Fermented tea made from leaves of garden and wild plants (master class) (page 258)

Loksa
YuLi, Julia, hello! Tea can be dried on baking paper, then it won't drip!
YuLi
Loksa, Oksana, good day! I put the paper on the trays in the dryer, but for some reason I was afraid of gas - the gas was small, but who knows ...
Loksa
Yes, open fire is dangerous! Should a divider and a Teflon mat? Although it is better to put a baking sheet on a wire rack or a sheet of barbecue foil (thick). like thatFermented tea made from leaves of garden and wild plants (master class)
lappl1
Albina, smart girl! At last! Come on, make tea and write to us about what happened.
lappl1
YuLi, Yulia, that's how we adjust to our conditions ... I'm glad that the tea turns out. And with the net I am not an advisor. I have not heard of this. But if you get tea, why not dry it on it?
Loksa, Oksanchik, this is a construction! I would never have thought of it.
YuLi
This is what such a dryer looks like. She is already 20 years old, mushrooms, apples, etc. were dried on it, so I apologize for its appearance. It is put on the stove, then you can disassemble, remove the legs. With garbage, the problem is solved simply - a pre-washed plate, and a board, as I wrote above.

And here is the tea made from whole leaves, which turned out after this dryer; made by the "test" method - just washed by hands for about 20 minutes until it sticks to your hands. The smell during fermentation is super.

lappl1
YuLi, Well, thank you ! Now I will know that such a device exists. True, you probably can't buy it anymore - they've made dryers. And the tea is very beautiful and correct in appearance! I think it will be delicious too! Congratulations!
Loksa
I have a similar mushroom net. I put stoves over the combs (circles), it didn't dry well for a long time, I laid paper over the stove. And you can lay the foil, you can also use disposable foil forms. There are such low and wide ones for pizza, pies. At my dacha, then I'll show you a photo.
YuLi
lappl1, Ludmila, and we wanted to look for such a new one - this one has one broken leg at the bottom. By the way, such a thing is irreplaceable when drying in damp cool weather - it dries perfectly, quickly and in large quantities on gas, and electric dryers work for a long time, the humidity in the room jumps up in a moment.
lappl1
YuLi, Yulia, I would have come in handy - put it on the stove. But I have never seen this on sale. on Avito you need to look or ask ... There are a lot of mushrooms and apples in the season, the dryer cannot cope. And I did not notice about the humidity in the house from the dryer, since I have it on the veranda in the season with the oven.
YuLi
And here is my experiment with feijoa. It began with the fact that I was sitting in the kitchen, looking out the window, thinking about new teas from apple and other leaves for me, and on autopilot spun a fallen feijoa leaf from a bush on the window (planted with seeds from a berry bought at the market). The bush is small, but sometimes you need to cut it, but it's a pity to throw out the good. So I thought about tea. Since the bush was recently cut, I picked up a few leaves - 8-10, slightly crumpled, put it in the freezer. Then she defrosted it, put it in a small cup, pressed it down with a glass on top and left it overnight. Here in the photo above on the left are fermented leaves, on the top right is green, on the bottom it has dried naturally. As you can see, the color of the fermented leaves has changed.
Fermented tea made from leaves of garden and wild plants (master class)
Well, and then dried the leaves on a piece of paper and brewed them. The color was a success, the taste too - the smell of feijoa, a little sourness. In general, the next time you trim, the leaves will go into the mix.

YuLi, well, beauty! It can be seen that the leaves are fermented. Imagine if there were a lot of them! I will link to this post on the first page. And we still didn't have anything about this sludge.
YuLi
Ludmila, Thank you!
Here it grows like a room, I am in the Nizhny Novgorod region. But in Wiikipedia it is written the following: "Currently it grows in reserved places of the subtropical part of the Caucasus, in the south of Russia - in the Krasnodar Territory, Dagestan, Crimea, as well as in Abkhazia, Armenia, Georgia, Turkmenistan, Azerbaijan, Australia, New Zealand, USA (throughout the Pacific coast and in the states of Delaware, Maryland, Virginia and North Carolina), France, Italy (especially widespread in Sicily), Greece, Spain and Portugal. " So it is quite possible to cook it by living in a place suitable for feijoa.
And here is a link about its properties: 🔗
YuLi
And I also think that fermentation can take place in a thin layer - this can be seen both in the example of a successful experiment with feijoa, and in the fermentation of fireweed granules in a thick layer - I do not like the smell, it is a little sour (crushed leaves in a thick layer are great, with this all leaves from the same batch, equally withered)
lappl1

But Wiikipedia says the following: "
YuLi, Thank you! I then immediately read about feijoa, as you asked about him.

YuLi, it surprises me. I have never had a sour smell. And I'm lying ... I was. The very first time I started making tea. What I did wrong there, I don’t remember. I then threw out several batches of tea before I succeeded.
It seems to me that, apparently, the leaves were not withered enough and there was excess moisture in the granulated tea, and for leaf tea - just right. But this is all a matter of taste. We have girls who strongly dislike granulated tea. And there are those who are leafy. Everyone decides for himself what tea to make. For this, I wrote three ways. Thank God there is a choice for different conditions.
Julia, thank you for describing your experience. I have already made a reference to the feijoa. I'll make it for the dryer. Suddenly, someone also has one, and he will use your experience.

