Fermented tea made from leaves of garden and wild plants (master class) (page 249)

Alla wrote that grapes should be made from several varieties at once
I don’t have several varieties! And in my village, no one except us has grapes. They are strange ... one potato in the garden.
And I, in general, do not want to interfere with raspberries! Lyudochka, she's so tasty that I can't get drunk! Even though I know I shouldn't drink (and eat) a lot. There was one year when my skin completely peeled off like a snake. Absolutely painless. But ... ALL! Even on the palms and feet. Even from the ears. At first I was scared. I ran to do sowing. I thought it was some kind of infection, although it didn't hurt. It turned out - a kilogram of raspberries a day - it will be too much!

Radushka, very interesting reaction .... I also eat a lot of raspberries in the season. For a liter can, at least ... God had mercy ... And village tea is almost all based on raspberries. There was no negative. Perhaps this is a feature of your body.

well, people pay a lot of money for pilling. And then by itself. No pain, irritation, itching, redness. And delicious, the main thing!
py. sy. I'll go ... eat raspberries

Radushka, but also useful. One man said that he put the vessels in order with tea made from raspberry leaves. True, he drank without fermenting.

Ludmila, help mi! I wrote in Temka with Ivan-tea!
Girls!!! Boys !!! Help is needed! Urgently!
The package has just arrived. I was sent the roots of Ivan-tea and tops from these roots separately cut off.
So ... two questions.
The first is what to do with the roots? Dig it in until Monday (I won't go to the village before) or keep it in the cellar? The roots are strewn with damp tyrsa. Excellent condition.
Second - what to do with the tops? The leaves have withered, some have turned a little brown. But, they did not dry out. The flowers are even normal.

It's a miracle, of course, but from a remote village in the Chernihiv region to Kharkov, the parcel reached by regular mail in 3 days!

Radushka, I didn't do it myself, but I read that they are perfectly stored in the cellar for several months.

Make it like a regular tea - wither, grind and ferment.
Hello, congratulations!
Something from the Ivan-tea topic of messages was not. I'm going there now.
Radushka
lappl1Lyudochka, I was so happy only when my grandchildren were born! Well, almost like that)
I went to tear and weigh the leaves. There are not many of them. I'll wrap something on top, and then dry it separately. The cherries are frozen. Maybe her?
lappl1
Radushka, what else do we need for joy? Yeah ... make a bigger seagull. I rejoice with you. You take care of Ivanushka, please and cherish him.
Radushka, read here how to plant it correctly 🔗

Natalia Koval, my manual adjustment starts at 40. But, there is a yogurt mode. I'll have to try to do that too. How long do you ferment?
On the program Yogurt at a temperature of 30C for 5 hours.

Natasha, very nice tea! Thanks for the photo!
Natasha, and where did you learn to make tea? It is very interesting how you came to this business. I still do not understand, does mono-currant crumble when twisted twice?
I learned how to make tea just like you, collecting information bit by bit on the Internet. Something happened by accident, like fogging or freezing) It was a matter of chance, I collected the leaves in the village, put them in a plastic bag, and they arrived home only at lunchtime the next day, so I had the leaves in the bag for a day. I opened the package, and the leaves are wet and the smell is intoxicating, I liked it, and I started doing it. And with the freeze, it turned out the same way, I brought the leaves, wilted, but there was no time to scroll. What to do with it? I remembered that I freeze the greens for the winter, and decided to put the leaves in the freezer. The next day I took it out and played it, I liked the result. Now I always put it in the freezer and, according to the availability of free time, I take it out, twist it into the multicooker.
By the way, whoever has an incubator, an excellent device for fermentation, the temperature can be set as you wish.)
For currants, I did it using the same technology, through freezing and double scrolling, the granules are strong, do not fall apart.
When I read that you write that the leaves of raspberries and currants are dry, I was surprised. We have leaves that are on raspberries, on currants, such as it would be correctly to say, fleshy! juicy, maybe it depends on the region and on the composition of the soil?

Natalia Koval,
Natasha, so at what temperature do you ferment in a multiv?
At 30C. I have a Redmond M90.

So I was surprised when they wrote that raspberries turn into dust! I have great granules too! And I would even say that the raspberry leaf is very juicy, even a little slimy when grinding.

