Well, nothing, but a lot of tea at one time will turn out. I went for some fireweed yesterday. There was also a desire to collect a full box - it was easy and quick to assemble. But I stopped myself in time, because I knew that I would only add problems to myself.
YuLi
Ludmila, these are all little things, we can handle it. But I will know how to be greedy But what aroma is now in the apartment from fireweed and linden! And a walk in the forest is always pleasant, now it smells of linden, the mushrooms are gone. It's a miracle! These moments of happiness are very precious. And also yesterday for the first time in my life in the forest I saw aconite, I didn't even know that it was growing somewhere (a very poisonous plant, no leaves from it!)
lappl1
Yulia, very, very happy for you! Indeed, it is true that our tea begins in the forest or in the meadow. And these are such priceless moments - they are remembered for a long time!
Kokoschka
Lyudmila, today we collected leaves of forest raspberries, spread them out and wither. Having counted not the first page. Realized that we still freeze the raspberry leaf? Right?
lappl1
Lily, everything is correct. Wither first, then freeze. By the way, it is better to freeze all garden sauces after withering. Will twist more easily.
YaTatiana
Luda, urraaa! I did it! Lyudochka, I am very grateful to you for the tea! I write this while drinking raspberry tea. I know it's forbidden, but I can't help myself, it's very tasty! But I just tried it, I already hid the jar out of sight. The aroma is already quite pronounced honey, the full feeling that you are drinking tea with honey, but not very sweet.

On Wednesday, I thinned out the raspberries, I collected about 650 g of leaves, they dried in the air for no more than an hour, then for 18 hours they lay in plastic bags in the kitchen, then a meat grinder and fermentation in the microwave, turned off, of course, for a little more than 6 hours. When I opened the pan after fermentation, there was a light fruity smell, I somehow did not really notice the heating of the mass.

I dried it on a gas stove, over the lowest heat in 4 pans. All the pans were thick, made of different materials, I didn't really like the steel, it sticks to it. I was afraid that it would burn, I stirred very often, so the granules from the large ones became small
But what the aroma began to appear, I did not believe myself! From fruit it gradually turned into a honey one, well, where could I resist and not brew, of course, I brewed it, so I enjoyed new tea for the night.

The infusion turned out to be beautiful, quite dark, with gold. When you drink - the feeling of honey and a light, pleasant bitterness. I took photos, again I can not send

Everything turned out, undoubtedly, thanks to the friendly atmosphere of tea themes, thank you girls! Well, and, probably, luck "for a newcomer" worked, so as not to discourage the desire
YaTatiana
Yesterday I went for herbs, I didn't like Ivan-tea, there are a lot of leaves in brown spots, I collected quite a bit, just dry it. I picked up meadowsweet, the most valuable plant, but it will leave soon, a little yarrow, St. John's wort, motherwort. So the aroma in the house was already crazy, and then there was tea

As for tea, while I was doing it, I thought, couldn’t I use a washing board to roll the leaves, remember this one? Now basins are found with a "built-in" board.
Or silicone mittens-potholders, they are corrugated
lappl1
YaTatiana, Tanechka, congratulations on your first tea. Such a report! There is delight in every line! As I understand it. Tanya, make tea for health. I am sure that everything will turn out just as well, and there will be many, many more different and delicious tea.
lappl1
Quote: YaTatiana
is it possible to use a washing board to curl the leaves, remember this one?
Tatyana, we tried the washboard. There is a lot of trouble, but no result. It's better to just freeze it, and then help yourself with a rolling pin. And than. Washing boards are usually aluminum. I would not like our leaves to come into contact with aluminum.
A fireweed, after all, is worth trying to do.
YuLi
YaTatiana, I twisted with a silicone mat, it turns out quite well, better than my palms.
And I also have questions - did anyone dry granulated tea on nets, which ones are put on the stove (before, mushrooms and apples were dried)? I'm afraid I won't have enough dryers and pans, and the oven for nothing.
And yet - can stainless steel pots be used for fermentation? Although, after the metal knives in the meat grinder, it probably doesn't matter anymore ...
Radushka
Yulia,
Quote: YuLi
can i use stainless steel pans for fermentation
and I have no others, only stainless steel. It's food-grade metal. And it does not oxidize itself, which means that it cannot oxidize the contents either.
lappl1
YuLi, no, we have not yet encountered such meshes. And what is the fault of the oven?
You can ferment in stainless steel. This metal is neutral, nothing is oxidized in it. And in today's meat grinders, too, parts are made of non-oxidizing material.