* Anyuta *, Anya, made a link on the first page to your post, calling it "Newbie. The correct approach to making the first tea." Thank you very much . I am sure that your experience will help many beginners figure out how to make tea when all the infa does not fit in the head.

Yes, it surprises me myself. I tried granules from dry and dried fireweed, the result is the same. Maybe she did not wait for the required fermentation, she was afraid that she would completely deteriorate. At the moment, for me, fireweed is more convenient in leaves - both quickly and tasty. Here in the photo after fermentation you can see the state of the leaves - they are very dry, although they fermented under a damp towel and under a blanket.

In general, I will study this process further. Granules attract me for the leaves of garden plants, because the result with leaf tea here did not impress me (except for apple), and they take up a lot of space. And for some reason I sprinkle with apple tea. Here they wrote about the same effect from mulberries, just lying in the freezer.

well, everything .... "mine" is generally like this ...
and I’m all like this ... .. I’m just somehow uncomfortable ...
YuLi
* Anyuta *, I have not yet had time to praise you for that post - I really liked it, I am also a beginner in such teas. You are smart!
And about the cherry pits machine is very interesting! I remember, the year before last, I was picking with a match ... I don’t want to repeat this again, but our felt cherry has ripened ...
Albina
If it turns out from ivashechka, I think it can make from what other leaves. What's the best taste to try?

What's the best taste to try?
To me with my elder sister-in-law, raspberry-mono 8 hours of fermentation seemed incomparable (cut rolls. Cut BEFORE fermentation). And if granulated, then 6 hours of fermentation.
And the younger daughter-in-law and sons like cherry and cherry-pear-apple mix more. My husband liked the plum and raspberry. BUT ... except him, no one.

Anyuta, very well described and showed the preparation of tea, a sample for newcomers. Let homemade tea please all loved ones !!!

AlbinaAny plants listed in the recipe are good mixes. The more, the better. And in any proportion. Are you going to do, ask ...
Pity
Lyudochka, do you have a VETEROK?
What to put in pallets? Paper is not good, do you need something with holes?
paramed1
Irina, in Veterok you can also paper. The air circulates on the sides, the paper will not interfere with it. I dry greens on baking paper.

Ludmila, thanks. Just in case, I asked. We have no apple trees, no pears, etc. does not grow. Suddenly I decide to dry something on vacation.
Pity
Veronica, thanks!

And if not greens? Apples, for example?
I bought teflon paper, does it make sense to cut circles out of it? And so that they would be suitable for pastilles at once, with an overlap?
Elena Kadiewa
Albin, yes, we have no apple trees, no pears, no plums (although this year I planted some zoned apple trees, I don’t know what will happen there!), BUT! There is Ivan tea, the most important thing! Add to it currants, cherries (I have a bush at my neighbors, I rip it off completely by the fall), blackberry, raspberries ... last year I did everything: viburnum, currants, raspberries, mountain ash, sea buckthorn, blackberry (also a neighbor's), honeysuckle, sea buckthorn ..., everything that is in the country and in the forest. Now I only drive Ivan-tea, the best! Last time I added a handful of currants, yesterday - a handful of Virginia bird cherry, today I twist - the smell of almonds!
Although, if you don’t want to, then don’t start, then it’s not yours! And my family helps in everything, they got hooked on our seagulls!

Pity, Ira, yes, I have a Veterok. I cut out circles of mosquito netting on pallets. The mesh is of high quality, it does not give a smell when heated, it is easy to clean and does not crumble. For the 4th year I have had these circles. Nothing is done to them. And, most importantly, nothing wakes up in them. But most likely, it will not work on marshmallow. I dry marshmallow in the oven on ordinary polyethylene (food bags). At 100 * they behave normally, do not melt, do not smell and do not burn.

We love tea with currant leaves. I have time to dry. And then I add a few leaves to black. Yesterday I managed to rip half of the bag-sack. Then it started raining. I went to the country house with three bags. But in some places there were scent with raindrops. Therefore, what I managed to do, I collected it.
And here I see the currants are also dried in a special way.
lappl1
Albina, we don't dry the leaves at all. We ferment them. The currants are excellent. It can be made with mono-tea, and in mixes.
Albina
Ludmila, thanks. I'm still learning. Moscow was not built in a day.
lappl1
Albinochka, learn, dear! We will not let you stay without tea.

lappl1, Lyudmila, today I opened a jar of two-week tea ... maybe, remember, I was still mixing with a mix and dried (((and it seemed like there was a smell of straw ... but then I wasn't even upset - there was no time ...
So, today I opened it and sniffed it ... how delicious it is ... mmmmmmm. ... super flavor ...
thanks for the advice ... I continue to learn)))
lappl1
AlenKa, oh, I'm very happy about that! Although I knew it would work out! Wait a couple more weeks. You will see that it will get better. Well, by the fall you won't recognize him at all! Prepare more tea, and more!
Valyushka
Today I made a meat grinder mix. The composition of this is 1 part cherry, 2 parts sucker, 5 parts grapes. I don’t know what will happen ... After 6 hours I sent it to dry, this is the flavor !!! And if I dry the leftovers in the morning, I won't spoil it?
lappl1
Valyushka, it is possible in the morning, but the tea will be different.
Valyushka
Something my eyes are closing, I'm afraid I'll fall asleep and I'll burn tea and not only
Good night and sweet dreams to everyone!