Girls, here's an observation, maybe I'm wrong. I drink teas that have not matured, well, I really want to, and that I noticed that if I drink 2-3 cups in the evening, then I can't sleep until 2-3 hours. I casually thought about teas, not particularly associating my insomnia with them. And then she treated her relative with a jar of tea and she called and said that the tea is very tasty, but if she gets drunk in the evening, then she also cannot fall asleep, tea is very invigorating. She treated her to the village of apple, pear, plum, cherry, raspberry, strawberry, blackthorn. Has anyone else noticed this effect?
I have the same effect of unseasoned tea if I drink it in the evening before going to bed - insomnia is guaranteed. The first time I drank tea in the evening and then could not sleep, I thought it was a coincidence. When it was repeated for the second time, I realized that it was tea that tones up and invigorates. I don't drink at night anymore)

So we have raspberries and currants in Kiev that are wrong.
Light 7 light
Tell me what could be the problem: I used to twist the dried leaves of each species separately in a meat grinder and spin normally (cherry-apple-currant). Today I made a mix from the same leaves + added dried strawberries to them after freezing. And the meat grinder does not twist ((it winds the already twisted mass on the shaft and drives it inside in a circle, it does not come out through the holes. When I scrub this mass off the shaft with my hands, it’s like plasticine, it sticks right to my fingers. I don’t understand what the mistake is ... This is does it mean that they are still too wet or, on the contrary, are already overdried? The tails in the leaves cannot be tough for twisting? I twisted without them the previous time.
lappl1
Natalia Koval, NatashaThank you very much for describing your experience! I learned so many interesting things from you!

But it's true, we don't have fleshy leaves at all, but raspberries, especially forest ones, are generally dry to the point of impossibility. Now you need to edit the recipe, just think about how to do it better. Because in Central Russia, and in many other regions, everyone has crumbling raspberries and currants.

Natasha, everything is correct for you! It’s cold for our plants, so they don’t have time to build up the mass. I was really glad for all the Ukrainian women that you can make delicious flavorings in a meat grinder.

Light 7 light, this is due to the fact that the leaves are twisted. More often reverse (reverse) turn on and put a small amount of leaves, and not a lump.

damn .. can then make them more moist using the method of freeze-misting-freeze?
I have already laid down for everyone .. and a little and a lot (((and the leaves did not look dry, many did not look at all ..
Natalia Koval
Lyudmila, thank you for the kind words!
Tell me, no one tried to twist the berries with the leaves? The same currants, for example, or raspberries? I’m thinking, but what if you twist everything together, for example, in a ratio of 1:10, then the leaves should be saturated with the juice of the berries and the aroma can turn out to be more saturated.
Natalia Koval
Lyudmila, fermented cherries, raspberries, strawberries, pears, mono apple trees. In mixes I made them, plus plum, hawthorn, mulberry, peach, nectarine, apricot, wild raspberry and strawberry, wild pear and apple tree. And of course Ivan-chai, I did mono, and a mix.

Natasha, I didn’t know the theory yet, I also wanted to do it. And she did. The mass turned out to be very wet. The tea in my mini oven did not want to dry and in the end I didn't really like it. And when I read that for better fermentation there should be no more than 60% of the dry weight of the initial weight of the leaves, I realized a mistake and began to think another thought - to dry the berries until half cooked, and then twist them. But she hasn’t done it yet. The season has just begun. You can also try.

Light 7 light, I would now put everything in the freezer for three days. Then it will be easier to spin.In general, you would have written where you are from, otherwise I don’t know sometimes how to advise you to take into account your conditions. For example, our leaves are still not coarse, but in the south they are already coarse. Judging by your situation, you live somewhere in the south. Or maybe you just have a mechanical meat grinder. live with her anywhere - even in the south, even in the north, this is an almost impossible task for female hands.

This year I twisted (out of grief that there will be no strawberry leaves) strawberry petioles along with raspberries. Honestly - I didn't like it! It turned out very wet! It fermented poorly due to excess moisture and took a long time to dry. So it is better to dry the berries separately and add the dry ones to the tea. I usually do that. I've already dried strawberry chips this year.

Irochka, well, we came to the same conclusion together. indeed, the porridge turned out, which then did not really want to dry. And the whole thing did not look pretty. And with dried berries-fruits - a nice thing!

I'll deviate from the topic but Pts urgently need advice! Now I have made rose petal jam Bittersweet taste. And the bitterness is expressed. Is that how it should be? Maybe after cooling down, she will leave? or add sugar until it disappears? but now I add sugar a little and it only becomes even sweeter-bitter (((Advise who did it?
I apologize Lyudmila .. but only in your topic there are a lot of people online and respond quickly .. do not drive me

Svetlana, I didn't make rose jam. Therefore, I will not say what and how. And the fastest answer you will receive in the "Tea Gazebo". There they also made jam from roses, and the link on the first page in post No. 2 is for the jam recipe, and they answer there very quickly, and you can ask any questions - on any topic that interests you. An active link to the "Tea Gazebo" at the end of each of my posts.

However, this addictive activity is tea making! I filled two liter jars of fireweed with ready-made tea, a small jar of all kinds of garden ones. Now I put a mix passed through a meat grinder in a yogurt maker for fermentation overnight - raspberry, currant, cherry, plum, pear, peach, apple leaves, tarragon, hyssop, ivy bud, theotokos grass, young spruce and juniper shoots - for the smell. Tasty, not tasty, I don’t know how it will turn out, but this activity delays!
Badan grows violently with me, but they seem to use last year's leaves for tea. Have you tried green ones?
lappl1
Olga, this is a little list! Impressive! I am very glad that you are addicted to this activity. Yes, yes ... There is no other way to put it. Whoever has made tea at least once cannot voluntarily refuse it.
MariV
This is yes! My husband really likes fireweed tea, it definitely lowers the pressure. And I have always respected herbal teas, I just made them differently.