My super-civilian veranda for summer meals (covered, but not glazed) with a huge summer table under a tablecloth, with internet and lighting turned into a collective farm "Light Path"))): Isidri dryer is plowing (more than 100 pieces of porcini mushrooms and boletus mushrooms, poor , processes; then fireweed flowers, then meadow strawberries in bunches - for tea - and so everything in a circle); fireweed and other things that should be dried or lying on the table are dried on the table))), in the same place my mother and I sort out, clean and put in the dryer ...

Yesterday I piled wild strawberry leaves along with fireweed (there were still few strawberries, but fireweed, it turns out, grows near an uninhabited house 50 from me so that I hide with my head there). Today I decided to pick the leaves of the forest raspberry and also combine with the fireweed ...

Mom was drinking at me. what to do mono, not mix. But strawberries do not seem to be a medicine, they have no particular restrictions on drinking. and there weren't many leaves to go around with them separately. Raspberries, of course, are sweatshops. But we eat ordinary raspberries without colds, although they are also diaphoretic. Or am I wrong?

In short, thank you, dear ones: they poisoned the poor girl. Hold me seven.
YaTatiana
Yulia, I have a washboard, it seems, made of silicone, I bought it for felting, it bends remarkably. That is, it can serve as a rug, and even corrugated, maybe it's worth considering?
paramed1
Tatyana, smart girl! Congratulations on your first child! It's so nice when everything works out, isn't it? And why do you write that it is forbidden to try right away? Not even at all. Try it! But it happens that people try the tea from the scent right away, do not like it because it is immature, and either throws this plant undeservedly, or, even worse, stops making tea altogether. And raspberries will open up even more interesting in a month. And it seems to me that this will be one of your favorite teas, if you already like it now.
Yesterday I also cut St. John's wort, he is in our prime now. I have already prepared a lot of necessary things, a lot is still ahead. We are being treated ...
Elena Kadiewa
Uraaaa! Natusya got into it specifically! I'm glad.

Yes. Today I cut the motherwort and found a wonderful clearing with sandy cmin. And tomorrow I will go to the village for the leaves (if it rains, what would it not go) and collect trees.
YaTatiana
Quote: lappl1
But fireweed, nevertheless, is worth trying to make
Lyudochka, he’s not there !!! It grows a little in the garden, but obviously not enough for tea, and in the field there is

Veronica, Thank you! So I hid it, I will wait to see what happens next - for me, it is still beautiful!
It is difficult (but possible) to find St.John's wort with us, there are more than any other, you have to look all the time
Scarecrow
St. John's wort is like shoe polish ... And I also found behind my own fence (don't laugh now) ... a linden tree. Blooming. That is, literally behind the fence - two meters away. There I have an old oak forest, everything is dense, very spreading oak trees. bird cherry, aspen, and for 11 years I have never looked closely. that there is a linden tree. In the cough ...)))
YuLi
The oven is gas, with an unregulated temperature (or rather, the gas supply is not regulated, something is broken - the oven is either off or on, no options). In addition (I already wrote) there was a sad experience of drying currant buds (it turned out with the taste of a liver), and drying pastilles. I bake bread in it only in aluminum molds under a hood, I had to forget about biscuit rolls, custard cakes and meringues. I'm just afraid to spoil the tea.
YaTatiana, I have not seen such boards for felting, but I think you need to try. If I twist the sheet, then I will certainly take my silicone mat.
YaTatiana
Nata, that's where the beauty is! And we have a linden tree on the next street near the houses ... I planted it last year, but while you wait for it, how many years will pass!
YuLi
I am already reading page 153 of this topic ... Do whatever you want with me, but when I come here the word "Chinatown" appears in my head. I understand that this is not at all the same, but I can't help it
By the way, I tried my experiment with feijoa leaves. Quite everything worked out, despite the 8 leaves. Feijoa berries taste, slight sourness, a little bit sweetness, and something from chamomile is felt. I'll try to post a photo later.
YaTatiana
Yulia, this is actually not for felting, but for washing the board, but for felting I wanted to adapt it
lappl1
Nata, of course, it's useful to listen to mom, but about the mixes she is fundamentally wrong. Mono teas are great, but the mixes are a thousand times better. What you don't put in them (suitable for tea, of course) will be great!
don't worry too much about the diaphoretic and other medicinal properties of different scent. Fermentation and drying significantly reduce and change these properties. Benefits, of course, the sea in the form of micro- and macronutrients and various acids, but not so that we have prepared medicinal tea. So drink without fear.
Quote: elena kadiewa
Uraaaa! Natusya got into it specifically! I'm glad.
Lenusik, I'm so happy about that too! Nata, a mini-factory in a separate household in the summer is what you need! Let us rejoice in the gifts of summer in winter and praise ourselves that we did not waste our time. My dryers and oven also do not turn off.
Tatyana, I fermented St. John's wort. But I didn't really like it. Although there are tannins, the magical aroma of St. John's wort has greatly diminished. And the tea scattered well. True, I did not manage to pick a lot of St. John's wort, and the volume was small. Maybe if you do more, it will work out better. And at a low temperature, I would dry it now. Here is last year's fermented St. John's wort.