Irina, and the apples will not fail anyway. But if you like it more on paper, why not? Honestly, she does not interfere! There are dryers with pallets without holes, and everything is great there. The principle in the dryer is like in an airfryer - air flows rise along the side walls of the unit, and then they swirl inside, and they don't care if there are holes or not, they only heat the pallets and raw materials. So it can be cut from reusable Teflon. I have ordinary baking paper, but I use it many times, what happens to it - the temperature is low, and the paper can withstand 220.

And yesterday I sent my husband to the field of sunflowers, gave the task to pick petals from flowers. At the same time, I told him that I would not go, because if the watchman suddenly shoots salt at a certain place, then you’ll do nothing, but I will feel sorry for (this place). As a result, my husband brought a full package of beautiful petals! Now I put them to dry. I like them already! So beautiful.
By the way, there is such a pleasant aroma when drying .. I did not expect it!
Elena Kadiewa
Ivanushka is now drying up with a small amount of Virginia bird cherry, almost all of the granules have crumbled, and it has been dried for almost 2 days! Zaaaaaah! It is raining outside the window, but a miracle on the terrace! I even opened the door to the house, so that it smelled there too, well, I really like it!
marhel
I will write a little about my experiments. I dried the fig leaves, at first I didn't like everything, the smell was even after fermentation herbal, I added chrysanthemum flowers and put it in the oven, specially fried it, pulled it out, the smell remained herbal with bitterness. After drying, a sweetish smell appeared, the bitter smell of chrysanthemums was gone. I really liked the mix. And yet, the grapes fermented today for about 18 hours, I liked this tea more, after drying than which I did before, it fermented for only 7 hours

paramed1, Veronichek, in our Veterka everything is not so simple. Or, conversely, everything is so simple that the paper can become an obstacle and the dryer will burn out. It blows bluntly from the bottom up and there are no side streams. I burned my dryer like this a couple of times, loading raw materials for drying without gaps. The husband repaired it later. Probably, you, Veronicek, have some kind of more advanced dryer than ours and Irina. Therefore, in our dryer, it is necessary to periodically change the pallets in places during drying, since everything in it dries unevenly - the bottom dries quickly, and the top is damp.
And the apples really won't go anywhere. The best way out for Veterk is to cut circles from the net on the windows from mosquitoes. Only the mesh should be welded, not woven. Woven fabric may crumble.
And further. Irina, I would not advise drying pastilles in Veterka for the above reasons. Dryer may burn out.
lappl1
Natusichka, marhel, well done! Experiment and find your petal teas by time and type.

Hello girls! My husband (while I was on "Pear") tweaked the garden a little and cut off the leaves from strawberries, plums, grapes, apple trees, cherries and ...... wilted everything. When I arrived, he was already tormenting everything in a meat grinder. I felt sorry for him and decided to take an electric one from the house. In short, he didn’t succeed and he pulled out the middle wire rack and replaced it with the dough wire rack, pushed through! I already put on fermentation. Probably then you will need to cut it (tea)? I will fry in the evening after work. I wrapped the tea up because we are only 16 degrees. But, it turned out that this was not the only collection that the spouse picked, raspberries and currants are waiting for me in the freezer (I remembered!) (Wilted! I don’t remember, I need it, don’t it?)
lappl1
Ludmila, here the spouse has a better memory than you (everything must be dried, that we ferment). Well done husband! Give him our respect!
The briquettes after the sausage grill must, of course, be cut. Otherwise, they will dry unevenly and long.
Natusichka
Ludmila, honor and respect for her husband !!!

I moved to this Temko so as not to confuse Lyudmila with my questions.
Tea "country" the second baking sheet is dried. The first is already hanging in the pillowcase. The smell when drying is good, pleasant, with something sweet. But still, it seems to me, the main note is fireweed. Although in each roll I put 2 leaves of fireweed and 1 cherry, linden, currant, apple tree and several (small, cat without a central vein) rowan. I thought the main smell would be currants (it smelled the most when rolled), but no. But delicious. When it stands, we'll see.
I put a mix for fermentation: wild strawberry 40%, currant-25%, cherry-15%, fireweed-20%. All from the freezer (I know that fireweed is not freezing, but it happened so. I will not be anymore), Processed in a meat grinder. Stands without oppression, wrapped in an old jacket. I'll see what comes out.
I also wanted to ask. I dried citrus and apple crusts (mix). In which tea is it better to add them? Their aroma is very strong and tasty. Where to add so as not to spoil the aroma and taste of the tea itself?
Scarecrow
I sharpen my teeth on my mother's black currant. She has not yet given her to me to be torn apart. because the crop is not harvested. as soon as he collects - khan currants!)))

What else to add to it interesting ...? Need to think...