Olya, well, then fermentation is an occupation for you! By the way, about the husbands ... Everyone who makes Ivan tea wrote that their husbands love him very much. Mine also drinks with pleasure. True, and from garden - too. We have not been buying a store one for a long time.
MariV
It comes to that. that we will stop buying, the benefit of the material for homemade tea - passion, how much!

Now I'm drying cherry. The smell is awesome !!!! (y) All right, cherries will remain without leaves!

MariV, Olya, I'm more than sure of this ... Have a good tea season. I warn you - there is never a lot of our tea!
Jouravl, Nadia, leave a few leaves, otherwise you will be offended ...... Move to the neighbors in the garden. They can ...
Natusichka
Lyudochka! I report: I ground mint and lemon balm leaves (separately) and dried (40 minutes at temp. 50 degrees, and then until dried at 40 degrees. Such a scent stood that I thought I would fall asleep .. Imagine what the tea will be!

Viburnum leaves + chokeberry (it just so happened that they are together ... and they will have to make friends) after withering in a bag and in the freezer, raspberry and strawberry leaves, after withering - also in packages (different!) And also in the freezer! I plan to come home on Sunday and ferment them (either Sunday or Monday).

I brought it to my mommy: dried acacia flowers, dried tea rose petals, dried young pine shoots, tea from (wild pear + cherry + raspberry + mulberry + cherry), I had it in a jar with a twist. I let my mommy smell it, you should have seen the trepidation with which she put it in her jar! I warned not to touch the jar, not to open it for another 1.5 months!

And there are so many things I want to do !!!
lappl1
Natusichka, honey, how nice it is to read such a review. You are well done - you have pleased mommy, and she herself has stocked up on leaves. Make tea, dear health, please your mother and yourself! And be healthy while sipping your tea. Good luck Natusichka!
Natusichka
Thank you very much,Lyudochka, for your work. After all, it was thanks to you that I began to do such a pleasant and useful business!

Natusichka, to your health!

Hello! Please tell me, but after the freezer, fermentation will not work, I tried willow tea leaves, after defrosting they no longer warm up, and the smell is not so strong.
Radushka
lappl1, Good afternoon! Finished drying granulated raspberries. Natasha Koval gave a good recommendation. Frozen raspberries are perfectly rolled into granules. Yes, they are gentle. But, not worse than grapes. So, granulated raspberry mono tea has the right to life. At least for me. I will not try to brew. We are now trying fireweed. But, in the oven, the tea smelled delicious. With a recognizable smell of raspberry jam (not fresh raspberry).
lappl1
Radushka, hi! Now I'll start making garden scent, I will definitely try to twist it 2 times. But I somehow remember that I tried to twist frozen raspberries. The result is the same - the granules crumble. And the leaves thaw very quickly - 10 minutes is enough for them.
Quote: Radushka

Of course it does. But there would be granules ... Now it is raining, otherwise I would go to the meadow, pick up the leaves exclusively for testing.

Yes, fast. But, I have a small amount frozen on the bags. She took it out, opened the bag and almost immediately (as soon as she could take it in her hand) twisted it. And I did it once. True, my meat grinder constantly requires a reverse, so it turned out, like, twisted it twice.
By the way, I ordered an electric one yesterday via the Internet. The spouse gave the go-ahead.

vestitoleg1Why won't it work? It's working out ... Read the last couple of pages. Natasha Koval generally twists without defrosting.
But I already wrote to you and I will repeat myself: do not freeze fireweed if you are going to process it in a meat grinder... For what purpose did you freeze it? After all, it is very easily processed in a meat grinder. His leaves are very delicate now. After the freezer, a lot of juice is obtained and fermentation is very weak. It makes sense to freeze it in the fall, when the leaves are very rough. And in the event that you are making loose leaf tea. Wait until it thaws completely, let the leaves on the table warm up to room temperature. This temperature is quite enough. If you roll rolls or knead leaves, then the fireweed has time to warm up. And if you grind fireweed, then you don't need to freeze it ...
Oleg, this is the topic of garden scent! They are much rougher than fireweed and harder to process in a meat grinder. Therefore, for garden plants - freezing is what the doctor ordered ...

Kind people!
Who can send wildweed with rhizome for growing? I live in the Volgograd region, I can't find fireweed yet. I don't know yet whether it is growing or not. Seeds were sent. It didn't work out to grow.
I can send thyme instead. Now it is blooming with us. Or for money.
lappl1
Vasyutka, now you don't need to plant fireweed - it's hot. And in general, it is very hot here. He needs moist soil. If you have the opportunity to create such conditions, then, of course, you can try to plant it.
Vasyutka
Yes, there are conditions. There is a pond on the site, I think it will take root there.