LAKATA
Good day to all! I'm all about peony leaves - on dry fermentation it smells like peony flowers more and more. Saw at night, slept like a baby. I don't think I will mix this tea, let it be mono.
Today I dry fermented Kuril tea, it smells like flowers. Fruit leaves have a different smell. How interesting is it, you make a new tea and wait for the taste surprise? Great !!
Natusichka

YuLi
LAKATAHave you made peony leaves? Last year I tried to make jam from petals - the color is very beautiful, but the taste ... It turned out very bitter, everything went to the garden for fertilization.
Scarecrow
Natusichka,

Or goldenrod. Most likely it was he: they are similar with fireweed and the goldenrod has not yet bloomed - everything fits together.

lappl1,

I had a mini-plant and worked last year, but I dried everything differently. Some apples and pears - I can't even pronounce how many. It turned out to be a complete pillowcase (60x60). I worked like a bee, there were heaps of apples: I baked charlotte without stopping, dried it without stopping (a bucket fits into Isidri on 10 pallets - and so every day). Apples with pears, despite the wild amount we gobbled up ate already in February))). Personally, I ate so much - neither in a fairy tale, nor in a feather ..))) Plus jam (it's jam) ... This year I also hope for apples (we won't have - not an apple year, but in Belev we should be), only mushrooms have been added to this and now here are teas))).
YuLi
By the way, goldenrod is very similar to willow tea, we have a lot of it in the garden, a weed. I specifically compared it with fireweed (there is also a bush in the garden), I noticed the difference in the leaves - in fireweed, the central vein is almost white, and the tip of the leaf is sharp. Goldenrod has a green vein, the tip of the leaf is blunt. Itself almost dialed, stopped in time.
YaTatiana
Natusichka, not so good to see, the tops would be seen The leaves are opposite, as far as I understand? In goldenrod, they are alternate and lighter, a little narrower, smooth, it seems to me. And hardly phlox, of course. I would say that it looks more like a loosestrife, but you need to look at the tops, and also taste the taste.

YuLi, you will soon come to a description not of how we made tea, but of chatter. So you can safely jump over 300 pages. And for conversations not on business, we came up with the spring "Tea Gazebo". But when they came up with the name, they suggested "Chaikhana", since I am from Kazakhstan. Not Chinatown, but consonant, although the content is completely different. So, come to the Gazebo for a chat (active link under each of my messages).

LAKATA, and yesterday I cut the dried peony flowers and remembered about you. The leaves are large, beautiful. The bushes are huge. But until autumn they usually stand as a large and beautiful green spot. You can try to do it in the fall.
And my Kuril tea is still quite small. At least ask your neighbors. But it's inconvenient - they have bushes in the central flower bed, If I pluck it, then it's not ice either ... So I'll wait for mine to grow up.

Be careful with St. John's wort. With its constant use, the sensitivity of the skin to the sun increases, light-skinned people can pick up age spots. Moreover, the active substances accumulate in the body

Lyudmila, that is, in order to preserve the fragrant smell, then it is better to dry in the oven at 100 and not higher? I noticed from my samples that the specimens made in a frying pan or at 125 degrees. for 15 minutes they are brewed darker and smell stronger.
